NUT AND CARROT SANDWICH
A great blend of flavors that goes so nicely in a sandwich! Adapted from The Nut Gourmet cookbook by Zel Allen.

Steps:
- Mix carrots, walnuts (or pecans), olives, pimientos, garlic in a bowl.
- Add enough mayonnaise to moisten them well and hold the ingredients together.
- Fold in basil.
- Spread each slice of bread with a little mayonnaise and place the carrot/walnut mixture on 4 of the slices.
- Top with remaining bread.
- Cut in half and enjoy!

PEANUTTY CARROT SANDWICH SPREAD
I had some shredded carrot to use and was thinking it would be tasty with peanut butter...after a quick search, I came up with this tasty morsel. Adapted from a cookbook by JoAnna Lund. I've also made this with chopped dried fig in place of the raisins; dried cherries or cranberries would be good too.

SPICED CARROT SPREAD
Steamed carrots are pureed with cumin, ginger, cinnamon, cayenne, and tahini to create a robustly flavored appetizer.

- Set a steamer basket in a saucepan with 2 inches simmering water. Add carrots. Cover and steam until tender, about 12 minutes. Process until smooth, about 1 minute, adding up to 2 tablespoons water, if necessary.

CARROT NOODLES WITH SPICY PEANUT DRESSING

- Use a vegetable peeler to shave the carrots into thin wide ribbons; discard the last thick strip. Transfer the carrot ribbons to a large bowl, fill with ice water and let stand 10 minutes.
- Meanwhile, combine the cucumber and shallot in a colander, sprinkle with salt and let drain, 10 minutes. Whisk the peanut butter, soy sauce, mirin, rice vinegar, sesame oil, Sriracha, brown sugar, lemon juice and garlic in a small bowl.
- Drain the carrots, blot dry with paper towels and transfer to a serving bowl. Press the cucumber and shallot in the colander with your hands to remove any excess liquid; pat dry with paper towels and add to the carrots. Add the mint and basil and toss to combine. Drizzle the peanut dressing over the salad and sprinkle with the sesame seeds.

From my nutritional yeast cookbook, this looks like a yummy spread for toast, baked potatoes, and sandwiches. I imagine other nut butters would probably be good in this too. Those cool yellow carrots would probably make for a nice flavor and color in this!

- Bring the water to a boil in a saucepan and reduce the heat to medium. Place the carrots in it, loosely cover, and let simmer for 20-25 minutes or until very tender.

- The butter can be used immediately or stored in the fridge for about a week.
