LINDA'S MEXICAN VEGGIE PIZZA

I always make these for pot lucks, or when I need an appetizer for a special occasion... They are a BIG HIT, and I always make them for the holidays to munch on before dinner! You can also omit the taco seasoning mix and salsa and use 1 pkg. Seven Seas Ranch Dip mixed in with the cream cheese instead, to make just a regular Veggie Pizza. It is also very good!

Number Of Ingredients 10

2 (8 ounce) packages refrigerated crescent dinner rolls
2 (8 ounce) packages cream cheese, softened
1 (1 1/4 ounce) packet taco seasoning mix
1 cup taco sauce (I use Ortega Thick And Smooth Med (hot)
2 carrots, finely chopped
1/2 cup red bell pepper, finely chopped
1/2 cup green bell pepper, finely chopped
1/2 cup fresh broccoli, heads finely chopped
1/2 small onion, finely chopped
1 cup black olives, finely chopped

Steps:

  • Preheat oven to 375.
  • Roll out crescent rolls onto a lg. non-stick baking sheet. Stretch and flatten to form a single rectangular shape on the baking sheet.
  • Bake 11-13 minutes in the preheated oven, or until golden brown. Allow to cool.
  • Place cream cheese in a med. bowl. Mix cream cheese with taco seasoning mix and taco sauce. Adjust the amount of taco seasoning mix, to taste.
  • Spread the mixture over the cooled crust.
  • Arrange carrots, bell peppers, broccoli, onion and black olives on top. Press down with hands.
  • Chill in the refrigerator approximately 1 hours.
  • Cut into bite-size squares to serve.

I love making this pizza, which started out as an experiment, and quickly became a favorite in my house... If you like Mexican, you will LOVE this tasty pizza! This pizza is a little on the hot side, so adjust the jalapenos and juice accordingly. If you don't like real hot, use the Pepperocini peppers and juice instead of the Jalapenos. It gives it a nice zip, but no where near as hot as the jalapenos.

Number Of Ingredients 8

1 (12 inch) homemade prepared pizza crust or 1 (12 inch) store bought prepared pizza crust
1/4 cup pizza sauce, your favorite
1/4 cup chunky salsa, I use Pace
2 tablespoons jalapeno juice, from pickled jalapeno pepper jar or 2 tablespoons pepperocini juice, from pickled pepperocini pepper jar
1 -2 jalapenos (pickled, chopped or sliced) or 20 -25 pepperoncini peppers, slices (pickled)
1 (4 ounce) can sliced black olives, drained well
1 large slice onion, chopped fine
2 cups cheddar cheese or 2 cups mexican cheese

Steps:

  • Mix pizza sauce, and salsa together. Add Jalapeno juice, and mix well.
  • Pour on pizza shell, and spread out to edge of pizza shell.
  • Spread jalapenos all around, on top of sauce.
  • Spread black olives on top of pizza.
  • Spread onion on top of pizza.
  • Sprinkle cheese all over top of pizza, spreading to cover all.
  • Cook at 425 for 15-20 minutes.

I found this recipe in an October issue of Quick & Simple magazine and I thought I would put it here for all to enjoy. I did however change a couple of steps and used taco seasoning instead of chili seasoning since that was the only thing I had. Submitted to "ZAAR" on October 9th,2007

1/2 lb lean ground beef
1 teaspoon taco seasoning (I used Mucho Gusto Taco Seasoning Mix)
2 (12 inch) flour tortillas
6 tablespoons salsa, divided (I used mild)
1 roma tomato, diced
1/2 cup frozen corn, thawed
1/2 small red onion, diced
1 cup shredded Mexican blend cheese

Steps:

  • Preheat oven to 375°F.
  • While oven is heating,add ground beef and taco seasoning to a medium-sized skillet over medium heat.
  • Cook beef until no longer pink,about 8 to 10 minutes,drain if needed.
  • Lightly spray two medium sized cookie sheets with cooking spray.
  • Place two tortillas on each sheet,then lightly spray tortillas with more cooking spray.
  • Bake tortillas until lightly browned, about 6 to 8 minutes.
  • Remove tortillas from oven and evenly spread 1 1/2 tablespoons of salsa on each.
  • Divide ground beef, corn, onions, and tomatoes evenly over each tortilla.
  • Divide cheese evenly over the top of ground beef mixture.
  • Bake for 10 to 12 minutes or until cheese is melted.

A simple copycat recipe for Taco Bell's Mexican Pizza with crisp tortilla crusts, ground beef, refried beans, salsas and cheese.

6 medium tortillas
2 lbs ground beef
2 (1 ounce) packets taco seasoning
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon chili powder
1 dash black pepper
3/4 cup water
1 (16 ounce) can refried beans
4 cups mexican cheese, shredded
1/2 cup salsa
1/2 cup salsa verde
1 medium tomatoes, diced
1 (2 1/4 ounce) can sliced black olives
2 green onions, thinly sliced

Steps:

  • Brush the tortillas with oil and broil at 450 degrees F for about 3-4 minutes per side until puffy and light golden.
  • Brown the beef over medium high heat until cooked. Drain any fat and return to heat.
  • Add taco seasoning, cumin, oregano, chili powder, pepper to taste and water.
  • Simmer uncovered until the sauce thickens, about 5 minutes.
  • Remove from heat and set aside.
  • Spread red salsa on the first tortilla then add beef and a layer of cheese.
  • Spread refried beans on second tortilla and cover the first tortilla, bean side down.
  • Spread salsa verde over the top of the second tortilla and add cheese, tomatoes, olives and green onions.
  • Repeat with other tortillas to make 3 pizzas in total.
  • Broil at 450 degrees F for 5 minutes or until the cheese has melted.
  • Dish and cut each pizza into fourths and serve hot with sour cream, hot sauce or guacamole.

I found this recipe online at www.mexicanfoodrecipes.org and posting for ZWT. The recipe says to use seasoned ground beef but doesn't give directions/ingredients for the seasoning. I suggest using Recipe #369923 or using a package of taco seasoning. Please feel free to serve this pizza with salsa, guacamole, lettuce or any topping of your choice. This is a recipe for two servings so feel free to double, triple etc. the amounts. This is also a great recipe to use up left-over taco meat.

4 corn tortillas (flour tortillas can be subbed)
1/2 cup refried beans
1 cup oil
1/2 cup cheddar cheese
1/4 cup tomatoes
1/2 cup ground beef, seasoned
2 tablespoons taco sauce
2 tablespoons green onions, chopped
sour cream, to serve

Steps:

  • Heat the oil in a skillet and fry the tortillas til crisp, one at a time. Drain them on paper towels then spread the refried beans over each tortilla. Top two tortillas with meat and put the other two on top, bean side down. Spread the taco sauce on top of the filled tortillas and sprinkle the cheese over the top.
  • Broil on high,the stuffed tortillas until the cheese melts, but watch carefully not to burn them. Seed and dice the tomatoes. Sprinkle these and the chopped green onions on top of the tortillas and serve with sour cream.

1 (16 ounce) can refried beans
1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
1 tablespoon vegetable oil
4 (6 inch) corn tortillas
8 ounces shredded Cheddar cheese
8 tablespoons sour cream
2 roma (plum) tomatoes, chopped
2 green onion, chopped
1 (4 ounce) can diced green chiles, drained
½ avocado, diced
1 tablespoon black olives, sliced

Steps:

  • Heat the refried beans.
  • In a large skillet, brown the ground beef. Stir in the seasoning packet.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
  • Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
  • Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.
