1 pinch red pepper

Steps:

  • Whisk together juice, vinegar, soy sauce, mirin and brown sugar. Let sit at least 1 hour to marry flavors. Store covered and refrigerated for up to 3 days.

  • Shell and devein shrimp and place in a shallow bowl. Pour 1/3 cup of Lime Ponzu over shrimp, stir to combine, and set aside. Combine remaining ingredients to make corn salsa. Mix well and refrigerate for at least 20 minutes.
  • Heat vegetable oil in a large skillet. Drain the shrimp and add to the pan when the oil is hot, searing on both sides until the shrimp turn pink and are done.

2 teaspoons olive oil
1/2 teaspoon garlic powder
6 -8 corn tortillas
1 large red onion, chopped
1 cup frozen corn kernels, thawed
1/2 cucumber, peeled,seeded,chopped
1/2 bunch cilantro, finely chopped
1/2 cup red bell pepper, chopped
2 jalapeno chiles, finely chopped
1/2 teaspoon black pepper
1/4 teaspoon salt

Steps:

  • Marinate shrimp in lime juice, olive oil, and garlic powder for 30 minutes; drain.
  • Mix salsa ingredients together.
  • Wrap 1/4 cup marinated shrimp in each tortilla.
  • Top with salsa.

1 lb large shrimp, cleaned and shelled with tail left on
2 tablespoons light soy sauce
2 tablespoons lime juice
2 tablespoons orange juice
2 tablespoons brown sugar
2 tablespoons vegetable oil
1/2 teaspoon Asian chili sauce, such as sriracha
1 tablespoon minced fresh gingerroot
1 clove garlic, minced
1/4 cup chopped fresh basil

Steps:

  • Bring 4 quarts water to a boil in a large saucepan; add shrimp, cook 1 minute or until shrimps are just cooked through.
  • Drain well and chill in a large bowl filled with ice water.
  • When chilled, drain and pat dry.
  • Refrigerate until ready to serve.
  • For sauce, combine remaining ingredients, refrigerate until ready to serve.
  • Just before serving, toss shrimp with sauce and arrange on a serving platter.
