BABY STRAWBERRY AND HONEY PIES

- Put an oven rack in the center of the oven. Preheat the oven to 375 degrees F.
- For the crust: Spray a 12-count nonstick mini-muffin pan with vegetable oil cooking spray. Put a strip of parchment paper, 1-inch wide and 5-inches long into each muffin cup, allowing the excess paper to overhang the sides of the cups. Unroll the pie crust and using round cookie cutters, cut out 12 (3-inch) circles and 12 (2-inch) circles of dough. Lightly press the 3-inch circles of dough into the bottom and sides of the prepared muffin cups.
- For the filling: In a small bowl, whisk together the honey, lemon juice, arrowroot, and orange zest until smooth. Stir in the strawberries.
- Spoon the filling into the muffin cups and using a pastry brush, lightly brush the edges of the dough with beaten egg. Put the 2-inch circles of dough on top. Using the tines of a fork press the edges of the dough together to seal. Lightly brush the tops of the pastry with the beaten egg. Using the tip of a knife, make a 1/4-inch wide slit in the center of each pie. Bake until the crust is golden, about 14 to 15 minutes. Remove from the oven and cool for 30 minutes. Using the overhanging parchment paper as handles, remove the pies from the pan. Remove the parchment paper and serve.
AUNT BARBARA'S STRAWBERRY PIE
This is a summer favorite from my childhood! Sliced strawberries, mixed with whipped cream and gelatin for texture, on top of a yummy graham cracker crust.

- Preheat oven to 375 degrees F (190 degrees C).
- Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl; mix until evenly moistened and press into the bottom and sides of a 9-inch pie pan.
- Bake in the preheated oven until the crust is lightly browned and smells toasted, about 12 minutes. Remove from the oven and cool.
- Soak gelatin in cold water for 3 minutes. Heat the water and gelatin in the top of a double boiler set over simmering water, stirring frequently, until gelatin is completely dissolved.
- Beat whipping cream in a chilled glass or metal bowl until soft peaks form.
- Stir strawberries and 1/3 cup sugar together in a bowl. Pour gelatin mixture over strawberries. Gently fold in whipped cream until incorporated. Pour filling into baked pie shell and chill in the refrigerator until set, at least 2 hours.

- In a liquid measuring cup or small bowl, pour in water, cornstarch and sugar. Stir until mostly dissolved. Microwave 1-2 minutes until mixture bubbles up and thickens. {It should turn translucent.}
- Stir in strawberry jello powder and pour over strawberries. Spread over top and refrigerate until set, 2-3 hours.
- In a large bowl, whip cream, sugar and vanilla together until stiff peaks form. Spread over top pie and garnish with more fresh strawberries. Serve cold.

- 1) To make the pie crust add the flour, salt and butter into a food processor and pulse about 10 times or until the butter is well distributed, then while pulsing slowly add the ice water until the dough comes together when pinched between your fingers.
- 4) Roll out the dough into about a 12 inch circle, place it in the prepared pie plate, trim the extra dough, crimp the edges and pierce the base and sides of the crust with a fork. Place a piece of aluminum foil over the crust and fill with dried beans (this is called blind baking).
