RAKOTT KRUMPLI RECIPE HUNGARIAN LAYERED POTATOES
Rakott krumpli is a gloriously simple layered potato recipe from Hungary, eggs and smoked sausage are all layered up with sour cream to make a super-rich and delicious dish.

Steps:
- Bring a pan of well-salted water to the boil.
- Add in the potatoes and the eggs.
- Boil the eggs for 10 minutes before removing.
- Remove the potatoes after 30 minutes.
- Allow both to cool for 10 minutes and then peel both.
- Mix the egg yolk with the sour cream.
- Cut the sausage, boiled eggs and potatoes into 3-4mm thick slices.
- Grease an 18cm X 12cm gratin dish with butter.
- Layer up the dish starting with potatoes, then sausage, then egg and then a third of the sour cream.
- Season this layer with salt and pepper and add another identical layer.
- Finish with a layer of potatoes and then add the remaining sour cream.
- Place in an oven and cook for an hour at 200°C or 400°F.

Steps:
- Heat oven to 375°F.
- Place potatoes in separate bowls. Add half each of the cream cheese spread, sour cream and pepper to potatoes in each bowl; mash until creamy.
- Stir half the Parmesan into white potatoes, then stir half the cheddar into sweet potatoes. Layer half of each the potatoes in 2-qt. casserole sprayed with cooking spray. Repeat layers.
- Bake 15 min. Top with remaining cheeses; bake 5 min. or until melted.

So I tooled around with a the basics of latkes until I had a recipe that I liked. They were such a hit with the family that it's been a staple ever since.

Steps:
- Pour potatoes, onion, garlic, salt, ground peppercorns, flour, and eggs into a bowl, respectively. Fold mixture together with a rubber spatula until ingredients are well coated with egg and garlic, salt, and pepper are evenly mixed throughout. Break up any large potato chunks.
- Heat oil in a deep-fryer or large skillet to 375 degrees F (190 degrees C).
- Form latke dough into baseball-size balls and flatten into 1-inch thick rounds.
- Working in batches, place latkes in hot oil and cook until edges are a rich brown, 3 to 5 minutes. Flip latkes using a slotted spoon and cook until crisp and golden brown, 2 to 3 minutes more. Transfer to a paper towel-lined plate to cool.

Steps:
- boil potatoes in salted water until cooked ( iprefer to peel them first but you can peel them after boiling).
- hard boil 5 eggs.
- dice bacon finely and fry.
- drain off fat.
- cut ham into 5mm squares or sausage slice into coins.
- spoon sour cream into a jar and break in 1 egg and beat lightly with fork.
- coat bottom of casserole dish with butter and sprinkle breadcrumbs on top.
- slice potatoes into 5mm thick rounds shell eggs and slice with egg slicer.
- preheat oven to 180 degrees Celsius.
- place one layer of potatoes on bottom of pan sprinkle with salt.
- follow with layer of eggs then layer of ham and bacon or sliced sausage.
- spoon over third of sour cream mixture.
- repeat until all used.
- leaving enough potatoes for top layer.
- sprinkle grated cheese on top and bake for 30 minute.
