With lemon juice and Dijon mustard, this super fast dressing has a nice tang that's balanced by a hint of sweetness. Try it on a spinach salad or mixed greens with cucumber and tomatoes. -Bryan Braack, Eldridge, Iowa

1/2 cup lemon juice
1/3 cup light corn syrup
1/4 cup canola oil
1 tablespoon finely chopped red onion
2 teaspoons Dijon mustard
1/2 teaspoon salt

Steps:

  • Place all ingredients in a jar with a tight-fitting lid; shake well. Just before serving, shake dressing and drizzle over salad; toss to coat.

Number Of Ingredients 8

2 teaspoons grated lemon zest plus 1/4 cup lemon juice (from 2 lemons)
2 teaspoons honey
2 teaspoons Dijon mustard
1/2 cup extra-virgin olive oil
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
2 teaspoons chopped fresh tarragon
Coarse salt and ground pepper

Steps:

  • In a medium jar with a tight-fitting lid, place lemon zest plus juice, honey, Dijon mustard, olive oil, chives, parsley, and tarragon. Season with salt and pepper, tighten lid, and shake to combine. To store, refrigerate, up to 5 days.

I have been trying lots of recipes from "The New American Plate" a wonderful cookbook that features dishes that are lower in saturated fats and high in flavors. This is my own rift on one of their many salad dressings. Whether you are concerned about calories or not, you're gonna enjoy this one.

Number Of Ingredients 7

3 tablespoons Dijon mustard
1 tablespoon white vinegar
1 tablespoon olive oil, use extra virgin if possible
2 tablespoons fresh basil, chopped or 2 teaspoons dried basil
1 tablespoon parsley, finely chopped
1 tablespoon nonfat dry milk powder
2 tablespoons water

Steps:

  • In a small bowl whisk together the mustard, vinegar, oil, basil and parsley.
  • In a separate bowl mix the powdered milk and water; it will not be the consistency of milk, instead creamier and thicker like half-n-half.
  • Combine milk with the dressing and whisk until fully incorporated.
  • This will keep in the fridge for 2 or 3 days; if you are using dried herbs its tastes better if you let the dressing sit in the ice box an hour or so before serving.
