- Put arborio rice into a strainer and rinse it until the water runs clear. Pour 2 cups (392 g) of arborio rice into a fine-mesh strainer and hold it under the tap. Run cold water over the rice until the water that drains doesn't look cloudy anymore. Rinsing the rice will prevent it from clumping up as it cooks.
- Place the rinsed rice into your rice cooker and pour in 3 cups (710 ml) of water. If you'd like to use a different amount of rice, keep the ratio at 1 part rice to 1.5 parts of water. For example, if you want to cook just 1 cup (196 g) of arborio rice, use 1 1⁄2 cups (350 ml) of water.Variation: To make risotto in your rice cooker, replace the water with chicken broth or stock. Once the machine has finished cooking the rice, stir 1 cup (100 g) of grated parmesan cheese into it.
- Close the lid and turn the rice cooker on. Depending on the type of rice cooker you have, you may need to select "Cook," "Rice," or just turn the machine on. Most rice cookers will turn themselves off once the rice has finished cooking or they'll switch to a setting that keeps the rice warm until you turn it off. It will probably take around 30 minutes for your machine to cook the arborio rice.
- Fluff the arborio rice and let it sit for 10 minutes before you serve it. Once the machine turns off or switches to the "Keep warm" setting, open the lid and use a wooden spoon to gently loosen and break up the rice. Then, put the lid back down and leave the rice for 10 minutes so it can finish cooking. You can store leftover arborio rice in an airtight container for up to 6 days.
CRISPY WHITE BEANS WITH CHILI OIL

- In a bowl, let the beans soak in the buttermilk for a few minutes, then drain in a sieve. Place the sieve over a bowl.
- Heat 3/4 cup olive oil and the chili oil in a 10-inch skillet over high heat. While the oil is heating, sprinkle the coating over the beans and shake in the sieve to coat the beans well. Repeat with the coating that falls into the bowl. Don't worry if they don't absorb all the coating.
- Carefully add the beans to the hot oil, spread them into an even layer, and cook without stirring until they are browned and crisp on the bottom, 6 to 7 minutes. Turn with a spatula and brown on the other side, another 5 to 6 minutes, adjusting the heat so they don't burn. When they are evenly browned, add sliced garlic and brown for another 3 minutes. Season with salt and pepper, to taste. Add chiles to the pan, and continue to fry for another 15 seconds before adding the sage. With a slotted spoon, transfer the beans to paper towels to drain. Saute until the leaves turn crisp, about 1 minute. Top with lemon zest, then remove from the heat.
- Chef's Notes:
- The Arborio Rice Coating is by far the best coating I know for anything fried. It gives an especially crisp crust to fried fish fillets, squid, shrimp, eggplant and veal cutlets. You may as well make a lot because it keeps well in the freezer, and it's hard to grind less than 1 cup of rice in a blender. If you have a spice mill, you can halve the recipe.
- Arborio Rice Coating is one of the few places I use table salt. Sea salt and kosher salt are too heavy to stay evenly distributed in the coating.
- Bringing the beans up to a simmer slowly helps keep the skins from splitting.
- Arborio Rice Coating:
- 1 cup Arborio rice
- 3 cups all-purpose flour
- 1 cup semolina
- 2 tablespoons table salt
- 1 teaspoon freshly ground black pepper
- Grind the rice in a blender until very fine. Put it in a bowl and add the all-purpose flour, semolina, salt and pepper. Toss until well blended. Store in a sealed container in the freezer for maximum freshness.

- Cook green beans in boiling salted water until tender, about 3 or 4 minutes. Drain well.
- Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until browned, about 3 to 4 minutes. Add the garlic and thyme. Season with salt and freshly ground black pepper, to taste. Cook until garlic is fragrant, about 1 minute.
- Add brandy or cognac, red wine and chicken broth, bring to a boil. Simmer to blend flavors and reduce sauce, about 2 to 3 minutes. Add green beans to mushroom sauce and toss to coat. Place on a large serving dish, season again with salt and pepper, to taste.
- Top with fried onions before serving.
- 2 quarts peanut oil, for frying
- 2 large red onions, thinly sliced and separated into rings
- 1/2 cup buttermilk
- 2 cups arborio rice coating, recipe follows
- Kosher salt
- Heat peanut oil in a deep fryer or deep pot to 375 degrees F.
- Put onion rings in a large bowl. Pour buttermilk over onions and toss to coat. Shake off the excess liquid.
- Dip onions into Arborio rice coating, covering thoroughly
- Fry the onions in small batches until crispy, about 2 minutes per batch. Scoop out with a slotted spoon and drain on paper towels. Set aside. Season with salt, to taste.

- Heat oil in a 3- to 4-quart saucepan over medium-high heat. When oil shimmers, add onions and salt and saute until onions are translucent, 3 minutes.
- Add rice and garlic to pan and saute until rice is toasted and fragrant, 2 minutes.
- Add chicken broth and water to pan. Bring to a boil, stir once, cover, and reduce heat. Simmer rice, covered, until liquid is evaporated, 18-20 minutes.
- Remove from heat and let stand, covered, 5 minutes before serving.
