Steps:
- Place olive oil, lime juice, honey, garlic, chili powder, cumin, paprika, salt, and cayenne into a mason jar, blender, or food processor.
- Seal and shake or blend until well combined.
- Taste and re-season if necessary.
- Use immediately.
- Store leftovers in a sealed airtight container in the fridge for up to a week. Let come to room temperature before serving.

- Combine the 1/3 cup oil, 1 tsp honey, 1/4 tsp salt 1/4 tsp dried oregano, 1/8 tsp cracked black pepper, 1 clove garlic, 4 Tbs lime juice and 2 Tbs apple cider vinegar in a salad dressing bottle or glass jar and whisk until fully combined and set aside. The ingredients will settle, so you'll need to stir or shake before serving.
- This recipe makes four servings, so portion out equal amounts of the lettuce, beans, tomatoes, corn, avocado and pork onto four plates or bowls and garnish with lime, cilantro and the prepared dressing. Use as much or little of the dressing as you like based on your preference.

- Gradually add oil, in a thin, steady stream as you whisk, blend with your immersion blender or through the hole on the lid of the blender as you blend at medium high speed. Slowly drizzle oil until it's fully incorporated and your vinaigrette is smooth and opaque.

HONEY GRILLED FRUIT WITH LIME-MINT VINAIGRETTE

- Whisk together vinaigrette ingredients in a small bowl; cover and refrigerate until ready to serve.
- Whisk together honey, lime juice and cinnamon.
