LEMON ZINGER BARS {GLUTEN-FREE, DAIRY-FREE, SOY-FREE}



Lemon Zinger Bars {Gluten-Free, Dairy-Free, Soy-Free} image

Free of gluten, dairy, soy. Vegan, vegetarian.

2 3/4 cups gluten-free rolled oats (divided)
4 pitted dates (chopped)
3/4 cup dried apricots
Juice of 2 large lemons
Zest of 2 lemons
3/4 cup warm water

Steps:

  • Preheat the oven to 375°F. Grease an 8-by-8-inch baking pan or line with parchment paper.
  • Put 3/4 cup of the oats into a food processor (or blender) and pulse until the oats form a flour. Pour into a medium mixing bowl and set aside.
  • Add the dates and apricots to the food processor with the lemon juice and water. Allow the mixture to sit and soften for 30 minutes. Blend until the mixture is smooth.
  • Add the remaining 2 cups oats and the lemon zest to the bowl with the oat flour. Pour in the date-apricot mixture. Stir until well combined, and then pour the mixture into the prepared baking pan.
  • Bake until the edges become golden brown and the mixture feels firm to the touch, 35 to 40 minutes.
  • Remove the baking pan to a cooling rack. When cool, remove from the pan onto a cutting board and cut into squares. Set the bars on the cooling rack to firm up a bit more, about 10 minutes.
  • Store in an airtight container or resealable plastic bag for up to 1 week. To warm, reheat in a 375°F oven for 6 to 8 minutes.

  • Preheat the oven to 325°F. Line the bottom and sides of a 9×13 glass baking pan with parchment paper. Make sure the parchment paper hangs over the side of the pan to help make lifting the bars out of the pan easier.
  • In a large bowl mix the melted butter, sugar, pure vanilla extract, and salt. Add the gluten-free flour and stir to completely combine and the dough forms. The dough will be thick. Firmly press the dough into the lined pan evenly top about 1/2-inch thick. making, sure the layer of crust is even Bake for 20-22 minutes or until the edges are very lightly browned. Remove from the oven and set aside.
  • In a large bowl whisk together the eggs. Add the sugar and whisk until combined. Add the lemon juice and pure vanilla extract and whisk until combined. Add the gluten-free flour and whisk until completely combined.
  • Freezing Instructions: The lemon bars can be frozen for up to 3 months. Cut the cooled bars (without the powdered sugar topping) into squares, then place onto a baking sheet. Flash freeze for 1 hour. Wrap each bar in aluminum foil or plastic wrap and place them into a large freezer bag. Thaw the lemon bars in the refrigerator overnight. Dust with powdered sugar before serving.
