Jambalaya image

A fragrant chorizo, chicken and seafood jambalaya inspired by Creole cooking. An easy one-pot flavoured with thyme, oregano, smoked paprika and cayenne

Provided by John Torode

Categories     Dinner, Main course, Supper

Time 1h10m

Number Of Ingredients 22

2 tbsp olive oil
6 skinless boneless chicken thighs fillets, chopped
200g cooking chorizo , sliced
2 onions , finely sliced
4 garlic cloves , crushed
2 red peppers , sliced
2 celery sticks , chopped
1 tsp fresh thyme leaves
1 tsp dried oregano
½ tsp garlic salt
1 tsp smoked paprika
1 tsp cayenne pepper
½ tsp mustard powder
pinch of white pepper
300g long-grain rice
400g can cherry tomatoes
300ml chicken stock
12 large raw tiger prawns (whole in their shells)
12 mussels , cleaned and de-bearded
24 clams
½ small pack parsley , chopped
4 spring onions , sliced on a diagonal

Steps:

  • Heat oven to 200C/180C fan/ gas 6. Heat the oil in a heavy-based flameproof casserole dish on a medium-high heat. Season the chicken thighs, add to the dish and cook for 4 mins until they start to brown, stirring occasionally so they don't stick. Add the chorizo and cook for a further 4 mins until it releases its oils and has started to crisp. Remove the meat with a slotted spoon and set aside on a plate.
  • Add the onions to the chorizo oils, lower the heat and soften for 8 mins. Stir through the garlic, peppers, celery, thyme and oregano, and cook for 2 mins more.
  • Return the meat to the dish, add the garlic salt, paprika, cayenne, mustard powder and white pepper, and cook for 2 mins until fragrant. Stir in the rice, then the tomatoes. Add the stock and give it all a really good stir. Bring to the boil, then cover with a well-fitting lid and put in the oven for 20 mins.
  • Take from the oven and fluff up the rice with a big fork. Fold through the prawns, then put the mussels and clams on top. Put the lid on, return to the oven for 10 mins, then take the dish out and give everything a good stir. Sprinkle with the parsley and spring onions to serve.

QUICK JAMBALAYA

Quick Jambalaya image

This recipe makes quick work out of jambalaya by using leftover rice, and it tastes great with freshly cooked grains, too. To make this meal meatless, use vegan andouille sausage or stick with pork sausage, if you prefer. Either option, along with creole seasoning and the classic trinity of creole cooking - onion, celery and green bell pepper - result in a dish that is unmistakably Louisianan. Though many jambalaya recipes skip tomatoes, this version uses a blend of tomato paste and diced tomatoes to add bulk, and an acidity that helps lighten up the otherwise hearty one-pot meal.

Provided by Vallery Lomas

Categories     grains and rice, main course

Time 35m

Yield 2 to 4 servings

Number Of Ingredients 13

2 tablespoons extra-virgin olive oil
1 medium yellow onion, diced
2 links pork or vegan andouille or chorizo sausage (6 ounces), cut into 1/2-inch pieces
2 celery stalks, thinly sliced
1 green bell pepper, diced
4 garlic cloves, minced
1 tablespoon tomato paste
2 cups cooked long-grain white rice
1 tablespoon creole seasoning
Salt and black pepper
1 (15-ounce) can diced tomatoes
1 tablespoon hot sauce, plus more for serving
2 tablespoons sliced scallions

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium. Add the onion and cook, stirring often, until softened, 5 to 7 minutes. Add the sausage and cook until starting to brown, about 5 minutes.
  • Add the remaining tablespoon oil, then add the celery and bell pepper and cook, stirring occasionally, until softened, 5 to 7 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Stir in the tomato paste and cook until very fragrant, about 1 minute.
  • Reduce the heat to low and add the cooked rice. Sprinkle with the creole seasoning and 1/2 teaspoon each salt and pepper. Stir in the tomatoes and hot sauce and cook until warmed through. Season with additional salt and pepper as needed. Garnish with the scallions and serve with more hot sauce.

LANDES JAMBALAYA

Landes Jambalaya image

A recipe I came up with through trial and error. Jambalaya is a New Orleans tradition. It is similar to a gumbo. It is made with just about any meat ingredient. You can substitute with any sausage or seafood you like.

Provided by Lande Hoffman

Categories     < 4 Hours

Time 1h30m

Yield 6 serving(s)

Number Of Ingredients 20

12 ounces Rotel diced tomatoes
12 ounces diced tomatoes with seasonings
12 ounces whole tomatoes
1 cup finely bell pepper (green, yellow, orange, red, your choice)
1 cup finely chopped celery
4 garlic cloves, minced
1 cup onion, finely chopped
1/2 teaspoon oregano
1 teaspoon parsley
1 teaspoon cayenne pepper (more or less to taste)
2 tablespoons Worcestershire sauce
1 1/2 teaspoons salt
1 teaspoon pepper
7 cups rice
1 tablespoon Tabasco sauce (more or less to taste)
2 chicken breasts, cut int 1/2 in cubes
1 lb andouille sausage, cut into thin slices
1 lb shrimp, drain liquid before use
2 1/2 cups chicken stock
8 ounces whipping cream

Steps:

  • In a large pot add all tomatoes with juices and chicken stock, bring to a boil and squash whole tomatoes. Once boiling add onions, peppers, celery garlic and all spices and turn heat down to low. Stir regularly for 10 minutes. Add chicken and continue to simmer for 10 minutes. Add sausage and cream and continue to simmer for 15 to 30 minutes.
  • While stock is simmering begin to cook rice you favorite way so that it is fluffy and not sticky. My favorite way is to bring water to a boil in a large pot, enough to cover rice by 4 or more inches. Wash rice in a colander and add to boiling water. Boil till rice is soft to the bite test adding water to the pot often keeping it above the rice level by an inch or two at all times. Remember to stir the rice often keeping it from sticking to the pan and clumping. Once done, pour rice into colander and run under cold water stirring constantly removing excess starch (1 min). Once water has drained and rice is fairly clean of excess starch add to stock. Stir mixture together and add seafood. Stir again cover pot and turn off heat for 10 minutes and serve.
