2 cups all-purpose flour
1/2 cup powdered sugar
1 cup (2 sticks) butter or margarine, softened
FILLING
1 can (14 oz.) NESTLÉ® CARNATION® Sweetened Condensed Milk
4 large eggs
2/3 cup lemon juice
1 tablespoon all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
4 drops yellow food coloring (optional)
1 tablespoon grated lemon peel
Sifted powdered sugar (optional)

Steps:

  • PREHEAT oven to 350° F. FOR CRUST: COMBINE flour and powdered sugar in medium bowl. Cut in butter with pastry blender or 2 knives until mixture is crumbly. Press lightly onto bottom and halfway up sides of ungreased 13 x 9-inch baking pan. BAKE for 20 minutes. FOR FILLING: BEAT sweetened condensed milk and eggs in large mixer bowl until fluffy. Beat in lemon juice, flour, baking powder, salt and food coloring just until blended. Fold in grated lemon peel; pour over crust. BAKE for 20 to 25 minutes or until filling is set and crust is golden brown. Cool in pan on wire rack. Refrigerate for 2 hours. Cut into bars; sprinkle with powdered sugar.

Crust:
1 1/2 sticks (6 ounces) unsalted butter, at room temperature, plus more for greasing
3 tablespoons cornstarch
1/3 cup granulated sugar
1/4 teaspoon fine salt
Filling:
1/2 cup sweetened condensed milk
1/2 cup granulated sugar
1/3 cup all-purpose flour
Pinch fine salt
2 large eggs
2 large egg yolks
3/4 cup plus 2 tablespoons freshly squeezed lemon juice (about 7 lemons)
1 tablespoon fresh orange juice
Confectioners' sugar, for dusting

Steps:

  • For the crust: Lightly brush a 9- by 13-inch baking pan with butter. Beat the butter and granulated sugar with an electric mixer in a large bowl until light and fluffy, about 4 minutes. Whisk the flour, cornstarch and salt together in a medium bowl. Slowly add the dry ingredients to the butter and mix just until combined. Evenly press the dough into the prepared pan. Cover and refrigerate at least 1 hour.
  • Preheat the oven to 325 degrees F. Pierce the dough all over with a fork. Bake until golden, about 30 minutes. Cool.
  • For the filling: Whisk the sweetened condensed milk, granulated sugar, flour, salt, eggs and yolks in a large bowl until thick and light. Lightly whisk in the citrus juices. Pour the filling into the crust. Bake until set but still loose in the center, about 25 minutes. Cool to room temperature, and then refrigerate at least 1 hour.
  • Cut into 2-inch squares and just before serving, dust generously with confectioners' sugar.

2 tablespoons all-purpose flour

3 tablespoons lemon juice

⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To make Bottom Layer: Mix one cup flour and 1/4 cup confectioners sugar. Melt the butter and stir into flour mixture.
  • Press flat and even into an 8x8 inch baking dish. Bake for 20 minutes.
  • While baking, make the top layer: Mix 1 cup sugar, 2 tablespoons flour, and the baking powder.

2 lemons, juiced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
  • Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
  • Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. These were brought into my work recently to celebrate a co-worker's birthday. Absolutely incredible! The baker was hunted down and made to hand out the recipe. ;) It came from her Pampered Chef cookbook, and the pan she used was one of their 'bar pans'. I'm sure a 13X.. or 15X.. could be substituted, but the baking time should probably be adjusted.

1 (18 1/2 ounce) package yellow cake mix
1/3 cup butter, softened
1/2 cup pecans, chopped
1 (3 ounce) package lemon pudding mix (cook-type)
1 (14 ounce) can sweetened condensed milk
1 lemon, juice and zest of
1 cup powdered sugar
1 lemon

Steps:

  • Preheat oven to 350°.
  • For Base& Topping: Combine cake mix and butter, and blend thoroughly.
  • Add pecans and mix well.
  • Reserve 1 cup of the crumb mixture for topping.
  • Press remaining crumb mixture onto bottom of pan.
  • Roll lightly with glass or pin to smooth out.
