VEGAN TURKEY



Vegan Turkey image

A vegan turkey made with vital wheat gluten and chickpeas or tofu.

1 1/2 cups chickpeas ((or white beans or 14 oz. pressed firm tofu))
1 cup vegan broth ((chicken-style vegan broth tastes best))
2 tablespoons nutritional yeast
2 tablespoons refined coconut oil (melted (or any other neutral-flavored oil))
2 teaspoons poultry seasoning
2 teaspoons soy sauce (Bragg's Liquid Aminos)
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 1/3 cup vital wheat gluten
1/2 cup broth
2 tablespoons light olive oil (or other neutral-flavored oil)
1 teaspoon soy sauce (or Bragg's Liquid Aminos)
1 teaspoon oregano
1/4 teaspoon fresh ground pepper

Steps:

  • Add 1 1/2 cups chickpeas, 1 cup broth, 2 tbsp nutritional yeast, 2 tbsp melted coconut oil, 2 tsp poultry seasoning, 2 tsp soy sauce, 1/2 tsp salt, 1/4 tsp garlic powder, and 1/4 tsp onion powder to a food processor or blender.
  • Blend for about 30 seconds until you have a thick liquid. (It's okay if there are still a few chunks of the beans in it.)
  • Pour the liquid into a glass bowl (gluten will stick to plastic) and sprinkle 3/4 cup of gluten flour over it and fold it in with a silicone spatula.
  • Sprinkle the remaining gluten flour over it and continue to fold it in. Once it gets firm, use your hands to knead the dough for about 30 seconds until all of the gluten is incorporated.
  • Form the dough into one large loaf and wrap it tightly and completely in foil.
  • Place the wrapped "turkey" in a large steamer basket, cover, and steam for 1 hour. (You can now eat the "turkey" or you can baste and bake it for more flavor.)

1 cup chopped onion
1 cup shredded carrots
1/2 cup chopped celery
1 tablespoon canola oil
1-1/2 cups crushed saltines (about 45 crackers)
3/4 cup ketchup, divided
1/4 cup minced fresh parsley
1 egg, lightly beaten
4 teaspoons ground mustard, divided
2 teaspoons salt
2 teaspoons minced garlic
1 teaspoon pepper
2-1/2 pounds lean ground turkey
2 tablespoons brown sugar

Steps:

  • In a large skillet, saute the onion, carrots and celery in oil until tender. In a large bowl, combine the onion mixture, cracker crumbs, 1/2 cup ketchup, parsley, egg, 2 teaspoons mustard, salt, garlic and pepper. Crumble turkey over mixture and mix well. , Shape into a loaf. Place in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 1 hour. , In a small bowl, combine the brown sugar and remaining ketchup and mustard until smooth. Spoon over meat loaf. Bake 10-20 minutes longer or until meat is no longer pink and a thermometer reads 160°; drain. Let stand for 10 minutes before slicing.

2 eggs
1 tablespoon prepared horseradish
1/2 cup quick-cooking oats
1 teaspoon ground mustard
1 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef
1 teaspoon steak sauce
8 medium carrots, halved
8 small red potatoes
16 pearl onions
1 package (10 ounces) frozen peas, thawed

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Shape into a loaf in a greased 13x9-in. baking pan. Brush with steak sauce. Arrange carrots, potatoes and onions around loaf. , Cover and bake at 375° for 40 minutes. Add peas. Cover and bake 30 minutes longer. Uncover; baste with pan juices. Bake 5 minutes more or until the meat is no longer pink and a thermometer reads 160°.

1 cup longhorn or sharp cheese, grated

Black pepper - sprinkle

Steps:

  • Mix all ingredients Spray loaf pan with PAM Coat with seasoned bread crumbs Pour mixture into pan Bake at 350 degrees for 1 hour Decrease heat as needed at end Cool 5 minutes and turn out onto platter

  • Crumble the tofu into a large food processor with the standard S-blade (see Notes re: food processor). Add all remaining roast ingredients EXCEPT vital wheat gluten and coconut oil. Process the tofu and seasonings into a smooth slurry. Add 1 ½ cups vital wheat gluten (180 g), and process for 1 minute.
  • Remove dough from food processor, and place on a work surface. Shape into a rectangle. Cut it in half, then cut one of the halves in half again. Set one of the smaller pieces aside (1/4 of the dough) - this piece will serve as the turkey skin. Return 3/4 of the dough to the food processor, and process for 1 to 1 ½ minutes. Transfer it to the work surface and knead by hand a few times to make sure it feels firm. Set aside to rest.
  • Place the "skin" piece of dough back in the food processor. Add 1 tablespoon vital wheat gluten, and process for 1 minute. It will be warm and shiny. Set aside.
  • Shape the larger piece of dough into a log. Twist it until it begins to break or resist (see photo). Fold the twisted log so that it resembles a ribbon. Tuck the right tail underneath, then tuck the left tail.
