3 lbs large tomatoes, cored, each cut into 6 wedges
4 large green onions, thinly sliced
2 T chopped fresh parsley
1 cup EVOO
3/4 cup unseasoned rice vinegar
2 T dark brown sugar
1 celery stalk, thinly sliced
2 large garlic cloves, thinly sliced
1 T chopped fresh oregano
1 1/2 tsp chopped fresh thyme
1 tsp hot sauce
1 tsp finely grated lemon peel
1 tsp salt
1 tsp pepper

Steps:

  • Combine tomatoes, green onion,s and parsley in a large bowl. Combine oil and all remaining ingredients in heavy medium saucepan. Stir over medium low heat until sugar and salt dissolve, about 1 minute. Stir warm marinade into tomato mixture. Chill at least 4 hours and up to 6 hours

Nothing says, "Summer is here!" better than whole grilled snapper! This recipe is a staple in my household. My dad's family is from New Orleans, so of course we had to represent those flavors in this delicious seafood dish. We often serve it with steamed rice or to kick it up a notch, Creole rice.

2 tablespoons coarse sea salt
1 whole red snapper (3 to 4 pounds), gutted and scaled (see Cook's note)
Grapeseed or avocado oil, for the grill grates
1 lemon, sliced into rounds
4 tablespoons salted butter, softened
1/4 cup chopped celery
1/4 cup chopped green bell peppers
1/4 cup diced white onions
3 green onions, chopped
3 cloves garlic, minced
2 cups breadcrumbs
1 teaspoon lemon zest plus 1 teaspoon lemon juice
1 teaspoon kosher salt
1 teaspoon Creole seasoning or seafood seasoning
1 teaspoon dried thyme
1 teaspoon dried sage
1/4 teaspoon cayenne
1/2 pound andouille sausage, diced
1/3 cup drained stewed tomatoes
1/4 cup diced white onions
1/4 cup chopped green bell peppers
1 tablespoon salted butter, softened
1 tablespoon Creole seasoning or seafood seasoning
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
2 cups cooked long-grain rice

Steps:

  • For the red snapper: Rub the coarse sea salt generously on the inside and outside of the red snapper. Place in the refrigerator for 20 minutes.
  • Lightly oil the grill grates and heat the grill to 300 degrees F.
  • For the creole stuffing: Heat a cast-iron skillet on the grill over direct heat. Add 2 tablespoons of the butter. Once melted, add the celery, bell peppers and white and green onions and cook until softened and browned, 5 to 7 minutes. Add the garlic and cook 1 to 2 additional minutes.
  • Combine the breadcrumbs, lemon zest and juice, kosher salt, Creole seasoning, dried thyme, dried sage, cayenne and remaining butter in a bowl and mix until well blended. Add the sauteed vegetables to the stuffing mixture and mix. Set aside.
  • Wipe off the salt from the red snapper and stuff it with the stuffing mixture. Secure it with cooking twine (remember to remove the twine before serving). Place the lemon rounds on the grill and place the red snapper atop the rounds. Grill until the flesh is opaque, about 25 minutes.
  • For the creole rice: Saute the andouille sausage, stewed tomatoes, white onions, bell peppers and butter in a cast-iron skillet on the grill over direct heat until lightly browned and shiny, 5 to 10 minutes. Add the Creole seasoning, dried thyme and dried sage to the skillet and stir. Add the cooked rice and stir until uniform in appearance.
  • Place the stuffed red snapper onto the rice and serve.

I cook a big batch of this sauce and keep in the freezer for when I need to pull together a quick dinner party or supper for my family. Just reheat and add a combination of shrimp, sausage, or chicken and serve over hot rice. Add in a combination of the optional ingredients to make it your own. You will have a meal fit for company.

2 tablespoons olive oil
2 cups chopped celery
2 cups chopped onion
2 cups chopped green bell pepper
2 cups chopped carrot
6 cloves garlic, chopped
4 (14.5 ounce) cans whole peeled tomatoes with liquid, chopped
4 cups water
2 tablespoons chicken bouillon granules
2 bay leaves
1 tablespoon red pepper flakes
1 tablespoon smoked paprika
1 pinch saffron
1 pinch dried oregano, or to taste
1 pinch dried basil, or to taste
1 pinch dried thyme, or to taste
1 orange, zested
1 (8 ounce) bottle clam juice
1 cup white wine
salt and ground black pepper to taste
6 1-pint canning jars with lids and rings

Steps:

  • Heat olive oil in a large pot over medium heat. Stir in celery, onion, green bell pepper, carrot, and garlic; cook and stir until the vegetables are tender, about 10 minutes.
  • Stir tomatoes with their juice, water, chicken bouillon cubes, and bay leaves into the vegetable mixture.
  • Stir in red pepper flakes, smoked paprika, saffron, oregano, basil, thyme, orange zest, clam juice, and white wine.
  • Bring the sauce to a boil, reduce heat to low, and simmer until the flavors have blended, at least 1 hour. Season to taste with salt and black pepper.
  • Allow the sauce to cool completely.
  • To store, pour into pint glass canning jars, cover with lids and rings, and place into freezer. Sauce can be frozen up to 3 months before using.

1/2 cup wine vinegar
1/3 cup lemon juice
2 green onions, chopped
2 tablespoons minced garlic
1 tablespoon black pepper
1 teaspoon celery seeds or flakes
1/4 cup parsley flakes
1 teaspoon light Creole seasoning
1 pound crab claws, rinsed, drained
1 Lettuce leaves, cherry tomatoes and black olives for garnish

Steps:

  • Mix marinade and pour over crab claws in shallow dish. Refrigerate for at least 4 hours. Drain well and serve on a platter lined with lettuce leaves. Garnish with cherry tomatoes and black olives. Fun Fact: A Fais Do-Do is a Cajun party with music, dancing, and plenty of food. Lagniappe is a little something extra.

Chilled Creole Tomato Soup image

A contemporary Creole dish from New Orleans. If you can't find Creole tomatoes, just use a very red, ripe tomato such as Roma.

3 lbs creole tomatoes
1 jalapeno pepper
1 sprig fresh basil
1 pinch salt
2 cups water
16 small shrimp
1 cup olive oil
2 jalapeno peppers
2 tablespoons red wine vinegar
1 sprig fresh basil

Steps:

  • Cut tomatoes into quarters.
  • Cut the jalapeno in half.
  • Place tomatoes, jalapeno, salt and basil into a large 4-quart pot and add 2 cups of water. Bring to a simmer and simmer for 90 minutes.
  • Pour the soup through a fine mesh strainer or cheesecloth to remove any pulp. Reserve the liquid and place in refrigerator until cold.
  • Clean and devein the shrimp. Grill about 2-3 minutes per side, until just done.
  • Place shrimp in a bowl with olive oil, red wine vinegar, basil stem, and the juice of one jalapeno. The marinade will continue to cook the shrimp and infuse the flavors.
  • Cover and place in the refrigerator.
  • Chill 4 shallow soup bowls.
  • Ladle the chilled bowls into 1/2-1 cup tomato broth. Remove the shrimp from the marinade and blot the excess marinade with a paper towel then place four shrimp in each bowl. finish with a garnish of fresh jalapeno slivers.
