Loaded sweet potato fries image

Crisp sweet potato fries loaded with spicy chicken, peppers, cheese and all the sauces. The perfect weekend treat! You can make your own chilli sauce or use shop-bought. Each serving provides 636 kcal, 29g protein, 59g carbohydrate (of which 23g sugars), 29g fat (of which 6g saturates), 11g fibre and 2.5g salt.

2 x 200g jars jalapeño chillies, drained
1 tsp smoked paprika
4 red chillies, roughly chopped
3 garlic cloves, roughly chopped
6 tbsp soft light brown sugar
1 tbsp sea salt
125ml/4fl oz white wine vinegar
2 tbsp cornflour
¼ tsp fine sea salt
3 tsp smoked paprika
800g/1lb 12oz sweet potatoes, scrubbed and cut lengthways into 1cm/½in thick slices or wedges
3 tbsp vegetable oil
400g/14oz chicken thighs, boneless, skin removed and roughly chopped
1 tsp garlic granules
2 peppers, seeds removed, thickly sliced
150g/5½oz cherry tomatoes, halved
salt and freshly ground black pepper
4 tbsp mayonnaise
2 garlic cloves, finely grated or crushed
1 tbsp chilli sauce, from above
60g/2¼oz extra-mature Cheddar, grated
2 spring onions, thinly sliced
1 tbsp roughly chopped fresh coriander

Steps:

  • To make the chilli sauce, put the ingredients in a blender with 75ml/2½fl oz water and blend to a smooth paste. Transfer to a saucepan, bring to the boil, then simmer for 5 minutes, stirring occasionally, until reduced slightly. Set aside to cool.
  • To make the loaded fries, preheat the oven to 220C/200C Fan/Gas 7. Line two large baking trays with baking paper.
  • Mix the cornflour, salt and 2 teaspoons of the smoked paprika together in a large bowl. Add the sweet potatoes and mix well to coat. Add 2 tablespoons of the oil and massage in so each piece is well coated. Divide between the baking trays and cook for 20-25 minutes, or until golden and crisp.
  • Meanwhile, tip the chicken into another large bowl with the remaining oil and smoked paprika, the garlic granules and plenty of salt and pepper. Mix well, cover and marinate for 15 minutes.
  • Heat a frying pan over a high heat and fry the chicken and peppers for 6-8 minutes, or until golden brown and cooked through (add a little more oil if needed). Add the tomatoes and cook for 2 minutes.
  • To make the toppings, mix the mayonnaise with the garlic and set aside.
  • Divide the fries between serving plates and top with the grated cheese, then the cooked chicken and peppers, the chilli sauce, garlic mayonnaise, spring onions and coriander and serve straight away.

4 large sweet potatoes, or yams
fresh ground black pepper, to taste
2 Tbsps olive or avocado oil
1 tsp garlic powder
1 lb. lean grass fed ground beef, or turkey
1 white/yellow onion, diced
2-3 garlic cloves, minced
1/4 cup chipotle peppers in adobo sauce
1 cup frozen organic corn, thawed or fresh 1 head of corn shred from its cob
1 tsp chili powder
1 tsp ground cumin
1 tsp dried oregano
1 tsp paprika
1 (15 oz. jar) diced tomatoes, with juice
15 oz. black beans, drained and rinsed if using canned
sea salt to taste
Extra toppings: sliced avocado, halved cherry tomatoes, organic sour cream or plain Greek yogurt, shredded cheese, fresh chopped parsley or cilantro, lime wedges, etc.

Steps:

  • Preheat the oven to 425 degrees f. and line a large baking sheet (or two) with parchment paper or silicone baking mats.
  • Cut the sweet potatoes into 1/2 inch fries, evenly as shown and place them into a large bowl.
  • Sprinkle fries with pepper and garlic powder, then drizzle with oil. Toss well to get all of your fries nicely coated.
  • Arrange in a single layer, with some space in between (so they can crisp up), on the baking sheets and bake for 20 to 25 minutes, flipping once during roasting time.
  • Meanwhile, heat a large (lidded) skillet over medium heat then add in your beef, onions and garlic. Cook, stirring frequently for about 6-7 minutes, or until meat starts to brown while breaking up the meat.
  • Add in seasonings, chipotle peppers, corn, black beans and diced tomatoes then gently stir to combine.
  • Reduce heat to low, cover with a lid and simmer for 20 minutes to allow flavors to develop and chili to thicken. Taste test, and add a sprinkle of sea salt if desired.
  • Sprinkle fries with sea salt when they come out of the oven.
  • Serve the sweet potato fries topped with your beef chili and any extra toppings of your choice...serving suggestion shown in the pictures!
  • I divided up the fries between 4 separate plates then let the kids top their own.

In a large cast-iron skillet over medium heat, melt coconut oil or ghee. Add diced sweet potatoes and cook, stirring regularly, until beginning to soften. Add spices and stir to combine well. Add more coconut oil or ghee if necessary to prevent sticking. Cook until sweet potatoes are easily pierced with a fork.
  • Meanwhile, make guacamole. Mash avocado with lemon or lime juice in a bowl. Add salt to taste.
  • When sweet potatoes are nearly done, fry your eggs. Pour rendered bacon grease into a bowl. Add about 1 tablespoon back to the small skillet and heat over medium heat. Crack 2 eggs into skillet and cook until whites are opaque and beginning to set. Flip, if desired, or simply cook until all of whites are set. Sprinkle with salt and slide off onto a plate. Repeat with two other eggs. Don't overcook - you want the yolks to be soft to help create a sauce.
