- Preheat oven to 350°. In a large skillet, cook and crumble beef over medium heat until no longer pink; drain. Add beans, onion and taco seasoning. , Unroll crescent roll dough. Press onto bottom and up the sides of a greased 13x9-in. baking dish; seal seams and perforations. , Spread beef mixture over crust; sprinkle with cheeses. Bake, uncovered, until golden brown, about 30 minutes. If desired, sprinkle with toppings.

BEEFY LAYERED BURRITO CASSEROLE
This casserole is very hearty and flavorful. I serve it with a dallop of sour cream on top. Great to make ahead and bake later.

Steps:
- Preheat oven to 350.
- In a large skillet, brown ground beef with onion; drain. Return beef & onions to hot skillet off of heat and stir in rice, undiluted soup and taco seasoning. Mix together well.
- Lightly spray a lasagna pan/ 13" x 9" pan with nonstick cooking spray.
- Line bottom of pan with 4 of the tortillas.
- Evenly cover tortillas with half of the meat/rice mixture, then 1/2 of the salsa, then sprinkle with half of the corn, half of the black beans and 1 cup of cheese.
- Cover again with 4 more of the tortillas and repeat these layers again.
- Finally, top with the last 4 remaining tortillas. Pour entire can of enchilada sauce over top. Sprinkle with remaining 2 cups cheese and cilantro.
- Bake at 350 for about 25 minutes.
- Serve with a dallop of sour cream, if desired.

LAYERED BURRITO BAKE
Ground beef, salsa, refried beans and cheese are layered between tortillas for a burrito bake that's like a fiesta in a dish.

Steps:
- Heat oven to 400ºF.
- Brown meat with peppers, carrots, onions and garlic in large nonstick skillet. Add tomatoes, salsa and cumin; mix well. Cover; simmer 5 min. Remove from heat. Stir in corn.
- Spread 2 cups tomato mixture onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with 4 tortilla halves, with cut-sides of tortillas facing sides of dish. Cover with layers of half the beans, 2-1/2 cups of the remaining tomato mixture and 1/2 cup cheese. Repeat layers. Top with remaining tortillas, tomato mixture and cheese; cover with sheet of foil sprayed with cooking spray.
- Bake 35 to 40 min. or until heated through, uncovering for the last 5 min. Let stand 5 min. before cutting to serve.

- In a large skillet, cook beef and onion until meat is no longer pink; drain. Add the tomato sauce, garlic, chili powder, salt, pepper and, if desired, olives. Bring to a boil. Reduce heat; simmer for 5 minutes or until thickened. , Lightly butter tortillas on one side; place one tortilla, buttered side down, in a 2-qt. round casserole. Top with about 1/2 cup meat mixture and 1/3 cup cheese. Repeat layers, ending with cheese., Pour water around the sides of casserole (not over top). - Brown ground meat/turkey & onion; drain.
- Add taco seasoning and stir in refried beans.
- Mix soup and sour cream in a separate bowl.
- Spread 1/2 sour cream mixture in the bottom of a casserole dish.
- Tear up 3 tortillas and spread over sour cream mixture.
- Put 1/2 the meat bean mixture over that.
- Add a layer of cheese.
- You could put some hot sauce on this now.
- Repeat the layers.
- Sprinkle cheese over the top and bake, uncovered, at 350°F for 20-30 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Coat a casserole dish with cooking spray.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent, 3 to 5 minutes. Add beef and increase heat to medium-high. Cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Combine refried beans and burrito seasoning in a bowl and mix well. Add mixture to the beef in the skillet and stir well.
- Mix cream of mushroom soup and sour cream together in a bowl.
- Place a layer of chips into the prepared casserole dish to just cover the bottom. Follow by 1/2 the meat mixture, 1/2 the soup mixture, 1 cup shredded Mexican cheese blend, and 1/2 the salsa. Repeat layers and top with remaining cheese.

VEGGIE MEXICAN LAYERED CASSEROLE
I meant to make burritos one night but I was in a hurry, so I layered everything together in a casserole dish to save time. The result was this Mexican layered casserole and a yummy go-to dish that is easily customizable for things I usually have on hand. You could add chicken or beef if you'd like, but we eat it as-is! Top with chopped cilantro and chopped green onions.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat oil in a skillet over medium heat. Add Roma tomatoes, chile sauce, corn, yellow bell pepper, green bell pepper, white onion, red onion, jalapeno pepper, and cumin. Cook and stir until tender, 5 to 7 minutes. Add refried beans and pinto beans; stir to combine. Remove bean mixture from heat.
- Mix 1 cup Cheddar cheese, cottage cheese, and sour cream together in a bowl.
- Cover the bottom of a 9x13-inch casserole dish with 1/3 of the bean mixture. Top with a third of the cheese mixture and a thin layer of tortillas. Repeat with another third of the beans, another third of the cheese mixture, and tortillas. Repeat again with remaining beans, remaining cheese mixture, and a final layer of tortillas. Sprinkle remaining 1/2 cup shredded Cheddar cheese on top. Cover with aluminum foil.
- Bake in the preheated oven for 20 minutes. Remove aluminum foil and bake until bubbling, 8 to 10 minutes more.
- Remove from oven and let stand for 10 minutes before serving.
