Loaded Cookie Bars are stuffed with Oreo cookies, M&M's, and Reese's candy but you can toss in whatever you want! They're thick, chewy, and scrumptious. Perfect for leftover Halloween candy! No mixer required.

2 sticks (227 grams) unsalted butter, (melted)
1/2 cup (100 grams) granulated sugar
1 1/4 cups (250 grams) packed dark brown sugar
2 teaspoons vanilla extract
2 large eggs plus 1 egg yolk, (at room temperature)
1 1/4 cups (159 grams) all-purpose flour
1 cup (127 grams) bread flour ((use all-purpose if you don't have bread flour))
1 teaspoon baking soda
1 teaspoon fine sea salt
20 Oreo cookies, chopped
1 cup M&M candies
1 cup chopped Reese's ((or other chocolate candy))

Steps:

  • Preheat the oven to 350°Line a 9 by 13-inch pan with parchment paper and spray with nonstick cooking spray.
  • In a large bowl, vigorously stir the melted butter, granulated sugar, and brown sugar until very well combined. Add in the vanilla, eggs, and egg yolk and stir until well combined. Gradually add in the flours, baking soda, and salt and stir until just combined. Fold in the Oreos, M&M's, and Reese's, reserving some to sprinkle on top.
  • Remove the dough to the prepared pan, pressing evenly. Sprinkle with the reserved candy, pressing down lightly with a spatula. Bake for 25 minutes, or until golden brown but not overcooked. Cool completely before cutting into squares and serving.

1/4 cup HERSHEY'S natural cocoa
1/2 cup butter, softened
2 tablespoons water
1 egg
1/2 cup plus 2 tablespoons REESE'S peanut butter chips (from 10-oz bag)
2 tablespoons Betty Crocker™ Decorating Decors fall sprinkles (from 1.8-oz container)
1/2 cup REESE'S baking cups and REESE'S PIECES candy (from 8.5-oz bag)

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 9-inch square pan with cooking spray.
  • In large bowl, mix cookie mix, cocoa, softened butter, water and egg with spoon until soft dough forms. Stir in 1/2 cup of the peanut butter chips and the sprinkles.
  • Using a metal spatula, evenly spread dough in pan. Sprinkle candies over top.
  • Bake 22 to 26 minutes or until set around edges. Cool 30 minutes.
  • In small microwavable bowl, microwave remaining 2 tablespoons peanut butter chips uncovered on Medium (50%) 1 minute; stir. Continue to microwave in 10-second increments until chips can be stirred smooth. Spoon melted chips into small resealable freezer bag; partially seal bag. Cut off small corner of bag; squeeze to drizzle over top of bar. Let stand about 1 hour or until drizzle is set. Cut into 4 rows by 4 rows. Store in airtight container at room temperature.

These cookie bars are delicious! They are simplified by using a cake mix for the base and adding all your favorite chips, nuts etc. You could even add holiday M&M's or your favorite candy bars chopped up! Easy to take to a potluck or office!

1 box yellow cake mix (for 9x13 size cake)
2 eggs
1 stick butter, melted but cooled
1 c semi-sweet chocolate chips
1 c salted caramel or butterscotch chips
1/2 c shredded coconut
1/2 c nuts (cashews, walnuts or pecans)

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 9X13 glass pan with PAM or grease lightly with shortening.
  • 2. In a large bowl combine cake mix, eggs and melted butter. Stir just to combine.
  • 3. Add chips, nuts and coconut, mix just to combine- don't over mix.
  • 4. Place batter in pan and push into place, I find it easier using my hands. Even the dough out in the pan.
  • 5. Bake 20-23 minutes until golden brown, do not undercook! Cool completely, cut into squares to serve.

Steps:

  • Preheat oven to 350°F; grease a 9x13 baking pan.
  • In a large bowl, cream together butter and sugars until smooth.
  • In a medium bowl, whisk together flour, oats, baking powder, cinnamon and salt. Set aside.
  • Beat in eggs into butter mixture, one at a time for a minute for each. Then, stir in the vanilla extract and water.
  • Gradually mix in the flour mixture until well blended.
  • Fold in both types of chocolate chips and chopped nuts.
  • Spread 1/2 of cookie dough evenly into greased baking pan. Next, sprinkle dough with cookie crumbles. Then, spread the remaining dough over crumbles.
  • Top with candy pieces and place in oven to bake for 30-35 minutes.
  • When done, cool completely on wire rack before removing from pan and cutting into bars.

1 cup packed light brown sugar

2 sticks (8 ounces, 1 cup) unsalted butter, melted
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs plus 1 egg yolk, at room temperature
2 tablespoons milk
1 tablespoon vanilla extract
1 and 2/3 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups rolled oats
1 and 1/4 cups chopped dark chocolate OR your mix-in of choice (see post for ideas!)
1 teaspoon flaky sea salt, optional

Steps:

  • Preheat oven to 350 degrees (F). Line an 9x13-inch baking pan with parchment paper or aluminum foil. Spray lightly with non-stick spray and set aside.
  • In a saucepan over medium heat, melt the butter, then continue to cook it, stirring occasionally, until golden brown. Keep an eye here, you don't want burnt butter! Remove from heat and scrape the butter into a large heat proof mixing bowl.
  • Whisk in both sugars and mix until well combined. Stir in the vanilla. Then add in the eggs and egg yolk, beating until combined. Stir in the milk.
  • Using a rubber spatula, add in the flour, baking soda, salt, cinnamon, and rolled oats, mixing until just combined. Finally, fold in the chocolate chunks. Scrape the batter into the prepared pan.
  • Bake for 24 to 30 minutes, or until the edges are firm and golden. Press extra chocolate chunks on top of the warm bars, if desired.
  • Cool in pan for at least 1 hour before cutting. Sprinkle with flaky sea salt before serving, if desired.

  • Mix in 2-3 cups of mix-ins. You can use whatever you have on hand, or whatever you like. For this pantry-clean-out recipe, I used a mixed 1 cup of white and semi-sweet chocolate chips, 1/2 cup toffee bits, and 3/4 cup Reese’s Pieces. Stir all those into the batter.
