Based on a recipe from Lora Brody's & Millie Apter's cookbook, Bread Machine Baking. The introduction states: "Lemon pepper is a spice blend that is available in specialty food shops, especially those that sell Middle Eastern foods. High-gluten flour can be found in health food stores." This recipe is geared toward the Zojirushi machine; if you try this and have a DAK, Welbilt, Hitachi, Panasonic, National, Regal, Maxim, Sanyo, Small Welbilt, or Small Panasonic/National machine, just zmail me and I'll communicate somehow the recommendations for whichever of those machines you're using.

1 extra-large egg
1/2 cup cream-style cottage cheese
1/2 cup sour cream
2 lemons, zest of, grated
1 teaspoon salt

2 cups unbleached white flour
1/2 cup hi-gluten flour
2 1/2 teaspoons yeast
3 tablespoons water
1 tablespoon dry buttermilk

Steps:

  • Add all ingredients to the machine in the order recommended by its manufacturer.
  • Program for Basic White Bread, or a similar setting, and press start.

This quick bread says "spring" to me. It's a little sweet and peppy, with a bright lemony taste and is heavenly slathered with real butter. Delicious with seafood and spring's fresh-tasting vegetable dishes. It's one of my favorites from the Silver Palate cookbooks; the original recipe also includes chives, but I just didn't care for their oniony taste in this bread and so I've omitted them. If you're interested in trying it, the measurement is 1/4 cup snipped fresh chives.

1 cup butter, softened at room temperature
1/3 cup sugar
4 eggs, separated
1/3 cup fresh lemon juice
2 grated lemons, zest of (yellow part only)
3 cups flour
4 teaspoons baking powder
1/2 tablespoon black pepper
1 pinch salt
1 cup milk

Steps:

  • Preheat oven to 350 degrees F.
  • Cream together butter and sugar.
  • Add egg yolks one at a time, beating well after each one.
  • Stir in lemon juice and zest.
  • In another bowl, combine flour, baking powder, and black pepper.
  • Stir 1/3 of the mixture into butter mixture.
  • Add 1/3 cup of the milk and mix together.
  • Continue alternating milk and remaining flour.
  • Do not overmix.
  • In another bowl, whip egg whites with the pinch of salt until soft peaks form.
  • Fold egg whites into the batter, then pour batter into a greased 9x5x3 inch loaf pan and bake at 350 degrees F for 50 to 60 minutes or until toothpick inserted in the center comes out clean.
  • Remove from oven, allow to sit in pan for 5 minutes, then remove bread and cool on a rack.

I was looking for a lemon bread recipe and found several. After several revisions this is the best tasting and moist bread I came up with; it has variations of flavors.

1 ½ cups white sugar
1 cup applesauce
¾ cup vegetable oil
3 eggs
1 ½ teaspoons dried lemon peel (such as Penzey's)
1 teaspoon lemon extract
¾ cup milk
2 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¾ teaspoon salt
½ cup white sugar
1 tablespoon water, or as needed
½ teaspoon lemon extract

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a loaf pan.
  • Stir 1 1/2 cups sugar, applesauce, oil, and eggs together in a bowl; add lemon peel and 1 teaspoon lemon extract. Pour milk into applesauce mixture and stir.
  • Whisk flour, baking powder, and salt together in a bowl. Add flour mixture to applesauce mixture; stir until well-combined. Pour batter into prepared loaf pan.
  • Bake in the preheated oven until toothpick inserted in the center of the loaf comes out clean, about 75 minutes. Let bread rest in the pan for 10 minutes before removing to a wire rack to cool.
  • Whisk 1/2 cup sugar, water, and 1/2 teaspoon lemon extract together in a saucepan over medium heat until sugar is melted and has a thick glaze consistency, 1 to 2 minutes. Poke several holes in the top of the warm bread and brush glaze over loaf.

1 package white cake mix (regular size)
1 package (3.4 ounces) instant lemon pudding mix
1 cup warm water
4 large eggs, room temperature
1/2 cup canola oil
4 teaspoons poppy seeds
Optional: confectioners' sugar and lemon zest

Steps:

  • Preheat oven to 350°. In a large bowl, combine cake mix, pudding mix, water, eggs and oil; beat on low speed 30 seconds. Beat on medium 2 minutes. Fold in poppy seeds. , Pour into two greased 9x5-in. loaf pans. Bake until a toothpick inserted in center comes out clean, 35-40 minutes. Cool in pans 10 minutes before removing to a wire rack. Mix confectioner's sugar with water to reach drizzling consistency and use to garnish bread along with lemon zest, if desired.
