2 tablespoons olive oil
1 shallot, chopped
2 green onions, chopped
½ cup garbanzo beans, drained
salt and pepper to taste
1 bunch red Swiss chard, rinsed and chopped
1 tomato, sliced
½ lemon, juiced

Steps:

  • Heat olive oil in a large skillet. Stir in shallot and green onions; cook and stir for 3 to 5 minutes, or until soft and fragrant. Stir in garbanzo beans, and season with salt and pepper; heat through. Place chard in pan, and cook until wilted. Add tomato slices, squeeze lemon juice over greens, and heat through. Plate, and season with salt and pepper to taste.

1 bunch Swiss chard
3 medium potatoes (about 1 pound), peeled and cubed
1 medium onion, chopped
1 tablespoon olive oil
6 garlic cloves, minced
1/4 cup white wine or chicken broth
1/4 cup minced fresh oregano
1/2 teaspoon crushed red pepper flakes
1/3 cup sour cream
1/4 cup grated Parmesan cheese
3 tablespoons shredded cheddar cheese
1/4 teaspoon salt
1/4 teaspoon pepper
2 medium tomatoes, chopped
1/4 cup shredded Parmesan cheese

Steps:

  • Cook Swiss chard in boiling water for 2-3 minutes or until tender. Drain and pat dry. Cut out the thick vein from the bottom of eight leaves, making a V-shaped cut; set aside. (Refrigerate remaining Swiss chard for another use.) , Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook 15-20 minutes or until potatoes are tender. , Meanwhile, in a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the wine, oregano and pepper flakes. Bring to a boil; set aside. , Drain potatoes and mash. Stir in the wine mixture, sour cream, grated Parmesan cheese, cheddar cheese, salt and pepper. Overlapping cut ends of leaves, place about 1/3 cup potato mixture on each leaf. Fold in sides. Roll up completely to enclose filling. , Place seam side down in a greased 8-in. square baking dish. Cover and bake at 350° for 25 minutes. Sprinkle with tomatoes and shredded Parmesan cheese. Bake, uncovered, 10-15 minutes longer or until Swiss chard is tender and cheese is melted.

12 large leaves Swiss chard
12 quarter-inch-thick slices tomato (from about 2 medium)
12 quarter-inch-thick slices fresh mozzarella (from about 3/4 pound)
Coarse salt and freshly ground black pepper
Extra-virgin olive oil, for brushing and drizzling

Steps:

  • Line a baking sheet with paper towels. Set aside. Bring a large pot of salted water to a boil. Add one leaf at a time to boiling water, and blanch for 10 seconds. Place each leaf in ice bath to cool. Transfer to prepared baking sheet to drain.
  • Place a blanched leaf facedown on work surface. Cut out thickest part of stalk to about 1/3 the length of the leaf. Place a slice of tomato in center of leaf; top with a slice of cheese. Sprinkle with salt and pepper, and drizzle with oil. Fold bottom of leaf over contents. Fold in sides. Fold leaf over to completely enclose contents. Repeat with remaining leaves, tomatoes, and mozzarella.
  • Heat a grill pan over medium heat. Brush lightly with oil. Grill packets until lightly charred and heated through, about 2 minutes per side. Drizzle with olive oil. Serve immediately.

2/3 cup all-purpose flour, plus more for dusting
Kosher salt
1 pound Swiss chard, stems removed
1 1/2 cups whole-milk ricotta cheese
1/2 cup Parmesan cheese, plus more for topping
1 large egg, plus 2 egg yolks
Zest of 1 lemon, 1/2 finely grated, 1/2 removed in wide strips
Freshly ground black pepper
1/4 cup extra-virgin olive oil, plus more for drizzling
1 large clove garlic, thinly sliced
1 pound cherry tomatoes
2 tablespoons tomato paste
Pinch red pepper flakes
1 tablespoon lemon juice

Steps:

  • Dust a rimmed baking sheet with flour. Bring a large pot of salted water to a boil; add the Swiss chard and cook until wilted, 2 to 3 minutes. Remove the chard with tongs and transfer it to a kitchen towel. (Reserve the pot of water.) Squeeze the chard dry in the towel, then transfer it to a food processor and process until finely chopped.
  • Combine the chard, ricotta, Parmesan, whole egg and egg yolks, grated lemon zest and 1/2 teaspoon each salt and pepper in a large bowl; mix well. Mix in the flour until just combined. Scoop tablespoonfuls of the mixture onto the prepared baking sheet, then gently shake the pan to coat the gnudi in flour. Freeze at least 10 minutes.
  • Meanwhile, combine the olive oil and garlic in a large skillet over medium heat and cook until the garlic is golden, about 3 minutes. Remove the garlic with a slotted spoon and reserve. Increase the heat to high; add the tomatoes and cook, stirring, until they begin to pop. Reduce the heat to medium; stir in the tomato paste and red pepper flakes. Add 1 1/2 cups water, the lemon zest strips and reserved garlic. Cook, crushing the tomatoes, until thickened, 8 to 10 minutes; stir in the lemon juice. Remove the strips of lemon zest. Divide the sauce among bowls.
  • Return the pot of water to a low boil. Working in two batches, gently add the gnudi and cook until they float, then cook 1 minute longer for a total of about 4 to 5 minutes. Remove with a slotted spoon and add to the bowls. Drizzle with olive oil and top with Parmesan.

This inventive appetizer has comfort food appeal with creamy ricotta and warm pine nuts used as a filling for folded Swiss chard leaves that serve as edible holders.

1 1/2 ounces sun-dried tomatoes
1/2 cup pine nuts, toasted
2 large bunches Swiss chard
1/4 cup extra-virgin olive oil, plus more for drizzling and brushing
1 large yellow onion, finely chopped
Coarse salt and freshly ground pepper
2 cups whole-milk ricotta cheese

Steps:

  • Bring a small saucepan of water to a boil. Add sun-dried tomatoes. Remove from heat, and allow to sit 1 hour. Drain, discarding water. Coarsely chop drained tomatoes (there should be about 1/4 cup packed). Set aside.
  • Heat oven to 350 degrees. Spread pine nuts on a small baking sheet, and bake until light golden brown, about 7 minutes. Set aside.
  • Prepare an ice bath, and set aside. Line a baking sheet with paper towels. Set aside. Bring a large pot of salted water to a boil. Choose the twelve largest Swiss chard leaves. Add one leaf at a time to boiling water, and blanch for 10 seconds. Place each leaf in ice bath to cool. Transfer to prepared baking sheet to drain. Roughly chop remaining chard (there should be 4 to 5 cups). Set aside.
  • In a large skillet, heat oil over medium heat. Add onions, and cook, stirring occasionally, until translucent, about 5 minutes. Season with coarse salt and freshly ground pepper. Add chopped chard and sun-dried tomatoes. Cook until chard is wilted, about 5 minutes more. Transfer to medium bowl. Set aside to cool.
  • Add pine nuts and ricotta to chard mixture. Season with coarse salt and freshly ground pepper. Stir to combine.
  • Place a blanched leaf facedown on work surface. Cut out thickest part of stalk to about 1/3 the length of the leaf. Place a scant 1/2 cup of cheese mixture slightly off center toward bottom of leaf. Fold bottom of leaf over mixture. Fold in sides. Fold leaf over, to completely enclose contents. Repeat with remaining leaves and filling.
  • Heat a grill pan or an outdoor grill over medium heat. Brush lightly with oil. Grill packets until lightly charred and heated through, about 2 minutes per side. Drizzle with olive oil. Serve immediately.

1 lb swiss chard
4 garlic cloves, minced
1 cup chopped onion
2 teaspoons olive oil
6 egg whites
2 whole eggs
3 tablespoons chopped fresh basil
1/4 teaspoon salt
1/4 teaspoon black pepper
1 medium tomatoes, sliced

Steps:

  • Chop the chard. In a skillet, sauté the garlic and onions in 1 tablespoon of the oil.
  • Add the chard, cover and lower the heat and cook for 10 minutes.
  • Remove from heat and drain if juicy.
  • In a large bowl, beat the eggs, salt and pepper until blended. Stir in the chard.
  • Coat the bottom of a skillet with the remaining oil and return to medium heat.
  • When hot, pour egg mixture and arrange tomato slices on top.
  • Cover and cook until the edges are firm and the bottom is golden and beginning to brown. Turn frittata over and cook for about 5 more minute until eggs are cooked.
  • Serve immediately or at room temperature.

1 lb red swiss chard or 1 lb green swiss chard
3 tablespoons extra virgin olive oil
1/2 cup soft fresh breadcrumb
1 clove garlic, minced
2 small tomatoes, i use italian tomatoes,seeded and diced
1/4 teaspoon salt
crushed red pepper flakes

Steps:

  • Trim coarse leaves and thick center ribs from chard; cut tender stems and leaves into 1/2-inch slices.
  • Heat 1 tablespoon of the oil in a large skillet; add bread crumbs; cook, stirring often, until crisp and golden; remove from skillet and set aside.
  • Cool skillet slightly; add remaining oil and garlic; cook, stirring, 2 minutes; add chard and cook until wilted, 1-2 minutes; add tomatoes, salt, and red pepper flakes to taste.
  • Remove from heat and sprinkle bread crumbs over the top.

Stuffed pastas such as ravioli are simple to make, but it is important to keep the dough soft enough to be worked easily. Always roll out and fill 1 sheet of dough at a time, keeping the remaining dough wrapped in plastic wrap to prevent it from drying out.

Yield Makes 45 ravioli; Serves 4 generously as a main course

Number Of Ingredients 11

1 1/2 pounds Swiss chard, stems and ribs discarded and leaves washed and drained
3 tablespoons finely chopped onion
1 garlic clove, chopped fine
2 tablespoons pine nuts, chopped coarse
2 tablespoons extra-virgin olive oil
4 Kalamata olives, pitted and chopped fine
3 tablespoons golden raisins, chopped fine
Food Processor Pasta Dough
all-purpose flour for dusting
Accompaniment: Quick Tomato Sauce
freshly grated Parmesan for serving

Steps:

  • Finely chop Swiss chard (you should have about 6 packed cups). In a large non-stick skillet sauté onions, garlic, and pine nuts in oil over moderately high heat until onion is softened and pine nuts are a few shades darker. Stir in olives, raisins, and half of Swiss chard and cook, stirring, until chard is slightly wilted. Stir in remaining chard and season with salt and pepper. Cook filling, covered, over moderate heat, stirring occasionally, until chard is tender, about 5 minutes and cool. Chill filling, uncovered, at least 1 hour or, covered, up to 1 day.
  • Set smooth rollers of pasta machine on widest setting. Cut dough into 4 pieces and wrap 3 of them separately in plastic wrap. Flatten unwrapped piece of dough into rectangle and feed through rollers. Fold rectangle in half and feed through rollers 8 or 9 more times, folding in half each time and dusting in half as necessary to prevent sticking.
  • Turn dial down to next (smaller) setting and feed dough through rollers without folding. Continue to feed dough through, without folding, making space between rollers narrower each time, until narrowest setting is reached and pasta is about 3 1/2 inches wide.
  • Put pasta sheet on work surface with long side facing you and put packed teaspoon of filling 2 inches apart lengthwise along half of the pasta sheet (you should have 10 to 12 mounds). Around each mound of filling brush dough very lightly with water. Fold dough lengthwise in half over mounds of filling, gently pressing around mounds to force out any air, and seal edges well. With a fluted pastry wheel trim edges and cut between mounds of filling to separate ravioli.
  • Line a large tray with a dry kitchen towel and arrange ravioli in one layer. Make more ravioli with remaining 3 pieces of dough and remaining filling in same manner, transferring to kitchen-towel-lined tray and arranging in one layer. Ravioli may be made 8 hours ahead and chilled on towel-lined tray, covered loosely with plastic wrap.
  • In an 8-quart kettle bring 7 quarts of salted water to a boil. Cool ravioli until tender, 3 to 4 minutes, and drain in a colander. In a heated large bowl immediately toss ravioli with sauce.
  • Serve ravioli with Parmesan.
