Steps:
- Fill a cast-iron pot halfway with oil and heat over medium heat until the oil reaches 350 degrees F.
- Add the pork belly to the oil and cook, stirring constantly, until golden brown and the skins begin to float, crack and pop, about 1 hour. Drain on a sheet tray lined with paper towel and allow to cool for 30 minutes.
- Again, heat the oil to 350 degrees F and fry a second time, stirring occasionally, until the cracklings are crisp and golden, 10 to 12 minutes. Drain on a sheet tray lined with paper towel. Sprinkle liberally with Cajun seasoning.
- Allow to cool slightly and serve.

- Chop the fat into ¾-inch cubes and place in a small covered saucepan set over low heat. Add ½ cup water and bring to a simmer. Stir after 30 minutes. Continue to cook, letting it bubble, and stir from time to time. When the water boils off, render for about 2 hours. The lard will clarify, and the cracklings will shrivel and shrink. As it cooks, watch and listen: turn down the heat or take the pan off the heat if it smokes or if the lard starts to brown.
- When the cracklings are lightly golden and have almost stopped bubbling, remove them and drain on paper towels or a brown paper bag. Strain the lard through a cheesecloth into a jar or bowl, where it will keep, covered, in the refrigerator for several weeks. Try a crackling. If it is not crunchy and appetizing, crisp the rest on a baking sheet in a 375-degree oven for 15-20 minutes. Season if you'd like, then cool on paper towels. Cracklings, well drained and lightly covered, will keep at room temperature for at least a week.

- It’s the Cherry on Top. Most of us like to add a cherry on top of our sundae. Don’t get concerned; I’m not going to suggest you add cracklins to your ice cream unless you’re extremely brave.
- Brown Gravy. My husband grew up on milk gravy, but I grew up on brown gravy. I love it on my mashed potatoes or stuffing. Well, add a little something extra to your brown gravy by tossing in a handful of crispy pork cracklins at the end.
- Chips and Dip. You probably already guessed, if I’m a gravy girl, I’m most likely a dip girl too. You would have assumed correctly. However, instead of purchasing a bunch of ingredients to make a dip, why not make it entirely from scratch.
- Pork Cracklin and Veggies. It may seem odd to mix cooked pig fat with vegetables for a delectable meal, but would you imagine it works? The next time you’re in need of a snack, cut up crunchy vegetables into bite-sized pieces.
