1 (8 ounce) container frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple with juice
1 (16 ounce) container sour cream
1 (16 ounce) package miniature marshmallows
1 cup chopped pecans

Steps:

  • In a large bowl, mix together gelatin, whipped topping, pineapple with juice, sour cream, marshmallows, and pecans. Cover and chill in refrigerator for at least 1 hour. Serve cold.

2 (15 ounce) cans pear halves
1 (3 ounce) package lime flavored Jell-O® mix
1 (8 ounce) package cream cheese, softened
2 tablespoons milk
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • In a small saucepan, heat 1 cup reserved pear juice to boiling. Pour over lime gelatin in a small bowl; stir until dissolved. Set aside.
  • In a large bowl, beat cream cheese with milk until smooth. Blend in gelatin mixture. Chill in the refrigerator until partially thickened, about 20 to 30 minutes.
  • In a small bowl, mash pears until smooth. Fold pears and whipped topping into gelatin mixture. Pour into a mold. Chill until set, about 2 to 3 hours.
  • Dip mold in warm water for approximately 5 seconds. Invert onto a serving plate

1 can (8 ounces) crushed pineapple
1 package (3 ounces) lime gelatin
3 tablespoons water
2 packages (3 ounces each) cream cheese, softened
1 cup chopped walnuts
1 cup miniature marshmallows
1 cup heavy whipping cream, whipped

Steps:

  • Drain pineapple, reserving juice; set the pineapple aside. In a saucepan, combine gelatin, water and reserved juice. Cook and stir over low heat until gelatin is dissolved. Refrigerate until syrupy, about 30 minutes., In a small bowl, beat cream cheese until fluffy. Stir in gelatin mixture, walnuts, marshmallows and reserved pineapple. Fold in the whipped cream. , Transfer to a 1-qt. serving bowl. Cover and refrigerate for 2 hours or until set.

1 pound white sugar
½ pint water
4 tablespoons distilled white vinegar
3 tablespoons light corn syrup
½ teaspoon baking soda
12 ounces semi-sweet chocolate chips
2 tablespoons shortening
1 (1 ounce) square unsweetened chocolate

Steps:

  • Butter or oil an 8-inch square baking pan; set aside.
  • Put sugar, water, vinegar, and syrup in a heavy 4-quart saucepan (cast iron if you have it). Gently heat mixture, stirring with a wooden spoon, until sugar has dissolved and syrup has melted. Bring to a boil, cover, and boil for 3 minutes. Remove the lid and boil until temperature reaches 285 degrees F (140 degrees C) on a candy thermometer. Remove from heat and stir in baking soda, mixing well to allow bubbles to subside a little.
  • Pour hot mixture into the prepared pan and leave until just beginning to set. Mark into squares with a lightly oiled knife. Leave to set completely. Cut or break into pieces.
  • Combine chocolate chips, shortening, and baking chocolate in a 2-quart glass bowl. Microwave on high until melted, about 2 minutes. Stir with a wooden spoon. Dip candy pieces into chocolate, covering completely. Let cool on waxed paper.
  • Wrap candy individually in waxed paper, twisting the ends together. Store in an airtight container.

1 tablespoon butter
1 lb white fish fillet (fresh or frozen)
1/2 cup water, hot
4 large eggs, hard cooked
2 dill pickles
1 tablespoon capers
2 tablespoons mayonnaise
2 tablespoons sour cream
2 teaspoons lemon juice
1 teaspoon dijon-style mustard
1/2 teaspoon salt
1/4 teaspoon white pepper
1 large egg, hard Cooked
4 beets, cooked and sliced

Steps:

  • Melt butter in a frypan.
  • Place fish in frypan and pour hot water over fish.
  • Bring to a simmer, cover, lower heat and cook gently for 10 minutes.
  • Meanwhile slice the 4 hard cooked eggs and the pickles.
  • Drain fish, cool and cut into cubes.
  • Prepare salad sauce by blending mayonnaise, sour cream, lemon juice, mustard, salt, and pepper.
  • In a separate bowl gently mix fish, egg and pickle slices and capers.
  • Arrange fish mixture in individual dishes and spoon salad sauce over tops.
  • Chill for 30 minutes.
  • To garnish, cut remaining egg into eight pieces and chop beet slices.
  • Arrange garnish on each serving. Serve immediately.
