MINTY BROWNIES

Minty Brownies image

"I change the frosting depending on the occasion. For the holidays, I top them with minty buttercream."

Provided by Nancy Fuller

Categories     dessert

Time 1h

Yield 12 servings

Number Of Ingredients 12

2 sticks unsalted butter, plus more for the pan
1 cup semisweet chocolate chips (or chopped semisweet chocolate)
1 cup packed dark brown sugar
1 cup granulated sugar
4 large eggs
1 teaspoon pure vanilla extract
Pinch of salt
1 cup all-purpose flour
4 ounces cream cheese, at room temperature
1 stick unsalted butter, at room temperature
2 tablespoons green creme de menthe liqueur
2 cups confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Butter a glass 9-by-13-inch baking pan and line it with 2 overlapping pieces of parchment paper so the paper comes up over the edges of the pan. Butter the paper.
  • Make the brownies: Place a small pot of water over medium heat and bring to a simmer. Place a heatproof bowl over the simmering water, add the butter and chocolate and gently melt them together, stirring to combine. (This can also be done in the microwave; heat in 15-second intervals.)
  • Transfer the chocolate-butter mixture to a large mixing bowl. Add the brown and granulated sugars, eggs, vanilla and salt and whisk together. Add the flour and gently whisk to combine, then pour into the prepared baking pan. Bake until a toothpick inserted into the center comes out somewhat clean, 25 to 30 minutes. Let the brownies cool completely in the pan.
  • Make the buttercream: Combine the cream cheese and butter in a stand mixer fitted with the paddle attachment and beat until smooth. Add the creme de menthe and beat until combined. Gradually add the confectioners' sugar and beat until smooth and fluffy.
  • Spread the buttercream over the brownies, then refrigerate until firm. Use the parchment to remove the brownies from the baking dish. Slice into bars.

CREME DE MENTHE BROWNIES

Creme de Menthe Brownies image

Provided by Sandra Lee

Categories     dessert

Yield 16 servings

Number Of Ingredients 7

1 (19.5-ounce) box milk chocolate brownie mix (recommended: Pillsbury)
3 eggs
1/2 cup vegetable oil
1/4 cup plus 2 teaspoons creme de menthe liqueur, divided
1/2 cup chopped creme de menthe thins, about 18 (recommended: Andes)
1 (8-ounce) package cream cheese, softened (recommended: Philadelphia)
1/2 cup sugar

Steps:

  • Lightly spray a 1 1/2-quart souffle dish with butter-flavored cooking spray.
  • Make a foil ring, 1-inch thick, for souffle dish to sit on inside a 5-quart slow cooker.
  • In a medium bowl, combine brownie mix, 2 eggs, vegetable oil, and 1/4 cup creme de menthe. Stir using 50 strokes or use a hand blender on medium speed for 1 minute to combine. Fold in chopped mint thins. Transfer to prepared souffle dish and set aside.
  • In a medium bowl, combine cream cheese, remaining egg, sugar, and 2 teaspoons creme de menthe. Using an electric mixer beat on low speed until smooth. Spread over brownie mixture. Use a butter knife to cut cream cheese mixture into brownie mixture for a marble effect.
  • Place souffle dish on top of foil ring in slow cooker. Lay 8 paper towels over top of slow cooker bowl and secure with lid. (This helps to trap steam.)
  • Cook on LOW setting for 4 1/2 to 6 hours. (Do not lift lid to check brownies for the first 3 hours.)
  • Allow brownies to cool completely before cutting.

GODIVA BROWNIES

Godiva Brownies image

According to AAA Living magazine, "from more than 350 recipes, Godiva Brownies by Teri Rasey-Bolf...won the 19th annual 'Michigan's Best' baking contest sponsored by Zehnder's of Frankenmuth." I made these brownies last night for Thanksgiving. I followed all of the directions, and baked the brownies in a 9 x 13" glass baking dish. After 30 minutes, my brownies were still gooey in the middle. I took them to my parents' house and warmed them at 200 F for another 15 minutes, hoping to solidify the middle. They still were pretty goey inside, but everyone loved them. I am not sure if they are supposed to be that way (they tasted delicious, though), so if anyone has any suggestions, they would be appreciated! Also, all I had on hand was salted butter, so I just eliminated the 1/2 tsp of salt called for in the ingredients.
