As the French say when something's realllly good: "It's baby Jesus in his tiny underwear." These are yummy and easy and easily modified to suit your taste. Low in carbs and quite rich tasting.

Steps:
- Melt the chocolate.
- In a mixer or food processor, beat the eggs into the cream cheese and add the rest of the ingredients.
- Sweeten to taste and add your favorite flavoring to taste.
- Spray cupcake papers with non-stick spray and place in muffin tins.
- Fill cupcake papers 3/4 full.
- Bake at 350 degrees for 12-14 minutes.
- Chill or freeze when cooled.

LOW-CARB CHOCOLATE PEANUT BUTTER CHEESECAKES
A low-carb alternative to yummy cheesecake!! I used this recipe while following the hCG diet which eliminates all starch and sugar. With a little bit of cool whip on top, you'll feel like you aren't missing out on a thing! I found this recipe on a forum I am a part of. Delicious!

Steps:
- 1) Spray 12 muffin tins with non-stick spray or line with foil liners.
- 2) Combine all of your ingredients in a large bowl and mix together using an electric mixer until creamy. About 3 minutes. Taste for sweetness - add more stevia if needed.
- 3) Fill muffin cups evenly with all batter. Spread evenly with your fingers so there is no mounding of the batter.
- 4) Place in the over and bake for 18-19 minutes. Test with a toothpick in center. It should NOT come out clean - but with some batter, just not liquid.
- 5) Remove from oven and let cool on wire rack for 1-1.5 hours. Place in refridgerator for 6 hours (at least) uncovered, then you may cover them.

Steps:
- If you want a crust go ahead and make it and press it into a 9" springform pan.
- (I don't cuz it raises the carbs) Beat the cream cheese& splenda in a large bowl till its fluffy.
- Beat in the eggs and whites.
- Mix in the sour cream, cocoa& extract until well blended.
- pour into prepared crust or greased pan.
- Place cheesecake into larger pan of an inch of hot water.
- Bake cheesecake@ 300 F for 45 to 50 minutes or until the center is set.
- Remove cakepan from water and return cake to oven.
- turn off the oven and let cake cool 2 or 3 hours in oven with door ajar.
- chill 8 hours.
- remove side of pan and place cheesecake on serving plate.
- garnish with splenda sweetened whip cream.
- eat it and feel like your cheating!
- Yum!

- Preheat oven to 300 degrees F. Line a muffin tin with 6 foil baking cups (cakes will stick to paper liners). Lightly spray the liners with avocado oil spray.
- Place the chocolate in a small bowl. Microwave in 30 second intervals, stirring after each microwave session, until the chocolate is completely melted. Set aside.
- In a medium bowl, using an electric hand mixer set to the lowest speed, beat the cream cheese, vanilla and stevia until smooth. This should take no more than 30 seconds.
- Add the melted chocolate and beat on low just until blended, scraping down the bowl with a rubber spatula as needed.
