Steps:
- Season the chicken on both sides with the salt, pepper and garlic powder. In a large bowl big enough to accommodate all of the chicken, whisk together the hot sauce, buttermilk and eggs. Add the chicken and toss to combine.
- Cover and marinate, refrigerated, at least 2 hours and up to 4.
- In a large Dutch oven, heat a couple inches of peanut oil to 350 degrees F. Preheat the oven to 450 degrees F.
- Dredge the chicken in the flour, taking care to evenly coat each piece. Transfer in batches to the hot oil, cover and let cook 5 minutes. Remove the cover and turn the chicken. Let cook, uncovered, an additional 5 minutes.
- Transfer the chicken to a baking sheet. When all of the pieces are fried, bake the chicken an additional 10 minutes. Serve immediately.
FRIED CHICKEN

- Thoroughly rinse the chicken pieces, then place them in a bowl and cover with 4 cups of the buttermilk. Soak in the fridge overnight or up to 24 hours.
- When you're ready to fry the chicken, remove the bowl from the fridge and let it sit on the counter for 30 minutes, just to take the chill off.
- In the meantime, preheat the oven to 360 degrees F and mix up the breading. Place the flour, seasoned salt, paprika, black pepper, thyme and cayenne (plus extra cayenne if you like heat) in a very large bowl. Stir together well.
- In a small bowl, combine the remaining 1/4 cup buttermilk and the milk. Pour the milk mixture into the flour mixture and gradually mix with a fork until there are little lumps throughout; these will adhere to the chicken and make for a crispier breading. If necessary, add a little more flour or milk to make the breading slightly lumpy.
- Heat 1 1/2 to 2 inches of oil in a deep skillet over medium-high heat until a deep-fry thermometer reaches 365 degrees F. Lower the heat slightly, if necessary, to keep the oil from getting hotter.
- Working in batches, thoroughly coat each chicken piece with breading, pressing extra breading onto the chicken if necessary. Place the breaded pieces on a plate.
- Add the breaded chicken to the oil, 3 or 4 pieces at a time; make sure they don't stick together. Cover the pan and fry for 5 to 7 minutes, checking occasionally to make sure the chicken isn't getting too brown. Turn the pieces over, cover again, and cook for 3 to 5 minutes more. All the while, monitor the temperature of the oil to make sure the chicken doesn't burn.
- Transfer the fried chicken to a baking sheet and continue frying the rest of the chicken. When all the chicken has been fried, remove the wings and legs to a plate and keep covered. (These should be cooked all the way through by now, but always check if any pink juice or meat is visible. If so, return to the hot oil for another minute or so, until fully cooked.) Leave the thighs and breasts on the baking sheet.
- Bake the thighs and breasts for 15 minutes to finish cooking. (Sometimes I'll cut into the thicker part of one of the larger pieces just to make sure the chicken is cooked through. If any pink juice or meat is visible, the chicken needs to continue cooking in the oven.)

- Preheat an outdoor grill for high heat.
- In a medium bowl, mix together the ground beef, onion, egg, bread crumbs, and bacon bits. Season with garlic salt. (I like to use a lot.) Divide into four balls, and pat into patties.
- Lightly oil the grate, and place patties onto the grill. Cook for about 5 minutes per side, or until firm and no longer pink in the center. Serve on toasted buns with your favorite hamburger toppings.

EASY OVEN-FRIED CHICKEN LEGS

- Combine buttermilk, salt, and pepper in a large bowl. Add chicken pieces and marinate at room temperature for 30 minutes.
- Preheat the oven to 450 degrees F (230 degrees C). Line a rimmed baking pan with foil and place in the oven.
- Combine cornstarch, panko, smoked paprika, Greek seasoning, onion powder, poultry seasoning, salt, and pepper in a large resealable bag.
- Remove chicken legs from buttermilk, drain, and dip legs one at a time into the dry coating mixture.
- Remove pan from the oven with pot holders and add 1 tablespoon melted butter to the pan. With a pastry brush, spread melted butter all over the pan.
- Lay coated chicken legs into the pan. Pour half of the melted butter over chicken legs.
- Roast in the preheated until chicken is no longer pink at the bone and the juices run clear, about 40 minutes, turning over at the halfway point. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Drizzle with remaining melted butter and serve immediately.

FRIED CHICKEN LEGS DONE MY WAY!
DH and I love chicken legs better than the other sections of the chicken. I just add my special touch of seasonings to the basic flour mixture. Everyone loves them legs!!

- Heat a large electric skillet to 375'.
- Place oil and butter in skillet til hot.
- Meanwhile mix together flour,salt,pepper,seasoning salt,chicken bouillon,and beau monde seasoning in a large plastic baggie or a bread bag and shake to blend.
- Wash and towel dry chicken legs and add to plastic bag with mixture.
- Shake to coat legs.
- Place in hot oil and fry, turning every 10 minutes. Til browned evenly.
- Turn heat down and cover skillet for 10 minutes. Remove cover and turn legs over and cover with lid for another 10 minutes. Remove lid.
- Turn heat up again and fry til crisp, with turning every 5 minutes for 15minutes.
- Remove from oil and place on paper towel and serve.
- (NOTE: You may add or delete oil to your standards before or during frying).

- heat butter in a skillet.
- lift chicken out of bowl and place in skillet saute until lightly browned and cooked though about 3 minutes per side.

- Place chicken in bowl of cold water and soak for a few minutes. Drain chicken and dry well with paper towels. Season chicken with salt and black pepper.
- Mix flour, 2 teaspoons of salt, cayenne and paprika in a brown paper or Ziploc bag. Add a few chicken pieces at a time and shake until well coated. Remove and shake off excess flour mixture.
- Over medium-high heat, melt lard, vegetable shortening or oil to a depth of about 1 1/2 inches in cast-iron skillet. When fat has reached about 350 degrees, slip in chicken pieces, dark meat first, being careful not to crowd them. (To test temperature, use a candy thermometer or dip a corner of a chicken piece into the fat; if vigorous bubbling ensues, the temperature is right.) Turn heat down and cook chicken for 10 minutes. Turn pieces with tongs. Cook until other side is browned, another 10 to 12 minutes. Drain on a wire rack over paper towels.
