Nothing screams summer quite like a pretty pink watermelon cocktail.

Number Of Ingredients 7

5 cups cubed seedless watermelon (about 1 1/2 pounds)
1 large English cucumber, peeled and cut into chunks
1/4 cup fresh lime juice (from 2 limes)
2 tablespoons honey
2/3 cup vodka
Ice
Cucumber slices, for garnish

Steps:

  • Set a large fine-mesh sieve over a large bowl or pitcher. In a food processor or blender, puree watermelon. Pour watermelon puree through sieve, pressing on solids with a rubber spatula (you should have about 2 cups juice). Puree English cucumber and pour through sieve into watermelon juice.
  • In a small bowl or measuring cup, stir together lime juice and honey. Add to watermelon and cucumber juices, along with vodka. Adjust sweetness with more honey if desired. To serve, fill four glasses with ice and top each with cocktail. Garnish with cucumber slices.

1 cup sugar
1 cup water
1 cucumber, sliced
ice
2 oz gin
1 ½ oz watermelon, juiced
½ oz lime juice
1 oz cucumber simple syrup
club soda, to taste
1 slice cucumber, for garnish

Steps:

  • In a small pot over medium heat, combine the sugar and water. Bring to a boil, stirring to dissolve the sugar completely.
  • Remove the pot from the heat and stir in the cucumber. Let steep, covered, for at least 4 hours or up to overnight.
  • Strain the syrup through a fine-mesh sieve or cheesecloth, pushing to extract as much syrup as possible. Store in an airtight container in the refrigerator for up to 1 month.
  • In a cocktail shaker filled with ice, combine the gin, watermelon juice, lime juice, and simple syrup. Shake vigorously for 20 seconds.
  • Strain into a glass filled with ice and top with club soda.
  • Garnish with the cucumber slice.

To spike these coolers, stir two ounces of Aperol, a bittersweet Italian aperitif, into each eight-ounce serving.

1/4 cup honey
2 cups packed lemon verbena or Thai basil leaves, plus more for serving
1/2 medium seedless watermelon, rind removed, cut into large chunks (about 12 cups)
3 English cucumbers, 2 peeled and chopped, 1 cut into spears, for serving
1/4 cup fresh lime juice (from 2 limes)

Steps:

  • Bring honey, 4 cups water, and herbs to a boil in a medium pot. Remove from heat and let cool completely. Discard herbs.
  • Working in batches, puree watermelon and chopped cucumbers in a food processor. Pass through a fine sieve, pressing on solids to extract as much liquid as possible; discard solids. Combine watermelon-cucumber juice, honey mixture, and lime juice in a pitcher. Refrigerate until chilled, about 30 minutes or up to overnight.
  • Stir well and serve over ice, with cucumber spears and fresh herbs.
