1/4 cup Unsalted butter
1 medium Lemon ((juiced and zested; see notes*))
1/2 tsp Garlic powder
3/4 tsp Sea salt
1/4 tsp Black pepper
1 tbsp Fresh parsley ((chopped))

Steps:

  • Preheat the oven to 400 degrees F (204 degrees C). You can bake the cod fillets from frozen or thaw them first in a bowl of cold water. (I prefer thawing if you have time, as it makes it easier to brush on the butter without solidifying.)

1 lb cod fish fillet
1/4 cup butter or 1/4 cup margarine, melted
2 tablespoons lemon juice
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon white pepper
paprika

Steps:

  • If fish fillets are large, cut into serving pieces.
  • Mix butter and lemon juice.
  • In another bowl, mix flour, salt and white pepper.
  • Dip fish into butter mixture; coat fish with flour mixture.
  • Place fish in ungreased square baking dish, 8x8x2 inches.
  • Pour remaining butter mixture over fish; sprinkle with paprika.
  • Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Garnish with parsley sprigs and lemon slices if desired.

This tangy Lemon Butter Baked Cod Fish is baked in a creamy lemon butter sauce that is a purely sinful delight! The light flakiness of a superb cod fillet is complimented perfectly with such a rich sauce. This easy baked cod is literally is dripping in flavor!

2 lbs cod fillet ((fresh, cut into portion sizes))
1 Tbsp olive oil ((to grease your baking dish))
1 cup heavy cream
4 Tbsp butter
1/2 cup white wine ((dry, we used Pinot Grigio))
2 large lemons ((juice and zest - divide zest into 2 equal portions))
1 1/2 Tbsp dill weed ((fresh, chopped - 1 Tbsp and 1/2 Tbsp portions))
1/2 tsp salt
1/2 tsp ground white pepper

Steps:

  • In a small to medium size saucepan, melt the butter over medium heat. Add heavy cream, dry white wine, lemon juice, the first 1 Tbsp portion of chopped dill and the first 1/2 portion of lemon zest. Stir to combine, add seasoning (salt & ground white pepper) then allow lemon butter sauce to come to a low simmer. Remove from heat.
  • Rinse and pat dry your cod fillets. Grease a small baking dish (big enough to fit your cod fillet portions into) with olive oil, butter, or non-stick cooking spray. Preheat your oven to 425°F (218°C).
  • Pour enough of the lemon butter sauce to cover the bottom of your baking dish, then arrange your cod fillets into the baking dish on top of the sauce. Sprinkle with the remaining portions of chopped dill and lemon zest, then season with salt and pepper (to taste).
  • Leave uncovered and bake at 425°F (218°C). Depending on the thickness of your cod fillets, my thickest cod fillet cooked in 20 minutes. If you are using thin cod portions, cook for 12-15 minutes and check the center of your largest portion. The cod should be white and flaky when done. Serve immediately with remaining lemon butter sauce.

2 tablespoons lemon juice
2 tablespoons butter, cut into small pieces
2 teaspoons salt, divided
⅛ teaspoon ground black pepper
2 medium carrots, coarsely shredded
1 medium onion, chopped
1 large stalk celery, minced
5 slices crustless white bread, cubed
½ cup butter, melted
1 teaspoon ground sage
½ teaspoon ground thyme
¼ cup dry bread crumbs
2 tablespoons snipped fresh parsley
½ teaspoon ground paprika

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cut cod fillets into serving pieces. Arrange in an ungreased baking dish and sprinkle with lemon juice, butter pieces, 1 1/2 teaspoons salt, and pepper.
  • Mix carrots, onion, celery, bread cubes, melted butter, sage, thyme, and remaining 1/2 teaspoon salt together in a bowl. Mix bread crumbs, parsley, and paprika together in a separate bowl.
  • Spread vegetable mixture evenly over cod. Cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Uncover and sprinkle bread crumb mixture over top. Bake until fish flakes easily with a fork, about 5 more minutes.
