FROSTED RHUBARB COOKIES
"Since these cookies freeze well, I make a lot of them during rhubarb season," says field editor Ann Marie Moch of Kintyre, North Dakota. "They are best when you use young tender stalks."

- In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in eggs. Combine the flour, baking soda and salt; gradually add to creamed mixture., Stir in rhubarb and coconut. Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 12-15 minutes or until lightly browned. Remove to wire racks to cool., In a large bowl, beat the cream cheese, butter and vanilla. Gradually beat in the confectioners' sugar until smooth. Spread over cooled cookies. Store in the refrigerator.

RHUBARB LEMON COOKIES
These tangy-sweet buttery rhubarb lemon cookies are the perfect taste of spring.

- In a large mixing bowl, cream the butter. Add the sugar and blend together until fluffy. Add the egg, vanilla, and lemon rind, and mix until thoroughly combined.
- In a smaller bowl, combine the flour, baking soda, baking powder, and salt. Add the flour mixture gradually to the butter-sugar mixture, stirring after each addition to incorporate. Then stir in the diced rhubarb.
- Scoop the dough in rounded teaspoonfuls onto a cookie sheet lined with parchment paper. The cookies will spread out a lot on the baking sheet, so make sure to leave plenty of room between the cookies. (Plan on no more than 8 to 10 cookies per pan.)
- Bake the cookies in a preheated 325 degree oven for 20 minutes, or until golden brown and crispy. Let cookies cool on a pan for five minutes, then use a spatula to transfer them to a baking rack where they can continue to cool.

- Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan. Finely grate enough zest from lemons to measure 2 tablespoons. Cut lemons crosswise in half; squeeze juice from lemons to measure 1/4 cup. Save remaining juice for another use. , In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add 1 egg at a time, beating well after each addition. Beat in lemon juice and zest. In another bowl, whisk flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition., Transfer batter to prepared pan. Bake until a toothpick inserted near the center comes out clean, 50-60 minutes. Cool in pan 10 minutes before removing to a wire rack., Meanwhile, for topping, combine sugar and rhubarb in a small saucepan. Bring to a boil; reduce heat. Simmer until rhubarb is almost tender, 8-10 minutes. Add halved strawberries; cook until strawberries and rhubarb are softened. Serve with cake. If desired, dust with confectioners' sugar.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix 2 cups flour, butter, and 1/2 cup white sugar together in a bowl until crumbly; press into the bottom of a 12x9-inch baking dish.
- Bake in preheated oven until crust is light brown, 25 to 30 minutes.
- Beat eggs, 1 cup sugar, and 6 tablespoons flour together in a bowl until smooth; add rhubarb, coconut, lemon juice, and vanilla extract and stir to coat. Pour the rhubarb mixture over the crust.
