1 pound linguine (Note 1)
1 Tablespoon olive oil
2 teaspoons unsalted butter
1 small shallot, peeled and finely diced
3 cloves garlic, peeled and minced
½ teaspoon crushed red pepper flakes
½ cup white wine
½ large lemon, juiced
26 ounces chopped clams (Note 2)
¼ teaspoon salt
½ teaspoon black pepper
1 teaspoon fresh oregano, chopped (Note 2 )
½ cup fresh parsley, chopped (Note 2 )
lemon slices (optional garnish )
Parmesan cheese (optional garnish)

Steps:

  • Cook linguine according to package directions. Set aside.
  • While the linguine is cooking make the clam sauce.
  • Open the canned clams. Drain the juice from the clams into a medium-size mixing bowl. Set aside.
  • In a large skillet, over medium heat, melt the olive oil and butter.
  • Add in the chopped shallot, saute for about 2 minutes, to soften and release the flavors.
  • Mix in the minced garlic and crushed red pepper for about 30 seconds to blend flavors.
  • Pour in the white wine, reserved clam juice and lemon juice.
  • Cook another 5 minutes, stirring often.
  • Add in the chopped clams, fresh parsley, oregano, salt, and black pepper. Cook another minute.
  • Taste the sauce for seasoning, if needed, reseason the sauce.
  • Toss with the cooked linguine and serve immediately.
  • Serve immediately. Top with additional fresh parsley, oregano, and lemon wedges.

8 oz dry linguine (or other pasta)
2 tablespoons olive oil
2 tablespoons salted butter
¼ cup finely diced onion
1 tablespoon minced fresh garlic
2 (6.5 ounce) cans chopped clams, drained, juice reserved
¼ cup dry white wine
1 teaspoon Worcestershire sauce
2 tablespoons finely chopped parsley, plus additional for garnish
Kosher salt and ground black pepper, to taste
Optional garnish: grated Parmesan cheese; lemon wedges; crushed red pepper flakes; extra parsley

Steps:

  • Cook linguine just until barely al dente, according to package directions. Drain.
  • While the pasta cooks, heat the olive oil and butter in large skillet over medium heat. When the butter melts, add the onion and garlic. Sauté garlic and onions until starting to soften, about 2-3 minutes.
  • Add ¾ cup of the reserved clam juice, wine, and Worcestershire sauce. Bring to a boil, then lower the heat and gently simmer on low for about 10 minutes (so that the flavors come together and the sauce reduces slightly).
  • Add cooked linguine, clams, and parsley to the skillet. Taste and season with salt and pepper, if necessary. Simmer for about 5 more minutes, until the sauce is mostly absorbed.
  • Serve with grated Parmesan cheese, extra parsley, or fresh lemon wedges.

Nothing beats fresh clam sauce, unless you're hungry and have only your pantry to work with. This version of a favorite is made entirely out of the kitchen cupboard, with the exception of flat leaf parsley, which I most always have on hand.

1 pound linguini
Salt
1/4 cup extra-virgin olive oil, 4 turns of the pan
6 fillets flat anchovies, chopped
4 cloves garlic, chopped
1 teaspoon dried thyme leaves
1/2 to 1 teaspoon crushed red pepper flakes
1/2 cup dry white wine, 2 turns of pan
1 (15-ounce) can whole baby clams, with their juice
Handful flat-leaf parsley, chopped

Steps:

  • Bring a large pot of water to a boil. Add salt and the linguini and cook to an extra chewy al dente, 7 minutes or so. The linguini will continue to cook in sauce, later. To a large skillet heated over medium heat, add oil, anchovies, garlic, thyme and red pepper flakes. Cook together until anchovies melt into oil and break up completely. Add wine to the pan and give the pan a shake. Add clams and their juice. Drain pasta and add it to the clam sauce. Toss and coat the pasta in sauce with clams until the pasta absorbs the flavor and juices, 2 to 3 minutes. Remove from heat and season with salt, add parsley and serve.

This is, by far, one of the best "light" recipes I have come across in all the years I have been cooking....I found this way back in the "80's and am still using this favorite. This extremely versatile recipe is on my "go to list" when I need something fast, easy and tasty! I make sure that I am always stocked with clams in the cupboard and cream cheese in my fridge/freezer. This recipe is also handy for cleaning out all those little "its and bits" of vegetables. Don't use too much mushrooms or it will give a "grey" appearance to the dish

1 onion, finely chopped
2 garlic, minced
1/4 teaspoon thyme
1 pinch hot pepper flakes (or as hot as you like)
1 zucchini, roughly chopped (asparagus, snap peas, green beans)
1 red pepper, roughly chopped
6 large mixed mushrooms, roughly chopped
125 g light cream cheese, cubed (8 poz)
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 lb linguine
1/4 cup parmesan cheese, grated
2 tablespoons parsley, chopped

Steps:

  • In a large pot, cook the linguine, reserving some of the pasta water.
  • Drain the clams, reserving the liquid. Set aside.
  • In a large skillet, cook the onion, thyme, hot pepper flakes in 1/3 cup of the clam liquid over medium heat for about 3 - 5 minutes or until onion is cooked.
  • Add the other vegetables and cook until tender crisp. Add more clam liquid if necessary. Stir in cream cheese and melt.
  • Just before serving, add the clams, salt and pepper.
  • Combine the pasta, the clam sauce and the parmesan cheese. Add more clam liquid or pasta water if necessary.

2 tablespoons plus 1 teaspoon salt
1 pound linguine pasta
3 tablespoons olive oil
1 cup small-diced onion
2 tablespoons minced garlic
1 teaspoon crushed red pepper flakes
1 cup dry white wine
1/4 cup tomato paste
1 (28-ounce) can diced tomatoes
4 pounds littleneck clams, scrubbed clean and picked over
3 tablespoons chopped fresh parsley leaves
1/4 cup extra-virgin olive oil

Steps:

  • Set a large 1-gallon pot of water with a pasta insert over high heat. Bring to a boil and add 2 tablespoons salt. Add the uncooked pasta to the water and cook for 7 minutes. (The pasta should be undercooked.) Drain the pasta in a colander and reserve.
  • Begin making the sauce while the pasta is cooking. Set a large 14-inch saute pan over medium-high heat. Add the olive oil to the pan and once hot, add the onions and saute until lightly caramelized and translucent, about 3 minutes. Add the garlic and crushed red pepper flakes, and saute until fragrant, about 30 seconds. Add the wine and tomato paste, stir to combine well, and cook until the wine has nearly completely evaporated, about 3 minutes. Add the diced tomatoes, remaining teaspoon of salt, and the par-cooked pasta to the pan, toss to combine, and bring the sauce to a boil. Add the clams to the pan and cover. Continue to cook until the shells open, 5 to 7 minutes. Add the parsley and toss to combine. Drizzle the extra-virgin olive oil over the pasta and toss to combine. Serve while hot.

4 ripe heirloom or vine tomatoes, optional
4 pounds cherry stone clams, scrubbed
1 cup dry white wine or crisp, light bodied beer
1 (8-ounce) bottle clam juice
1 small red onion, coarsely chopped
1 red chile pepper, coarsely chopped
Zest of 1 lemon
3 to 4 large cloves garlic, peeled
About 1 tablespoon fresh thyme leaves
1/4 cup packed fresh parsley leaves
2 fresh bay leaves
1/4 cup extra-virgin olive oil
5 to 6 anchovy filets
1 pound linguini, or flavor-infused long cut pasta such as pepperoncini or lemon-flavored spaghetti or linguini

Steps:

  • This sauce can be made with or without tomatoes. If you're using tomatoes in the sauce, score the skins on the bottom of the tomatoes with a large X, being careful not to cut deeper than the skin. Bring a small pot of water to a rolling boil, add the tomatoes and cook 1 minute then remove with slotted spoon or tongs, cool a minute or 2 until you can handle, then peel the skin and dice the tomato into small pieces.
  • Place the clams, wine and clam juice in large pot and bring to a boil, cover, reduce heat to a simmer and cook 8 to 10 minutes to open the clam shells. Scoop out the clams and shuck them, place in food storage container and cool completely. Store the clams in the refrigerator until ready for use. Strain the stock and reserve, wipe out the pot and return to the heat.
  • Meanwhile, make a seafood paste by adding the red onion, chile pepper, lemon zest, garlic, thyme, parsley, and bay leaves to the food processor and pulse-chop into a thick, but finely chopped, speckled paste.
  • Heat about 1/4 cup olive oil, 4 turns of the pan, in the clam pot over medium to medium-high heat. Add the anchovy filets and melt them into the oil, 1 minute or so, then add the paste and stir 2 minutes. Add the reserved stock and stir to combine. Add the tomatoes, simmer 5 minutes, then cool the sauce completely and store for make-ahead meal.
  • To serve, bring a large pot of water to boil for pasta. Salt water and cook pasta to al dente.
  • Meanwhile, heat the sauce over medium heat. Once the pasta has been dropped to cook, stir the clams into the sauce and simmer a few minutes. Add a ladle of starchy cooking water to the sauce and toss with pasta 1 to 2 minutes for the flavors to combine and absorb into the pasta.

3/4 cup white wine

3/4 cup heavy cream
2 tablespoons fresh flat-leaf parsley, chopped
Kosher salt and freshly ground black pepper
Freshly grated Parmesan, for garnish

Steps:

  • Bring a large pot of water to a boil. Add the linguine and cook according to the package directions for al dente. Be careful not to overcook; the pasta should have plenty of bite to it. Drain and keep warm.
  • Meanwhile, in a large skillet over medium-high heat, add the olive oil and 1 tablespoon of the butter. (Using both olive oil and butter allows you to heat the mixture at a higher heat before it starts to brown.) Add the clams and garlic and stir together. Cook for 3 minutes. Pour in the white wine, scraping the bottom of the skillet with a wooden spoon. Cook until the sauce is reduced and less watery, 3 to 4 minutes. Add the remaining 1 tablespoon butter and stir to melt. Reduce the heat and squeeze in the lemon juice. Pour in the cream and sprinkle in the parsley. This is a very decadent dish! Add some salt and freshly ground black pepper, then stir well and taste for seasoning. Add a splash of reserved clam juice if the sauce needs thinning. Cook over low heat until heated through, about 3 minutes more.
  • Pour the pasta into a serving bowl. Pour on the sauce straight from the skillet, including all the luscious juice, and toss to combine. At this point your kitchen smells like heaven. Top with freshly grated Parmesan and garnish with lemon slices.

CLASSIC LINGUINE AND CLAM SAUCE

2 dozen clams shucked and diced, reserving liquid in a measuring cup (there should be about 1 1/3 cups of clams and 2 cups of liquid)
5 cups water
1 pound linguine, preferably fresh
1/3 cup olive oil
1 tablespoon minced garlic
1/3 cup dry white wine
1/2 teaspoon red pepper flakes or 1/8 teaspoon cayenne pepper
4 tablespoons unsalted butter
3 tablespoons minced parsley
Salt and freshly ground pepper to taste

Steps:

  • In a large saucepan heat water until it comes to a boil. Add 1 cup of the reserve clam liquid and salt to taste. Now add your linguine, bring the water back to a boil and cook for 8 to 10 minutes until tender, but still firm to the bite. Meanwhile, in a skillet heat olive oil and garlic, and cook, stirring until fragrant. Add remaining clam juice and white wine and reduce to 3/4 cup of liquid.
  • Bring liquid to a boil, add the clams, red pepper flakes and simmer 1 to 2 minutes, or until just cooked. Check your linguine, drain in a colander and transfer to a large serving dish. Add the butter, and toss to combine. Add the clam sauce and parsley and toss to combine. Season to taste with freshly ground pepper. Serve immediately.

This is an easy, wonderfully flavoured pasta dish that can be whipped up in no time for an intimate dinner for two. Recipe is easily doubled. I use my non-stick wok as it is big enough for tossing the pasta and sauce together in and the sauce gets distributed better throughout that way.

1 medium onion, chopped
3 garlic cloves, minced

Steps:

  • I usually make this in my non-stick wok.
  • Heat oil and butter on medium heat and saute onion and garlic until soft and tender, not brown.
  • Add basil and bay leaf.
  • Pour in wine, lemon rind, lemon juice and reserved clam juice.
  • Simmer until reduced a little (by about a third).
  • Add clams and heat through.
  • Toss in the cooked linguine a little at a time (don't make the mistake of adding too much or the sauce will be lost!) and lastly add the cheese and parsley.
  • Serve with more cheese on the side and red pepper flakes (optional) and warm garlic bread.

  • 1. Bring a large pot of salted water to a boil and cook the pasta, following the package instructions, until al dente.
  • 2. Meanwhile, warm 1/2 cup of the olive oil in a high-sided saucepan set over medium-high heat. Add the garlic and cook until softened, about 2 minutes. Add the wine and allow it to cook away slightly, about 1 minute. Add the clams and their juice, and season with salt and pepper. Cook until the broth froths to a level of 1 to 2 inches.   • While the pasta cooks, make your sauce: Heat the oil in a deep-sided 12-inch skillet over medium. Add the garlic, red-pepper flakes and oregano and cook until the garlic is pale golden, 1 to 2 minutes. Add the vermouth and simmer until reduced by half, 3 to 4 minutes. Stir in the clams with their juices and cook until just warmed through, 1 to 2 minutes more. Taste and season with salt and pepper as needed.

This is one of my family's favorites. It's a convenient recipe, using pantry items that I always have on hand. I sometimes add a few tablespoons of capers which adds another dimension to the sauce. They say that cheese and seafood do not mix for the Italian taste buds, but I break the rule and use Parmesan cheese in this dish. Hope you enjoy it as much as we do.

3 tablespoons butter
1 tablespoon olive oil
3 garlic cloves, minced
1 medium yellow onion, diced
3 tablespoons flour
1/2 cup dry vermouth
1 cup bottled clam juice
1 tablespoon lemon juice (fresh is best)
1 cup whipping cream
1 teaspoon dried marjoram
5 green onions, chopped
2 tablespoons chopped parsley
1 lb linguine
5 (6 1/2 ounce) cans chopped clams (Gorton's is a good brand)
salt and pepper (not too much salt, the clams are already salty)
1/2 cup parmesan cheese

Steps:

  • Heat a large saute pan and add the butter, oil and onion. Cook until the onion is tender and clear. Add the garlic during the last minute so that it doesn't burn. Add the flour and cook together for 1 minute. Add the vermouth, clam juice and lemon juice. Simmer until slightly thickened and add the cream and marjoram. Add the green onions and parsley. Simmer the sauce uncovered for about 5 minutes to reduce and thicken. Cook the pasta until al dente in lightly salted water. Drain well (do not rinse). When pasta is almost done, add the clams with their juice to the sauce and heat to a simmer. Add salt and pepper to taste. Toss the drained pasta in the sauce and add the parmesan cheese.

1 tablespoon olive oil
¼ cup minced sweet onion

1 (16 ounce) jar Alfredo sauce (such as Classico®)
