Leftover Pate Recipes
LEFTOVER PATE
Steps:
- Put your choice of meat, the eggs, and mayonnaise into the bowl of a food processor. Add the cheese (see below*) and seasonings (see below*) and process until the mixture is well blended and has a smooth texture, about 20 seconds. Add more mayonnaise as needed if the pate is too dry. Taste and adjust seasoning with salt and pepper. Serve with bread or crackers.
- *For pork: Cheddar cheese and 1 tablespoon curry paste
- For ham: Swiss cheese, 4 gherkins, and 1 teaspoon paprika
- For turkey: mozzarella cheese, 2 tablespoons olive paste, and 1 teaspoon ground cumin
- For chicken: Cheddar cheese, 1 tablespoon chopped fresh sage, and 1 teaspoon red peppercorns
- For roast beef: mozzarella cheese, 2 tablespoons Dijon mustard, 1 teaspoon horseradish
LIVER PATE
A great appetizer for New Year's Day and the Rose Bowl Parade. Serve with thinly sliced brown bread, rye crisp, crackers or chips.

Steps:
- In a medium saucepan, combine water, chicken livers, and sliced onion. Bring to a boil, reduce heat to low, and cover. Simmer for about 20 minutes, or until liver is cooked and tender. Remove from heat, drain, and discard onions. Also remove and discard any hard portions of the liver.
- Place cooked livers in a blender or food processor, and process until smooth. Add chopped onion, sherry, butter or margarine, salt, black pepper, and mace; pulse to blend. With hands lightly greased, form pate mixture into a mound, and place on a serving platter. Chill for 1 hour before serving.

- Cook the pasta in a large pan of boiling water, as per the packet instructions. When it is almost cooked scoop out a cup of the pasta cooking water and reserve.
- Whilst the pasta is cooking, place the butter into a frying pan and gently sauté the onion and garlic.
- Once soft, add the pate and stir until it is melted. Add the sherry, wine or lemon juice and the grapes. Stir. Pour in enough of the pasta coking water to make a coating sauce.
