1 cup diced dates
1 1/3 cups old fashioned oats
4 tablespoons fresh lemon juice
1 teaspoon vanilla
zest of two lemon

Steps:

  • Combine dates, oats, lemon juice, and zest of one lemon in food processor. Pulse until Doug begins to form. Roll into 20 1" balls.
  • Sprinkle balls with remaining zest.
  • store in sealed container in refrigerator.
