When fresh cherries are in season, we preserve them to enjoy all year. This jam is sweet and can be also made as a light version with sugar-free pectin and Splenda®.

3 cups pitted, chopped fresh cherries
½ cup unsweetened apple juice
2 teaspoons lemon juice
2 (2 ounce) packages powdered fruit pectin
3 cups white sugar
4 half pint canning jars with lids and rings

Steps:

  • Place cherries, apple juice, lemon juice, and pectin into a large saucepan over medium heat; bring to a boil, and mix in the sugar. Cook the jam at a rolling boil for 2 minutes, stirring constantly. Remove from heat and skim off any foam.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the cherry jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 15 minutes, or the time as recommended by your county Extension agent.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

1 1/4 cups high-quality cherry preserves
1 teaspoon fresh lemon juice
1 stick salted butter, at room temperature, plus more for the pan
2/3 cup sugar
1 large egg, plus 1 egg yolk
1 1/2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup almond flour
Grated zest of 1 lemon
1 teaspoon ground cinnamon
Pinch of ground cloves

Steps:

  • Preheat the oven to 400 degrees F. Make the filling: Combine the cherry preserves and lemon juice in a bowl, stirring to break up any clumps.
  • Make the crust: Butter a 10-inch tart pan with a removable bottom. Cream the butter and sugar in a bowl with a mixer on medium speed. Add the whole egg, then the vanilla. Whisk the all-purpose flour, almond flour, lemon zest, cinnamon and cloves in a bowl. With the mixer on medium speed, gradually add the dry ingredients to the butter mixture. Reduce the mixer speed to low and mix in up to 1 tablespoon water until the dough just comes together. Wrap two-thirds of the dough in plastic wrap, then wrap the remaining one-third in plastic wrap. Refrigerate both for 30 minutes.
  • Put the larger piece of dough between 2 sheets of parchment paper and roll it out into an 11-inch round. Remove the top sheet of parchment paper and invert the dough into the prepared tart pan; peel off the other sheet of parchment paper and trim the excess dough. Spread the jam evenly on the crust. Roll out the remaining dough to about 1/4 inch thick and cut it into 1/2- to 1-inch-wide strips (10 to 14 strips). Arrange the strips in a lattice pattern on top of the filling. Beat the egg yolk with 1 tablespoon water and brush on the lattice and edge of the crust. Bake until the crust is golden and the filling is bubbly, about 30 minutes. Let cool completely.

1/4 ounce Velvet Falernum liqueur
1/4 ounce maraschino liqueur, such as Luxardo
1 maraschino cherry plus 1/4 ounce syrup, such as Luxardo

Steps:

  • Combine the bourbon, vermouth, bitters, Velvet Falernum, maraschino liqueur and maraschino syrup in a cocktail shaker filled with ice. Shake, and strain into a chilled martini glass. Garnish with a maraschino cherry.

1 package (1-3/4 ounces) powdered fruit pectin
1/2 teaspoon butter
4-3/4 cups sugar

Steps:

  • In a food processor, cover and process cherries in batches until finely chopped. Transfer to a Dutch oven; stir in pectin and butter. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. , Remove from heat; skim off foam. Ladle hot mixture into 6 hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 5 minutes. Remove jars and cool.

The Best Ever Cherry Hamentashen image

We eat hamentashen on the holiday Purim. They are triangle shaped cookies because Haman had a triangle shaped hat. My dad owns a bakery and is a baker my whole life. He makes these hamentashen every Purim. They are my favorite. When I was in college he always mailed me a box. Now I just make them myself. Hamentashen are traditionally filled with poppyseed filling or prune filling, but my Dad makes other flavors too. Cherry is my favorite, but you can also use apricot jam or use your imagination.

3/4 cup margarine, softened (not tub margarine)
3/4 cup sugar
1 large egg
1 teaspoon grated lemon zest (I often just use a squirt of lemon juice)
1 teaspoon vanilla
1/4 teaspoon salt
1 drop water
1 (21 ounce) can cherry pie filling
sugar, for sprinkling
2 1/4 cups flour

Steps:

  • Cream margarine in mixer bowl.
  • Add sugar and beat till fluffy.
  • Beat in egg, lemon peel, and vanilla.
  • Add in flour and salt.
  • Beat in water a few drops at a time until dough starts to come away from sides of bowl.
  • Place dough in a 2-quart size bag and form into a flat disk.
  • Refrigerate for a minimum of 2-3 hours and maximum of 2-3 days.
  • Roll out dough flat about an 1/8-inch thickness on a lightly floured surface.
  • Using a round cookie cutter or the top of a cup, cut out circles.
  • Spoon 2 cherries and a little bit of filling onto the dough circles.
  • To fold into the shape of a hamentashen (a triangle) use both thumbs and the two first fingers on each hand.
  • Slide two fingers from left hand under left side and two fingers from right hand under right side and two thumbs under the bottom of circle.
  • Bring all fingers (with dough) together to form a triangle and try to pinch close.
  • Repeat this process with remaining circles and dough.
  • Place on a cookie sheet lined with baking paper.
  • Sprinkle a small amount of sugar on top of each one.
  • Bake at 350°F for 12-15 minutes or just starting to turn pale golden.

2kg cherries , pitted, ½ roughly chopped, ½ halved
1.2kg jam or preserving sugar (with added pectin)
2 lemons , juiced

Steps:

  • Put two saucers in the freezer for testing the jam later on. Tip the cherries, sugar and lemon juice into a large, heavy-based saucepan and simmer uncovered over a medium-high heat for 35-50 mins, stirring frequently until thick and glossy.
  • After 35 mins, spoon a little of the jam onto one of the chilled saucers. Leave for 1 min, press a fingertip into the jam. If it starts the wrinkle, it's ready. If it slides away, continue to boil the jam for 10 mins, then test again on the other saucer.
  • Spoon the jam into sterilised jars and seal. Will keep for six months unopened (when stored in a dark, cool place), or opened in the fridge for three months.
