4 bone-in chicken thighs (1-1/2 pounds), skin removed
2 cups frozen lima beans
2 cups frozen corn
1 large green pepper, chopped
1 large onion, chopped
2 cans (14 ounces each) fire-roasted diced tomatoes, undrained
1/4 cup tomato paste
3 tablespoons Worcestershire sauce
3 garlic cloves, minced
1-1/2 teaspoons ground cumin
1-1/2 teaspoons dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
Chopped fresh cilantro or parsley

Steps:

  • Place the first five ingredients in a 5-qt. slow cooker. In a large bowl, combine tomatoes, tomato paste, Worcestershire sauce, garlic and dry seasonings; pour over top., Cook, covered, on low until chicken is tender, 6-8 hours. Remove chicken from slow cooker. When cool enough to handle, remove meat from bones; discard bones. Shred meat with two forks; return to slow cooker and heat through. If desired, sprinkle with cilantro.

2 medium onions, diced
1 green bell pepper, ribs and seeds removed, diced
1 tablespoon chopped fresh thyme (or 1 teaspoon dried)
Coarse salt and ground pepper
2 tablespoons tomato paste
1 1/2 pounds boneless, skinless chicken thighs
6 plum tomatoes, diced
1/4 cup Worcestershire sauce
1 package (10 ounces) frozen corn kernels, thawed
1 package (10 ounces) frozen lima beans, thawed

Steps:

  • Heat oil in a Dutch oven (or other 5-quart pot) over medium-high heat. Add onions, bell pepper, thyme, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Cook, stirring occasionally, until onions begin to brown, 4 to 5 minutes.
  • Stir in tomato paste; add chicken, tomatoes, Worcestershire sauce, and 1 1/2 cups water. Bring to a boil; reduce to a simmer. Cover, and cook until chicken is opaque throughout, about 15 minutes.
  • Remove chicken from pot; stir in corn and lima beans, and simmer until heated through, about 5 minutes. Meanwhile, shred chicken meat with your fingers or a fork. Return chicken to pot, and stir to combine.

2 tablespoons extra-virgin olive oil, plus more as needed
1 large onion, diced (2 cups)
4 cloves garlic, thinly sliced
8 ounces shiitake mushrooms, trimmed and thinly sliced
8 ounces portobello mushrooms, trimmed and cut into 1-inch pieces
2 pounds butternut squash, peeled, seeded, cut into 1-inch pieces
1 bay leaf
8 cups low-sodium chicken stock
Freshly ground black pepper
1/2 bunch kale (8 oz.), stems removed and leaves thinly sliced (6 cups)
Kosher salt

Steps:

  • Soak beans overnight in water. Drain.
  • Heat oil in a large pot over medium flame. Add onions and garlic. Cook until tender, 6 to 8 minutes; transfer to a bowl.
  • Turn heat to medium high. Working in batches, add mushrooms; cook until golden brown. Transfer to bowl and add more oil to cook remaining mushrooms. Return mushrooms and onions to pot and add squash, beans, bay leaf, and stock. Season with pepper. Bring to a boil, reduce to a simmer, and cover partially. Cook until beans are just tender, about 50 to 60 minutes. Stir in kale and cook until tender, about 5 minutes more. Season with salt.

4 slices reduced-sodium bacon
1 ¾ pounds boneless, skinless chicken thighs
salt and ground black pepper to taste
1 medium onion, chopped
1 medium green bell pepper, chopped
2 stalks celery, chopped
3 cloves garlic, minced
1 pound frozen lima beans
1 (14.5 ounce) can crushed fire-roasted tomatoes
1 cup chicken broth
2 teaspoons Creole seasoning, or to taste

Steps:

  • Brown bacon in a 4-quart chef's pan or saute pan over medium heat, 4 to 6 minutes. Drain on paper towels.
  • Season chicken thighs with salt and pepper and add to the bacon drippings in the pan. Brown over medium heat, about 4 minutes per side. Remove from the pan and set aside.
  • Add onion, bell pepper, celery, and garlic to the same pan and cook in the drippings over medium heat, stirring occasionally, until tender, 4 to 5 minutes.
  • Meanwhile, cut browned chicken thighs into bite-sized pieces and chop the browned bacon. Add to the vegetables once tender. Stir in frozen baby lima beans, crushed tomatoes, and chicken broth. Season with Creole seasoning and adjust salt and pepper, if necessary.
  • Press lima beans down into the cooking broth so they cook evenly. 1 cup dried lima beans water for soaking
4 cups water for cooking
3 potatoes, medium
2 carrots, large
1 onion diced
2 tablespoons olive oil
1/4 teaspoon fennel seed
1/2 teaspoon thyme
1/2 teaspoon marjoram
2 garlic cloves finely chopped
2 tablespoons water
1/2 cup white wine dry
4 ounces mushrooms thinly sliced
1 fennel bulb, diced
1 bay leaf
1 tablespoon tamari
1 tablespoon lemon juice

Steps:

  • Pick over and wash lima beans, and soak them in water to cover at least 6 hours or overnight. Drain off the soaking water and place the limas in a large stewpot with fresh water. Bring to a boil, then lower the heat and simmer gently for 1 hour. Scrub the potatoes and carrots. Cut the potatoes in 1/2-inch dice. Cut the carrots in half lengthwise, then crosswise into 1/4-inch slices. Add the potatoes and carrots to the limas. While they are cooking, saute the onion in 1 tablespoon of oil until golden brown. Crush the fennel seed lightly in a mortar and add it along with the thyme, marjoram, garlic, and 2 tablespoons of water to the onion. Cook over low heat for 3 minutes to blend the flavors. Add the wine and simmer until the liquid is reduced a little. Scrape the onion mixture into the bean mixture and return the skillet to the burner. Saute the mushrooms in the remaining tablespoon oil until they turn golden around the edges. Add the mushrooms to the stew, adding more water if necessary to keep the stew from sticking. Add the diced fennel bulb, bay leaf, and tamari, and simmer about 10 minutes or until the fennel bulb is just tender. Add the lemon and serve immediately.
