We have three lime trees so I am constantly looking for recipes involving limes, I came across this one for lime marmalade and everyone just loves it!!

2 1/4 lbs fresh limes
7 cups water
3 1/2 lbs sugar, approx

Steps:

  • Wash limes thoroughly, dry; using sharp knife, slice as finely as possible; retain any juice from limes; remove seeds (if there are any, as you slice).
  • Place sliced limes, any reserved juice and water in china, glass or plastic basin, cover, stand overnight.
  • Next day, pour lime mixture into large boiler, bring to boil, reduce heat, simmer covered for 30-45 mins or until rind is tender. It is important to cook fruit gently at this stage.
  • Remove lime mixture from heat; using measuring jug, measure mixture into large basin, return lime mixture to large boiler. Allow 1 cup sugar for each 1 cup of measured lime mixture.
  • Place sugar in large baking dish, place in slow oven for 10 minutes, stir several times. (Heated sugar will dissolve in the jam more quickly, resulting in clearer jam). Bring lime mixture to boil, add sugar all at once, (its better to add the sugar off the heat).
  • Stir until sugar is dissolved completely - do not allow to boil again until this happens; do not stir after marmalade boils. (It is important, once sugar is added that there is not too much mixture in the boiler; it should not be more than 5cm (2in) deep; this will allow maximum evaporation of liquid, resulting in a marmalade which will jell as quickly as possible.).
  • Bring marmalade to the boil, boil rapidly, uncovered. Place a saucer in the freezer for 10 minutes, before testing marmalade. After marmalade has been boiling rapidly for 12 minutes, remove from heat; allow bubbles to subside, drop a teaspoonful of marmalade on to a cold saucer, return to freezer for a few minutes to cool. If marmalade is not jelled enough, return to heat, cook further 3 minutes, test again in the same way. Marmalade should be jelled within 20 minutes; stand 5 minutes to allow fruit to settle. Pour into hot sterilized jars, Store in cool dark place.
  • Makes about 2 litres (8 cups).

Looking for a way to use up all the Zucchini . This is a very easy recipe and really tasty. My husband even liked and he usually don,t want to taste anything with Zucchini in it.

5 cups shredded zucchini (unpeeled)
2 oranges, rind and all finely chopped
2 tablespoons lemon juice
5 cups sugar

Steps:

  • Mix ingredients and bring to a boil.
  • Boil rapidly stirring for 20 minutes.
  • Add 1/2 bottle certo and boil again for 1 minute.
  • Skim if necessary and pour into jars.

HARRY'S ZUCCHINI GINGER MARMALADE



Harry's Zucchini Ginger Marmalade image

This is my brother Harry's recipe (except for the addition of the ginger) and it is great flavored marmalade for toast or glaze a chicken with it. Economical and very tasty.If you don't like ginger leave it out this how his original recipe was. Harry's a good cook so trust me this is a great spread.

8 cups zucchini, peeled and shredded (or put through coarse disk on a Meat grinder)
8 cups sugar
3 lemons
3 oranges
1 lime
1 large apprx 1 cup gingerroot, peeled, chopped into 1/4'"pieces ( use more or less ginger)
2 envelopes gelatin

Steps:

  • Squeeze the juice from the fruit then shred the peels, remove the pith from peel before shredding Put all the ingredients, including juice into a large pot, sprinkle in the gelatin
  • Bring to a boil and simmer for at least an hour.
  • Ladle into sterilized pint jars.
  • Seal, if not sealed water bath for 10 minutes.

CHILI ZUCCHINI MARMALADE



Chili Zucchini Marmalade image

This unique marmalade is spicy good. Using an overabundance of home grown zucchini and hot peppers. Orange and chili do complement each other and work great in this. Serve on cream cheese with crackers or glaze chicken, salmon, or ribs at the end of cooking with the marmalade. using a food processor to shred the zucchini and apples is an easy way to go.

3 oranges
2 lemons
1 inch piece gingerroot, sliced
4 cups shredded zucchini (peeled and seeds removed)
2 granny smith apples, peeled, cord and diced
5 cups sugar
2 ghost fresh chili peppers, minced (use gloves HOT!)
2 -4 calendula flowers, optional for color (optional) or 2 -4 drops yellow food coloring (optional)

Steps:

  • Remove the orange zest with a vegetable peeler and slice fine, place into a heavy bottom stainless steel large pot.
  • Remove white pith from oranges and peel and pith from lemons. Place in cheese cloth along with ginger root.Tie cloth and place in the pot.
  • Over the pot slice the segments of the oranges and lemons dropping into the pot and discard the membrane and seeds. Squeezing as much juice into the pot.
  • Add the remaining ingredients to the pot.Bring to a boil over medium high heat stirring to dissolve sugar. Rise heat to high and boil hard stirring often till the mixture reaches the jell stage. It took me 1 hour. Squeeze the spice bag in a strainer over the mixture to release all goodness into the marmalade. Discard the bag. Skim off foam.
  • Meanwhile have the water bath ready and prepare the jars and lids for canning.
  • Ladle the marmalade into the jars leaving 1/4 inch head space. Remove air bubbles. wipe rims and place lids on. Place bands on to fingertip-tight.
  • Place in a boiling water bath and place lid on. Process for 10 minutes. Remove cover to pot and shut of flame. let sit for 5 minutes. Remove to a draft free spot.
  • Label and store. use within one year.

Next, it's showered with toasted chickpeas and peanuts, which are zingy from lime zest and citrusy spices like sumac or coriander. Offsetting the sweet crunch of zucchini and the fatty, crispy topping are thick rounds of jalapeño. Eat this quick mix with whole grains, tortillas or pita, yogurt, Cotija or another crumbly cheese, salad greens or soft-boiled eggs.

1 1/2 to 2 pounds zucchini (about 3 to 4 medium)
1 jalapeño, halved lengthwise, stemmed and sliced into 1/8-inch-thick half-moons
2 limes, 1 zested and juiced, the other cut into wedges for serving
Kosher salt (such as Diamond Crystal)
1/4 cup extra-virgin olive oil, plus more for serving
1 (15-ounce) can chickpeas or 1 1/2 cups cooked chickpeas, rinsed and patted dry
1/4 cup roasted peanuts (salted or unsalted)
1 1/2 teaspoons ground sumac, coriander or a coriander-based spice blend like baharat or berbere

Steps:

  • Trim the zucchini ends and slice lengthwise into quarters. Position cut sides down, then smash with the side of your knife until craggy and split. Rip into 1/2- to 1-inch pieces. Transfer to a colander set in the sink, then toss with the sliced jalapeño, lime juice and 1 1/2 teaspoons salt. Let drain while you cook the chickpeas.
  • Heat the oil in a medium nonstick skillet over medium heat. Add the chickpeas and peanuts and cook, stirring occasionally, until the chickpeas are lightly browned and crisp, 5 to 10 minutes. Remove from heat and add the lime zest, sumac and a sprinkle of salt. Stir until fragrant, then taste and add more salt as needed.
  • Shake the zucchini to get rid of any excess liquid, then transfer to a platter or plates. Drizzle with a little olive oil, then top with the chickpeas. Get a spoonful of everything and taste. Add salt and a squeeze of lime until flavors are bright and zingy. Serve warm or at room temperature (although the chickpeas will become less crispy as they sit with the wet ingredients).

LEMON OR LIME MARMALADE



Lemon or Lime Marmalade image

I love this recipe. You can use lemons, meyer lemons, limes or key limes. Just make sure you have the "4 cups prepared lemons or limes" for the smaller fruits.

10 lemons
12 cups cold water
12 cups sugar

Steps:

  • With a sharp paring knife remove the outer peel of the lemons, you do NOT want any pith.
  • Slice the peel into paper thin slivers and set aside.
  • Remove pith from fruits and slice the lemons as thin as you can, removing any seeds.
  • Dont use the end slices.
  • Measure the peel and lemon slices, you will need 4 cups.
  • Place in a large non-reactive bowl-I use glass, and cover with the 12 cups water.
  • Cover and let stand overnight.
  • The next morning place the lemon/water mixture into a large pot over medium heat and cook, covered, for 20 minutes or until the lemon rind is tender.
  • Remove from heat and measure-you should have 12 cups.
  • Return to pot and measure in 12 cups of sugar.
  • Cook over medium heat, stirring constantly until the sugar dissolves.
  • Turn heat up to medium high, bringing product to a gentle boil-still stirring constantly.
  • Boil to gel point.
  • Remove from heat and skim off foam.
  • Ladle into clean hot jars, leaving 1/4 inch head space.
  • Process in a boiling water bath for 10 minutes at altitudes up to 1000 feet.
