A friend shared this recipe with me many years ago. I love the tart and sweet combination. It's so cool and refreshing on summer days.-Peggy Burdick, Burlington, Michigan

Steps:
- In the top of a double boiler, combine the egg and sugar. Cut the butter into tablespoons; add to double boiler. Add lime juice and zest; cook and stir over boiling water for 8 to 10 minutes or until thick. Remove from the heat; add food coloring. Cool. Fold in the whipped cream. Chill for at least 1 hour.

- In a small mixing bowl, combine all of the ingredients and whisk until well blended and creamy.
- Use at once or cover and refrigerate for up to 2 days.

Steps:
- Whisk sugar and cornstarch in small saucepan to blend. Add 1 cup water and stir over medium heat until mixture boils and thickens. Remove from heat. Add butter and stir until melted. Whisk in lemon juice and lime juice. Cool sauce to room temperature. Stir in lemon and lime slices and vanilla extract. Add food coloring, if desired.

COOL AND CREAMY KEY LIME DESSERT
A nutty crust complements the cool and creamy citrus filling in this marvelous, make-ahead dessert.

- Heat oven to 350°F. Place flour in medium bowl. Cut in butter, using pastry blender (or pulling 2 table knives through flour in opposite directions), until evenly mixed. Stir in walnuts and 1 teaspoon lime peel. Press evenly in bottom of ungreased 9-inch square pan.
- Bake about 15 minutes or until light brown. Cool completely, about 30 minutes.
- In medium bowl, mix condensed milk, lime juice and 2 teaspoons lime peel; set aside. In chilled large bowl, beat whipping cream and food color with electric mixer on high speed until stiff.
- Fold lime mixture into whipped cream just until blended. Pour over crust. Cover; refrigerate at least 2 hours until chilled but no longer than 48 hours. Store covered in refrigerator.

"This make-ahead recipe was given to me by an aunt many years ago," writes Joyce Key. "Her recipe called for lemon gelatin, but we like this dessert with more of a bite to it, so we use lime instead. The light fluffy squares are especially great in summer," assures the Snellville, Georgia cook.

- Combine the first three ingredients; set aside 2 tablespoons for topping. Press remaining crumbs onto the bottom of an ungreased 13-in. x 9-in. dish; set aside. In a small bowl, dissolve gelatin in boiling water; cool. , In a large bowl, beat cream cheese and sugar until smooth. Beat in vanilla. Slowly add gelatin until combined. Fold in whipped topping. Spoon over crust; sprinkle with reserved crumbs. Cover and refrigerate for 3 hours or until set.

- In a nonreactive medium saucepan, whisk the lime juice with the eggs, egg yolk and lime sugar until well blended. Add the butter and whisk over moderate heat until small bubbles appear around the sides. Immediately remove from the heat and strain the lime cream through a fine sieve into a bowl.
