LOW-CARB YUMMY CHOCOLATE CHEESECAKE

24 ounces cream cheese (soft)
3/4 cup Splenda sugar substitute
2 egg whites
2 eggs
1 cup sour cream
2/3 cup cocoa
1 teaspoon vanilla or 1 teaspoon rum extract

Steps:

  • If you want a crust go ahead and make it and press it into a 9" springform pan.
  • (I don't cuz it raises the carbs) Beat the cream cheese& splenda in a large bowl till its fluffy.
  • Beat in the eggs and whites.
  • Mix in the sour cream, cocoa& extract until well blended.
  • pour into prepared crust or greased pan.
  • Place cheesecake into larger pan of an inch of hot water.
  • Bake cheesecake@ 300 F for 45 to 50 minutes or until the center is set.
  • Remove cakepan from water and return cake to oven.
  • turn off the oven and let cake cool 2 or 3 hours in oven with door ajar.
  • chill 8 hours.
  • remove side of pan and place cheesecake on serving plate.
  • garnish with splenda sweetened whip cream.
  • eat it and feel like your cheating!
  • Yum!

3 (8 ounce) packages cream cheese
3 eggs
1/2 cup carbalose flour
1/4 teaspoon salt
3 ounces unsweetened chocolate
2/3 cup Splenda sugar substitute
2 tablespoons Bourbon or 2 tablespoons vanilla, to taste

Steps:

  • Melt the chocolate.
  • In a mixer or food processor, beat the eggs into the cream cheese and add the rest of the ingredients.
  • Sweeten to taste and add your favorite flavoring to taste.
  • Spray cupcake papers with non-stick spray and place in muffin tins.
  • Fill cupcake papers 3/4 full.
  • Bake at 350 degrees for 12-14 minutes.
  • Chill or freeze when cooled.

  • Place the chocolate in a small bowl. Microwave in 30 second intervals, stirring after each microwave session, until the chocolate is completely melted. Set aside.
  • In a medium bowl, using an electric hand mixer set to the lowest speed, beat the cream cheese, vanilla and stevia until smooth. This should take no more than 30 seconds.
  • Add the melted chocolate and beat on low just until blended, scraping down the bowl with a rubber spatula as needed.
