If you get your beef from a butcher, ask him to cut the meat off the bone and then sit or tie it back on, so that you get all the flavor but can slice more easily. Otherwise, go for a boned roast, such as sirloin. For 8 - 10 people you should be fine with 7 lb. Roasting times as for the rib roast still apply.

1 (7 lb.) standing rib roast

Steps:

  • You have choices about the temperature at which you roast. For rare meat you can either cook the beef at the highest possible temperature for 15 minutes and then turn it down to 350°F and cook for 15 minutes per lb (I still find it easier to calculate the cooking time of meat per lb) or at 425°F throughout for 15 minutes per lb, which is what I tend to do. Think of 15 minutes per lb as about 33 minutes for every 2lbs. I usually do 15 minutes per lb and then add on an extra 5 minutes so that those who don't like rare meat have a bit of slightly more cooked beef from the ends. Those who don't like blood don't have to get it: the rest of us gratifyingly do. If you want it medium rare, I should reckon on 20 minutes per pound or 44 minutes for every 2lbs.
  • However you cook it, the thing that really matters is that you let the meat rest properly. Cover it loosely with aluminum foil and leave it for at least 15 minutes and up to 35 minutes on its board. Not that I mind even longer, actually.

Country-style ribs are cut from the loin, one of the leanest areas of pork. These ribs are seasoned, boiled until tender, then baked with your favorite barbeque sauce. That's it! Back to simplicity, back to the country life. Sigh.

2 ½ pounds country style pork ribs
1 tablespoon garlic powder
1 teaspoon ground black pepper
2 tablespoons salt
1 cup barbeque sauce

Steps:

  • Place ribs in a large pot with enough water to cover. Season with garlic powder, black pepper and salt. Bring water to a boil, and cook ribs until tender.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Remove ribs from pot, and place them in a 9x13 inch baking dish. Pour barbeque sauce over ribs. Cover dish with aluminum foil, and bake in the preheated oven for 1 to 1 1/2 hours, or until internal temperature of pork has reached 160 degrees F (70 degrees C).

Mop Sauce:
Baby Back Ribs
Your favorite seasoning
Butter
Sugar in the Raw
Tiger Sauce
Your favorite BBQ sauce
Vinegar
Onion
Lemon
Worcestershire sauce
Mustard
Garlic Powder

Steps:

  • 1. Make mop sauce: half water/half vinegar, add one chopped onion, juice of one lemon, Worcestershire sauce, mustard and garlic powder to taste. 2. Remove membrane from ribs. Season heavily with your favorite seasoning. 3. 90 minutes directly on the grill (indirect heat, approx. 260-265 degrees), turning & mopping every 20 minutes. 4. Wrap in foil with butter, sugar in the raw and tiger sauce. Cook 1 hour in foil (no need to turn). 5. Cook 30 minutes out of foil. Add your favorite BBQ sauce, if desired.
