LINGUINE WITH CLAM SAUCE
This is an easy, inexpensive, white clam sauce. Try it over any kind of pasta; lemon pepper linguine is especially tasty. Extend the sauce for larger portions by adding in one half cup of chicken broth.

- Bring a large pot of salted water to boil. Cook pasta according to package directions.
- Combine clams with juice, butter, oil, minced garlic, parsley, basil, and pepper in a large saucepan. Place over medium heat until boiling. Serve warm over pasta.

LINGUINE WITH CANNED CLAMS, CHILES AND LEMON
This spicy take on linguine with clam sauce uses affordable tinned clams for a quick and inexpensive version of the restaurant fave that comes together quickly. If your store carries them, opt for more flavorful smoked clams packed in oil instead of the brined version; they're priced about the same, but the smoked clams have a deeper, toastier flavor that works well with the chile flakes and toasted garlic.

Steps:
- Bring 4 quarts of water to a boil in a large pot and season with 1 tablespoon salt. Add the pasta and cook 3 minutes less than called for on the directions on the box. Reserve 1 cup of the pasta water, then drain.
- While the pasta cooks, combine the olive oil, garlic and red pepper flakes in a large skillet over medium heat. Once the oil is hot and the garlic starts to sizzle, remove from the heat and allow the garlic to toast. Juice the lemon into the skillet then add the butter, clams, vermouth, 1/2 cup of the reserved pasta water and the cooked pasta. Stir to evenly combine, then turn the heat up to medium and simmer, stirring occasionally, until the sauce has reduced and fully coats the pasta, 3 to 5 minutes. Taste and adjust the salt as needed and add black pepper, the lemon zest and parsley. Use tongs to toss then divide among bowls and serve immediately.
LINGUINE WITH CLAMS, PANCETTA, CHILI AND WHITE WINE
This recipe came from a show I was watching with Jamie Oliver. I have served it several times to seafood lovers and it is a hit. Paired with a nice white wine and salad it is a wonderful dinner.

Steps:
- Cook pasta as directed. Drain.
- Meanwhile in a hot deep skillet, heat olive oil. Add pancetta. Fry until golden.
- Add shallots, garlic and crushed red pepper flakes to skillet. Stir well. Sautee until veggies are tender about 3 minutes.
- Add clames and white wine. Bring to boil.
- Cook until clams open. Discard any that have not opened.
- Remove from heat and add linguine,parsley, salt and pepper. Toss until all is combined well.
- Serve.

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 1 cup cooking water, then drain.
- Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook until browned, 1 minute. Add the pancetta and anchovies and cook, stirring, until browned, about 2 minutes. Remove from the heat and add the clams, then stir in the wine. Cover and cook over high heat until the clams open, 5 to 6 minutes. Remove the clams to a large bowl (discard any clams that do not open). Cover to keep warm.
- Add the chicken broth to the skillet and cook until slightly reduced, about 3 minutes. Add the pasta to the skillet along with 1/2 cup of the reserved cooking water. Simmer, tossing, until the pasta is well coated and the sauce thickens slightly, 1 to 2 minutes. Add more cooking water to loosen, if needed. Stir in the clams and any juices. Add the parsley, red pepper flakes and lemon juice; season with salt. Divide among bowls.

LINGUINE WITH PANCETTA, OLIVE OIL, CHILE, CLAMS AND WHITE WINE SAUCE

- Cook your linguine in salted boiling water until al dente. Meanwhile, get a pan hot and add a couple of good lugs (tablespoons) of olive oil and the pancetta. Fry until golden, then add the garlic and chilies. Soften them slightly and add the clams. Stir, then add the white wine. Put a lid on the pan and cook for a further couple of minutes until all the clams have opened--discard any that remain closed. Remove from the heat and add the drained linguine. Stir in the parsley, correct the seasoning and serve with all the cooking juices.;

- Bring 6 quarts of water to a boil and add about 2 tablespoons of salt.
- In a large saute pan, heat the olive oil and saute the onion, pancetta and garlic over medium heat until the onion is very soft and the pancetta is translucent, about 10 minutes.
- Add the red pepper flakes, clams, wine and butter and bring to a boil. Cook just until all the clams have opened, 5 to 7 minutes, then set aside. Discard any clams that did not open.
- Boil the linguine according to package directions, until tender yet still al dente. Drain the pasta dn toss into the pas with the clams. Stir gently to mix; this should still be a little brothlike. Add the parsley, pour into a warm serving bowl, and serve.
- NOTE, if clams are not in shell use 1/2 pound of clams.

- Bring a large pot of salted water to a boil. Add pasta, and cook until al dente. Drain, reserving 1 cup cooking water.
- Meanwhile, cook pancetta in a large saucepan over medium-low heat until crisp, about 5 minutes. Transfer to a paper-towel-lined plate using a slotted spoon, and let drain.
- Return saucepan to medium-low heat, and add 2 tablespoons butter, the parsley, garlic, 2 teaspoons pepper, and the red-pepper flakes. Cook until garlic is soft and lightly golden, about 5 minutes. Add wine and clams, and bring to a simmer. Cover, and cook until clams have opened, about 5 minutes (discard any unopened clams). Add linguine, reserved cooking water, pancetta, remaining tablespoon butter, and the lemon zest. Toss to combine. Season with pepper, and garnish with parsley.

- In a food processor, coarsely puree the chiles, onion and salt. With the machine running, add the olive oil in a trickle to make a coarse sauce. Makes about 1 cup.
- In a large skillet, heat the olive oil with the pancetta over medium heat and cook until the pancetta is crisp and lightly browned, 7 to 10 minutes. Drain off half of the rendered fat and add the garlic. Cook until it is light golden brown, 3 minutes. Stir in the red chile "pesto," white wine and clams. Cover the pan and cook until all of the clams have opened, 4 minutes. Remove from the heat and keep warm.
- While the clams are cooking, cook the pasta in a large pot of rapidly boiling, salted water until it is just al dente, 8 minutes.
- Drain the pasta and add it to the clams. Place over high heat, ladle in one-half cup of the pasta cooking water and cook, stirring to mix well. Stir in the parsley and green onions over high heat; serve immediately.
