HEALTHIER STUFFED PEPPERS
This healthier stuffed peppers recipe uses an assortment of colored peppers, lean ground beef, brown rice, fresh onion and garlic, and natural tomato sauce. So colorful and so healthy!

- Preheat oven to 350 degrees F (175 degrees C).
- Bring brown rice and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
- Cook and stir beef, garlic, and onion in a skillet over medium heat until meat is evenly browned and onion is softened, about 5 minutes.
- Remove and discard the tops, seeds, and membranes of the green, red, and yellow bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward. Slice the bottoms off the peppers if necessary so that they stand upright.
- Mix the browned beef, cooked rice, 1 can tomato sauce, Worcestershire sauce, salt, and pepper in a bowl. Spoon an equal amount of the mixture into each hollowed pepper. Mix the remaining tomato sauce and Italian seasoning in a bowl, and pour over the stuffed peppers.
- Bake in the preheated oven, basting with sauce every 15 minutes, until the peppers are tender, about 1 hour. Sprinkle the peppers with grated Parmesan cheese after baking.

STUFFED BELL PEPPERS FROM COOKING LIGHT
This is our favorite recipe for stuffed peppers. I like to use red or yellow peppers. The kids don't eat the peppers, but they do love the filling. This recipe doesn't make quite enough, so I always double it. The leftovers reheat wonderfully. You can also make the filling and freeze it for a later date. When you pull it out of the freezer and thaw, you'll only have to prepare the peppers, stuff them and bake.

- Preheat oven to 450.
- Cook rice according to package directions. Set aside.
- While rice cooks, cut tops off peppers, discard seeds. Place peppers, cut sides down, in an 8 inch square baking dish and microwave on high for 2 minutes, or until peppers are crisp-tender. Do not overcook.
- In a large skillet, cook beef, onion, parsley, paprika, salt and allspice. Remove from heat.
- Ad rice, 1/2 cup pasta sauce, and cheese to beef mixture, stir to combine.
- While beef cooks, combine 1 1/2 cups pasta sauce and wine in a small saucepan; bring to a boil.
- Spoon about 3/4 cup beef mixture into each pepper. Place peppers in a 2 quart baking dish coated with cooking spray, add wine mixture to pan (save some sauce to drizzle over the tops of the peppers). Cover with foil.
- Bake at 450 for 20 minutes. Uncover; bake an additional 5 minutes or until ightly browned.

TACO-STUFFED PEPPERS RECIPE BY TASTY
If you're craving tacos but not all the carbs, you'll love these lightened-up stuffed peppers. The peppers are hollowed out and roasted in the oven, then stuffed with ground beef, black beans, brown rice, corn, and salsa. It's everything you love about tacos, all in an edible vegetable bowl. You can always swap ground beef for chicken or turkey, or stick to rice and keep this recipe totally vegetarian.

Steps:
- Cut off the top and remove the seeds from each pepper.
- Place in a baking dish and bake for 20 minutes in a preheated oven at 350˚F (175˚C).
- While the Peppers are roasting - heat oil in a large skillet over medium-high heat. Add ground beef and season with entire taco seasoning packet. Allow beef to brown on all sides, about 5-6 minutes.
- NOTE: If you made your own taco seasoning, you'll want to add 2 tablespoons. The ingredients above will make more than this recipe requires.
- Add diced onion - continuing to cook until softened, about 4-5 minutes.
- Reduce heat to Medium. Mix in the black beans, brown rice, corn, and salsa. Season to taste with salt and pepper.
- Add in 1 cup (100g) of cheese and stir until incorporated and the cheese has melted. Remove from heat.
- Remove peppers from oven and fill each with the taco mixture. Top with additional cheese.
- Return to the oven for 15 minutes until the cheese has melted.
- Top each pepper with a generous scoop of guacamole and sour cream. Top with additional cheese.

- Preheat oven to 350F. Slice a small wafer from the bottom of each pepper to help it stand upright without wobbling. Use a sharp knife to slice away the top of the bell peppers to create a cup. Cut away the seeds from the cap and stem of the pepper and reserve the cap to perch on top of the stuffed peppers. Arrange the hollowed peppers in a baking pan. Bake for 15 minutes uncovered.
- While the peppers are baking, place a large, heavy bottom skillet over medium-high heat. Pour 1 tablespoon of the olive oil in and swirl the pan to coat. Crumble the ground turkey over the pan and sprinkle in the salt and pepper. Cook and break up with a sturdy spoon or spatula until the meat is nicely browned and has given off its juices, about 8 to10 minutes. Transfer the cooked meat to a rimmed plate or bowl. Tent lightly with foil and set aside.
- Return the pan to the burner immediately. Add another tablespoon of olive oil to the pan. Reduce the heat under the pan to medium-low heat and stir in the grated onion and juices. Cook for 3 to 5 minutes, or until the onions have softened.
- Raise the heat to medium-high and stir in the garlic, oregano and thyme cooking until fragrant, about 30 seconds. Stirring constantly, whisk in the tomato paste and cook until the paste is bubbly, has darkened and smells strongly of tomato. Pour in the red wine and raise the heat to high, scraping and stirring until the mixture is smooth and somewhat reduced. Return the browned meat and any accumulated pan juices to the pan and toss until evenly distributed and hot through. Add the baby spinach to the pan and toss to combine with the turkey and sauces. Cook only until the spinach is wilted.
