Number Of Ingredients 18

Koftas450g (1lb) minced lamb
1/2 red onion, finely chopped
1 garlic clove, crushed
10ml (2tsp) ground coriander
10ml (2tsp) ground cumin
5ml (1tsp) paprika
30ml (2tbsp) fresh
coriander, chopped
Squeeze of lemon juice
Couscous
225g (8oz) couscous
45ml (3tbsp) olive oil
15ml (1tbsp) lemon juice
1/2 cucumber, finely diced
4 spring onions, finely chopped
45ml (3tbsp) fresh mint, chopped
4 tomatoes, cut into chunks
Lemon wedges and mint sprigs, to garnish

Steps:

  • To make the koftas, place the mince, onion, garlic, spices, fresh coriander and lemon juice in a food processor. Season well with salt and freshly ground black pepper, then process until very finely minced.
  • Divide the mixture into 12 and shape each into an oval. Push each oval on to the end of a long wooden skewer and place on a foil-lined grill pan. Cook the koftas under a preheated medium grill for 8-10 mins, turning frequently until browned and cooked through.
  • Meanwhile, prepare the couscous. Place the couscous in a bowl and pour over 250ml (9fl oz) boiling water. Cover and leave to soak for 5 mins. Fluff the couscous with a fork and stir in the olive oil, lemon juice, cucumber, spring onions and mint. Season to taste with salt and freshly ground black pepper.
  • Serve the koftas with the couscous and tomatoes, garnished with lemon wedges and mint sprigs.

500g pack lean lamb mince
2 small or 1 large preserved lemon , flesh and seeds removed and skin finely chopped
10 pitted green olives , finely chopped
small bunch parsley , chopped
1 ½ tbsp ras-el-hanout
1 tbsp vegetable oil
yogurt, salad and wraps , to serve (optional)
4 large tomatoes , chopped
½ red onion , very finely sliced
small bunch mint , leaves picked
juice ½ lemon
good pinch of sugar

Steps:

  • In a large bowl, combine the lamb mince, preserved lemon, olives, parsley, ras el hanout and some seasoning - don't be too generous with the salt, as the preserved lemon and olives are both quite salty. Divide the mixture into 4 and shape each piece around a long skewer. Chill for 30 mins.
  • Combine the ingredients for the salad with some seasoning and set aside. Heat the grill to high. Rub the oil over the koftas and wrap a little foil around the bottom of each skewer if you're using wooden ones. Place on a baking tray and grill for about 7 mins each side until nicely browned, checking the meat is cooked through to the centre. Serve with the tomato salad, a dollop of yogurt and some couscous or in wraps, if you like.

Number Of Ingredients 6

500g lamb mince
1 tsp ground cumin
2 tsp ground coriander
2 fat garlic cloves, crushed
1 tbsp chopped mint
oil for brushing

Steps:

  • Mix together all the ingredients until well blended. Divide into eight balls, then roll each ball on a board with a cupped hand to turn them into ovals. Thread onto four metal skewers and brush with oil.
  • To cook on a griddle: heat the pan until you can feel a good heat rising and cook for 3-4 mins each side. Don't turn until they are well sealed or the meat will stick to the grill or pan.
  • Season if you want, and set aside. Serve the koftas with yogurt and spiced flat breads.
