My friend, Gloria gave me this recipe...she makes these cookies every year for her Christmas family get-togethers. I wanted to save this recipe to my Recipe Box. Nutmeg can be used in place of mace.

3 cups all-purpose flour
1 cup white sugar
1 ½ teaspoons baking powder
½ teaspoon salt
½ teaspoon ground mace
1 cup butter, softened
1 egg, beaten
1 teaspoon vanilla extract
3 tablespoons heavy cream
1 cup confectioners' sugar
½ teaspoon vanilla extract
1 ½ tablespoons heavy cream
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, stir together the flour, sugar, baking powder, salt and mace. Cut in the butter using a pastry blender or rub between your fingers. When butter pieces are no larger than pea size, stir in the egg, vanilla and heavy cream. Blend thoroughly. On a lightly floured surface, roll the dough out to 1/8 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets.
  • Bake for 5 to 8 minutes in the preheated oven, until the edges begin to brown. Remove from baking sheets to cool on wire racks. Cool completely before frosting.
  • To make the frosting: In a medium bowl, beat the confectioners' sugar, 1/2 teaspoon vanilla, 1 1/2 tablespoons of cream and salt until smooth and creamy. Spread on top of cooled cookies. Let the frosting dry before storing or serving.

1 cup margarine
1 cup shortening
1 cup white sugar
1 cup confectioners' sugar
2 eggs
1 teaspoon lemon juice
4 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
3 cups confectioners' sugar
¼ cup margarine, softened
1 ½ teaspoons lemon juice
3 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the 1 cup margarine, shortening, white sugar and 1 cup confectioners' sugar until smooth. Beat in the eggs one at a time, then stir in 1 teaspoon lemon juice. Combine the flour, baking soda, cream of tartar and salt; gradually stir into the creamed mixture. On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
  • To make frosting, combine the 3 cups confectioners' sugar, 1/4 cup margarine and 1 1/2 teaspoons lemon juice in a medium bowl. Mix until smooth, adding milk 1 tablespoon at a time until frosting has reached its desired consistency.

These are the sugar from the Lion House in Salt Lake City! They are the best cookies I have ever made for decorating. They are extremely soft after you make the icing. I make the whole batch and freeze some.

1 1/2 cups sugar
2/3 cup butter
2 eggs, beaten
2 tablespoons milk
1 teaspoon vanilla
3 1/4 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup butter
3/4 cup shortening
4 2/3 cups powdered sugar
1 1/2 teaspoons lemon juice
1 1/2 teaspoons vanilla
1/3 cup water

Steps:

  • Cream butter and sugar.
  • Add eggs, milk and vanilla.
  • Sift flour, baking powder, and salt together. Add to creamed mixture. Combine thoroughly.
  • With hands shape dough into a ball.
  • Wrap with plastic wrap and refrigerate 2-3 hours or overnight.
  • Grease cookie sheets lightly.
  • On lightly floured board or counter, roll 1/2 to 1/3 of dough at a time, keeping rest in fridge.
  • For soft cookies, roll 1/8 to 1/4 inch thick.
  • Cut with floured cookie cutter. Place 1/2 inch apart on cookie sheet.
  • Bake at 400°F for 8 minutes or until a VERY light brown.
  • For Frosting:.
  • Combine butter, shortening and powdered sugar and beat until very creamy.
  • Add lemon juice and vanilla.
  • Mix until well blended.
  • Add water.
  • Mix until very light.
  • Separate into bowls and add food coloring.
  • Decorate as desired.
  • Enjoy!

¾ cup butter, softened
1 cup vegetable oil
1 cup confectioners' sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ teaspoons lemon extract
4 cups all-purpose flour
1 teaspoon cream of tartar
1 teaspoon baking soda
1 teaspoon salt
½ cup white sugar for decoration

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Sift together the flour, cream of tartar, baking soda and salt; set aside.
  • In a large bowl, cream together the butter, oil, confectioners' sugar and white sugar until well blended. Stir in the eggs, vanilla and lemon extracts. Gradually mix in the dry ingredients until well blended. Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the cookie sheet. Flatten cookies to 1/8 inch thickness using the bottom of a glass dipped in sugar. Colored sugar may be used if you do not plan to frost cookies later.
  • Bake for 9 to 12 minutes in the preheated oven, or until the edges are golden brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1/2 cup shortening
1 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour

Steps:

  • Preheat oven to 350°. Cream butter, shortening and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In another bowl, whisk flour, baking powder and baking soda; gradually beat into creamed mixture., Shape into 1-in. balls. Roll in additional sugar. Place on greased baking sheets; flatten with a glass. Bake until set, 10-12 minutes. Remove to wire racks to cool.

2 egg yolks

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets lightly.
  • Combine 3 tablespoons white sugar and 1 tablespoon lemon juice together in a small bowl.
