Honeydew melon is one of my favorite summer fruits so I made a trifle featuring it. It is so delicious.-P Marchesi, Rocky Point, Long Island, New York

6 cups cubed honeydew melon
6 cups sliced fresh strawberries
1/2 cup strawberry all-fruit spread
2 packages (8 ounces each) fat-free cream cheese, softened
1-1/2 cups confectioners' sugar
1 cup fat-free sour cream
2 cups frozen reduced-fat whipped topping, thawed
1 loaf-shaped angel food cake (10-1/2 ounces), cubed
1/3 cup grated semisweet chocolate

Steps:

  • In a large bowl, toss the honeydew and strawberries with fruit spread; set aside. In a bowl, beat cream cheese and sugar until smooth. Add sour cream; mix well. Fold in whipped topping and cake. Drain juice from fruit mixture. In a trifle dish or deep salad bowl, layer a third of the fruit, a third of the cake mixture and a third of the chocolate. Repeat layers twice. Serve immediately.

This is perfect summertime fare.It's a light refreshing dessert that makes a wonderful finale to a barbecue supper or potluck dinner.The only problem is there's never any leftovers!

Number Of Ingredients 10

3/4 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1 1/4 cups water
1 teaspoon lemon zest, grated
1/4 cup fresh lemon juice
2 teaspoons butter or 2 teaspoons margarine
0.5 (1 1/2 ounce) package whipped dessert topping mix (1 envelope)
8 cups cubed angel food cake (1 inch cubes)
1 (16 ounce) can apricots, well drained and sliced thinly

Steps:

  • Mix sugar, cornstarch and salt in saucepan.
  • Gradually stir in water.
  • Cook over medium heat, stirring constantly until mixture thickens and boils.
  • Boil and stir for 1 minute and remove from heat.
  • Stir in lemon peel, juice and butter or margarine.
  • Press waxed paper on surface of lemon mixture to prevent skin from forming.
  • Refrigerate for about 4 hours or until chilled.
  • Prepare whipped topping mix as directed on package.
  • Put aside 3/4 cup of whipped topping for garnish.
  • Fold remaining whipped topping into lemon mixture.
  • In a glass bowl layer 1/3 of the cake cubes, then 1/3 of the lemon mixture and 1/3 of the apricots.
  • Repeat twice more.
  • Decorate with remaining whipped topping.

LIGHT & LUSCIOUS TIRAMISU

Another one of our lighter fare favorites. We started with a recipe from Cooking Light and tweaked it to suit our tastes. It's extremely easy to make and much healthier than the average tiramisu. We served this at Christmas dinner for a very fussy crowd and it was a big hit! Preparation time does not include chilling time. Please note that the fat content posted for this recipe is for the entire tiramisu. The actual fat serving is actually about 2 grams per serving. WOW! To make it diabetic friendly just substitute sugar-free pudding. You could also make your own "Kahlua" by using Splenda. Enjoy!

1 (12 ounce) can fat-free evaporated milk, chilled
1 (1 1/2 ounce) package French vanilla instant pudding
1/2 teaspoon vanilla extract
4 ounces light cream cheese, room temperature (1/2 of a 8 oz block)
4 ounces fat-free whipped topping (1/2 of a 8 oz tub)
1/2 cup hot water
1 tablespoon instant coffee
1/2 cup Kahlua (coffee liqueur)
12 ladyfingers (1 3oz package)
3 tablespoons unsweetened cocoa, divided

Steps:

  • In a large bowl mix the evaporated milk, vanilla and pudding mix with a hand mixer on medium speed. Chill for 30 minutes or until firm.
  • Add the cream cheese and beat with a hand mixer on medium speed until well blended.
  • Gently fold in the whipped topping.
  • Add the instant coffee to the hot water and mix in the Kahlua.
  • Separate the ladyfingers and place 8 in the bottom of a trifle bowl or other large glass bowl, flat sides down. Drizzle with 1/3 cup Kahlua mixture. Spread 1/3 of the pudding mixture evenly over the ladyfingers and sprinkle with 1 tablespoon cocoa. (Note: I use a small strainer/sifter to help break up any chunks and to ensure the entire surface is evenly covered).
  • Repeat with 2 more layers, ending with the cocoa.
  • Cover and chill up to 8 hours (Note: we've eaten it after 4 hours and thought it was delicious however it was definitely tastier the next day.
