Provided by Mel

Categories     30-Minute Meal

Time 28m

Number Of Ingredients 10

2 tablespoons olive oil
6 medium cloves garlic (minced)
1/2 teaspoon red pepper flakes (this doesn't add spice - just a nice enhancement of flavor)
3/4 cup chicken stock or broth
2 cans (6-ounces each) solid white tuna in water (drained well)
1 teaspoon salt
1/4 cup chopped fresh parsley leaves
1 tablespoon butter (cut into fourths)
1 bunch bunch asparagus
1 pound penne pasta or other similar tube pasta

Steps:

  • Cook pasta according to package directions (or however you like it).
  • Meanwhile, in a 12-inch non-stick skillet, heat oil, garlic, and red pepper flakes over medium heat, stirring frequently, until fragrant (but not browned!), about 1 to 2 minutes.
  • Add chicken stock and bring to a simmer. Add tuna, slightly breaking up chunks with your fingers, and salt and cook, stirring frequently, until tuna is heated through, about 1 minute.
  • Toss tuna mixture, parsley, butter, asparagus (or other vegetable), and cooked pasta together in the skillet. Salt and pepper to taste and serve immediately.

LIMONCELLO TUNA AND ASPARAGUS

Limoncello Tuna and Asparagus image

A healthy recipe from the Eat Right section of Shape Magazine Summer 2009. After making this recipe, I wanted to add a few notes. I marinated my tuna for about 12 hours and the only flavor that really stood out was the rosemary. . .perhaps you might want to add some additional lemon juice and lemon zest to the marinade. I then let the reserved marinade sit for 24 hours in the fridge to infuse the flavors which was nice; I strained mine as I don't care for "herby" stuff and mixed it with the warm asparagus (then skipped the salad part). A nice meal.

LIMONCELLO

Limoncello image

Provided by Danny Boome

Time 20m

Yield about 8 cups

Number Of Ingredients 4

12 organic lemons
1 liter 100 proof-vodka
3 cups sugar
4 cups water

Steps:

  • Wash the lemons thoroughly. Using a peeler, take off the skins being careful not to get any of the white lemon "pith" onto your peelings or it will add bitterness to your limoncello. Place peels into a large wide-mouth jar with all the vodka. Seal tightly. Place the jar in a cool, dry place for 2 to 3 weeks. Shake the jar to remix everything everyday or so. You will notice the color of the liquid changing to yellow as the peels lose their color.
  • After 1 week, dissolve the sugar completely with the water by heating it on the stove in a large saucepan. Let simple syrup cool to room temperature. Strain the lemon peels from the alcohol and discard. Mix the alcohol with the simple syrup. At this point you can serve it right away or pour the alcohol into a bottle with the simple syrup and place in the freezer to chill. Once chilled it becomes thick and syrupy.

  • Mix the sugar and water in a medium saucepan and bring to a boil. Reduce the heat and simmer until the sugar has dissolved. Let cool before adding to the rum mixture.
