This Chili Lime Vinaigrette Recipe can be used as a marinade, sauce, or salad dressing! Incredibly easy to make and so versatile!

1/2 cup extra-virgin olive oil
1/2 cup lime juice
1 tablespoon honey
4 cloves garlic (pressed using a garlic press)
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 - 1 teaspoon salt
1/4 teaspoon cayenne

Steps:

  • Place olive oil, lime juice, honey, garlic, chili powder, cumin, paprika, salt, and cayenne into a mason jar, blender, or food processor.
  • Seal and shake or blend until well combined.
  • Taste and re-season if necessary.
  • Use immediately.
  • Store leftovers in a sealed airtight container in the fridge for up to a week. Let come to room temperature before serving.

2 teaspoons olive oil
1 teaspoon honey*

Steps:

  • Add all ingredients to a jar with a tight-fitting lid. Shake shake shake until completely emulsified (that means mixed together really well).
  • Serve with salad greens!

1/3 cup avocado oil (or your favorite neutral flavored oil)
1 tsp honey
1/4 tsp salt
1/4 tsp dried oregano
1/8 tsp cracked black pepper
1 clove of garlic, pressed in a garlic press or finely minced
4 Tbs lime juice (approx 3 limes) *fresh preferred
2 Tbs apple cider vinegar
2 cups Instant Pot Pork Carnitas prepared and shredded
6 cups romaine lettuce, chopped
1 cup canned black beans, drained and rinsed
1 cup diced tomatoes
1 cup frozen corn, defrosted
1 avocado, peeled, pit removed and diced
1 lime, quartered
1/2 cup fresh cilantro

Steps:

  • Combine the 1/3 cup oil, 1 tsp honey, 1/4 tsp salt 1/4 tsp dried oregano, 1/8 tsp cracked black pepper, 1 clove garlic, 4 Tbs lime juice and 2 Tbs apple cider vinegar in a salad dressing bottle or glass jar and whisk until fully combined and set aside. The ingredients will settle, so you'll need to stir or shake before serving.
  • This recipe makes four servings, so portion out equal amounts of the lettuce, beans, tomatoes, corn, avocado and pork onto four plates or bowls and garnish with lime, cilantro and the prepared dressing. Use as much or little of the dressing as you like based on your preference.

¼ cup light cooking oil (safflower, grape seed, canola)
salt & pepper - to taste

Steps:

  • Add honey, lime juice, grainy mustard, cumin, salt and pepper to a deep vessel, medium bowl or blender.
  • Gradually add oil, in a thin, steady stream as you whisk, blend with your immersion blender or through the hole on the lid of the blender as you blend at medium high speed. Slowly drizzle oil until it's fully incorporated and your vinaigrette is smooth and opaque.
  • Remove from measuring cup, bowl or blender and store in a jar with a tight fitting lid. Refrigerate until needed.

1 Tbsp Olive Oil
2 Tsp Honey
1 Tsp Finely Chopped Fresh Mint
3 Large Firm but Ripe Mangos (Peeled, Pitted, and Cut into Large Spears)
1 Large Peach (Pitted and Cut into 8 Wedges)
2 Plums (Pitted and Quartered)
1 Tbsp Fresh Lime Juice
½ Tsp Cinnamon
Mascarpone Cheese

Steps:

  • Whisk together vinaigrette ingredients in a small bowl; cover and refrigerate until ready to serve.
  • Whisk together honey, lime juice and cinnamon.
  • Grill all fruit over medium heat for a few minutes on each side or until grill marks appear basting with honey mixture several times.
