GLUTEN-FREE LIME VANILLA FREEZE



Gluten-Free Lime Vanilla Freeze image

This is a great make-ahead dessert that can be made with your favorite flavor sherbet.

1 box Betty Crocker™ Gluten Free yellow cake mix
1/2 cup finely chopped pecans
3/4 cup butter, softened
1 quart (4 cups) vanilla ice cream, softened slightly
1 quart (4 cups) lime sherbet, softened slightly
1 cup Cool Whip frozen whipped topping, thawed
1/4 cup chopped pecans

Steps:

  • Heat oven to 350°F. Line 13x9-inch pan with foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan. In medium bowl, stir together cake mix and 1/2 cup pecans. With pastry blender or fork, cut in butter until mixture is crumbly. Lightly press in bottom of foil-lined pan. Bake 15 to 20 minutes or until set and just beginning to brown. Cool completely, about 30 minutes.
  • In large bowl, fold sherbet into ice cream just until partially blended for marbled design. Spoon and spread over cooled crust. Cover; freeze until firm, at least 4 hours.
  • Using foil handles, remove dessert from pan to cutting board 10 minutes before serving; peel back foil. Cut into 5 rows by 3 rows. Top each serving with whipped topping and sprinkle with pecans.

1 1/2 cups soymilk
1/2 cup frozen limeade concentrate (from 12-oz can), thawed
3 tablespoons honey
Lime slices, if desired
Fresh blueberries, if desired

Steps:

  • In large bowl, mix soymilk, limeade concentrate and honey with wire whisk until smooth. Pour into 8-inch square glass baking dish.
  • Freeze uncovered 30 minutes. When ice crystals begin to form at edges of dish, stir mixture with fork. Freeze about 1 hour 30 minutes longer, stirring every 30 minutes, until firm.
  • To serve, spoon into individual dessert bowls. Garnish with lime slices and blueberries.

1 can (6 oz.) frozen limeade concentrate, thawed
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
2 tsp. grated lime zest

Steps:

  • Line 9-inch square pan with foil, with ends of foil extending over sides of pan. Mix crushed cookies and butter; press firmly onto bottom of prepared pan.
  • Beat cream cheese in large bowl with electric mixer on medium speed until creamy. Gradually add limeade concentrate, beating until well blended after each addition. Add 2-1/2 cups of the whipped topping; stir with wire whisk until well blended. Spoon evenly over crust.
  • Freeze 3 hours or until firm. Remove from freezer 15 min. before serving. Lift dessert from pan, using foil handles before cutting into squares to serve. Top each serving with about 1-1/2 tsp. of the remaining whipped topping. Sprinkle evenly with lime zest. Store leftover dessert in freezer.

1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened
1/2 cup sugar, divided
1 pkg. (3 oz.) JELL-O Lime Flavor Gelatin
1 Tbsp. zest and 1/4 cup juice from 3 limes
1 tub (8 oz.) COOL WHIP LITE Whipped Topping, thawed
1 Tbsp. chopped fresh mint
1-1/2 cups finely crushed pretzels
6 Tbsp. butter or margarine, melted

Steps:

  • Line 9-inch round pan with large sheet of plastic wrap, with ends of wrap extending over side. Beat Neufchatel and 1/4 cup sugar with mixer until blended. Add dry gelatin mix, lime zest and juice; mix well.
  • Whisk in COOL WHIP and mint; pour into prepared pan. Combine pretzel crumbs, butter and remaining sugar; sprinkle over dessert. Use ends of plastic wrap to gently press crumb mixture into top of dessert.
  • Freeze 3 hours or until firm. Invert dessert onto plate; remove pan and plastic wrap. Let dessert stand at room temperature 15 min. to soften slightly before cutting to serve.

Steps:

  • Line 9 inch square baking pan with foil, with foil extending over the sides.
  • Mix crushed cookies with butter. Press firmly onto the bottom of the lined pan.
  • Beat cream cheese with a mixer until creamy.
  • Gradually add limeade, beating until well blended after each addition.

1 pint raspberry sorbet, softened
1 tablespoon finely grated lime zest, plus more for garnish
1/4 cup fresh lime juice (from 2 or 3 limes)
1 cup vanilla ice cream, softened

Steps:

  • Put 5 1/2 cups of raspberries, the sorbet, lime zest, and lime juice into a blender. Use a spatula to push down the ingredients. Pulse a few times, then puree until very smooth. Add ice cream and puree, stopping and stirring with spatula as needed. Stir in 1 cup raspberries.
  • Pour mixture into glasses. Garnish with remaining 1/2 cup raspberries and lime zest. Serve immediately.
