LOBSTER AND FENNEL NAPOLEON WITH HERBED LOBSTER CREAM



Lobster and Fennel Napoleon with Herbed Lobster Cream image

Number Of Ingredients 14

4 (1-pound) lobsters, cut in half lengthwise, tails and claws removed
2 tablespoons olive oil
4 shallots, roughly chopped
3 cloves garlic, minced
4 small fennel bulbs cut top to bottom into 1/2-inch slices, save the pieces that arent perfect slices
1 cup dry vermouth
1 quart (32-ounces) heavy cream
1 tablespoon chopped fresh tarragon
1 teaspoon freshly ground black pepper
4 eggs
5 cups panko bread crumbs
Kosher salt
Canola oil, for frying
Olive oil, for grilling

Steps:

  • Bring a large pot of water to a boil. Place the lobster claws in water for 3 minutes. Dont cook them through, but enough to be easily removed from the shell. Remove the claws from the water. Add the tails to the water and cook for 3 minutes. Extract the meat from the claws and the tails and set aside.
  • In a large saute pan over medium-high heat, add 2 tablespoons olive oil. Add the shallots, garlic and any scraps from the sliced fennel, saute until slightly brown. Add the lobster bodies, the cracked shells from the tails and the claws, saute another 5 minutes. Add a few good pinches of kosher salt and stir.
  • Deglaze with vermouth and simmer until the alcohol is mostly cooked down. Add the heavy cream, turn the heat to low. Let simmer for about 30 minutes. Strain, add tarragon and pepper. Dice the par-cooked lobster tail, and add to the cream mixture.
  • While the cream is simmering, crack the eggs into a large bowl and whisk. Add the sliced fennel and coat well. Pour the bread crumbs onto a plate. Dip each fennel slice in the panko, pressing firmly to coat completely on both sides. Lay the coated fennel slices on a plate.
  • In a large saute pan, heat 1/2 cup of canola oil over medium heat. Fry the breaded fennel one piece at a time, making sure not to overcrowd the pan. When golden brown on one side, flip and cook the other side to the same golden brown, about 3 to 4 minutes on each side. Drain the fennel on paper towel and season with salt.
  • The next step works better with a grill, but if this isnt an option, a saute pan works well.
  • Preheat a grill. Coat the par-cooked claws with olive oil, salt, and pepper. Place the claw meat on a very hot grill, cook about 2 minutes per side, and remove from the heat.
  • To construct a plate, lay down one slice of fennel, then place one claw on top. Layer another slice of fennel and another claw on top. Spoon the cream liberally over the top, making sure each plate gets a nice amount of tail meat.

1 (3 ounce) package dry crab boil (such as Zatarain's® Crab & Shrimp Boil)
5 small lobster tails
1 (15 ounce) package double crust ready-to-use pie crust (such as Pillsbury®)
5 tablespoons butter
½ cup diced onion
½ cup diced celery
⅓ cup all-purpose flour
1 ½ cups chicken broth
¾ cup milk
1 teaspoon seafood seasoning, such as Old Bay™
½ teaspoon garlic powder
¼ teaspoon freshly ground black pepper
1 ½ cups frozen mixed vegetables, thawed
½ cup diced potato

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Bring water and crab boil bag to a boil in a large saucepan.
  • Stir in lobster tails and boil until they turn bright red and the meat becomes opaque, 5 to 8 minutes.
  • Drain and cool lobster tails. Remove shells, and dice lobster meat. Transfer to a bowl.
  • Place a pie crust into the bottom of a 9-inch pie pan and set aside.
  • Heat butter in a skillet over medium heat.
  • Cook and stir onion and celery in butter until tender, 5 to 8 minutes.
  • Stir flour into onion and celery mixture until vegetables are coated with flour.
  • Combine chicken broth and milk in a bowl.
  • Slowly stir broth and milk into onion, celery, and flour mixture until thickened.
  • Stir seafood seasoning, garlic powder, and ground black pepper into thickened sauce.
  • Mix thawed vegetables, diced potato, and cooked lobster meat into the sauce; simmer until potato is tender, about 8 minutes.
  • Pour lobster filling into the prepared pie crust.
  • Cover with remaining pie crust ,and seal by crimping the edges of the two crusts together.
  • Cut an 'X' into top of pie crust with a sharp knife to allow steam to escape during baking.
  • Bake pie in the preheated oven until crust is golden brown, 40 to 45 minutes.
  • Remove from oven and let stand for 10 to 15 minutes to allow sauce to thicken.

I have tasted Ina Garten's Lobster Potpie and it was awesome - so how can you improve on something so delicious but she has!!! "One of my philosphies of cooking is to take a recipe you are totally comfortable making, and then have three variations of it up your sleeve." 1 1/2 cups frozen small whole onions
1/2 cup minced flat leaf parsley
1 1/2 cups all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon baking powder
1/4 lb cold unsalted butter, diced
1/4-1/3 cup ice water
1 eggs, beaten with 1 tablespoon water or 1 heavy cream, for egg wash

Steps:

  • FOR THE SEAFOOD:.
  • Melt the butter in a large saute pan over medium heat.
  • Add the chopped onion and fennel and cook for 10 to 15 minutes, until the onions are translucent.
  • Add the flour and cook over low heat for 3 more minutes, stirring occasionally.
  • Meanwhile, bring the stock to a simmer in a large saucepan.
  • Add the shrimp and scallops and cook for 2 minutes, just until firm.
  • Remove the seafood to a large bowl with a slotted spoon.
  • Pour 3 cups of stock into a measuring cup and discard the rest.
  • When the flour is cooked in the onion and fennel mixture, slowly add the 3 cups of stock, the Pernod, salt and pepper and simmer for 3 minutes.
  • Stir in the heavy cream.
  • Cut the lobster meat into medium-sized cubes.
  • Add the lobster to the bowl with the seafood, then add the frozen peas, frozen onions, and parsley.
  • Pour the sauce over the mixture and taste for seasoning.
  • Pour into a 9 x 13 x 2 baking dish and refrigerate.
  • FOR THE PASTRY:.
  • Mix the flour, salt, and baking powder in a food processor fitted with a steel blade.
  • Add the butter and pulse 10 times, until the butter is the size of peas.
  • With the motor running, add the ice water; process only enough to moisten the dough and have it just come together.
  • Dump the dough out on a floured surface and knead quickly into a ball.
  • Wrap the dough in plastic and allow it to rest for 30 minutes in the refrigerator.
  • Meanwhile, preheat the oven to 375º F.
  • Roll the dough out to fit the baking dish with about a 3/4 inch overlap.
  • Use the egg wash to paint the oitside rim of the dish.
  • Place the dough on the filled baking dish and press it lightly to adhere to the egg wash.
  • Make 4 or 5 slashes in it to allow the steam to escape.
  • Place the dish on a sheet pan lined with parchmen paper and and bake for 1 hour and 15 minutes, until the top is golden brown and the filling is bubbling hot.

4 tablespoons unsalted butter
1/2 medium onion, chopped
1 fennel bulb (8 ounces), halved, cored, and very thinly sliced, preferably on a mandoline
1/4 cup all-purpose flour
2 cups fish stock
1/2 cup water
1 pound cooked lobster meat (from 2 lobsters), cut into 1-inch pieces
3/4 cup fresh shelled or frozen English peas
3 tablespoons heavy cream
1 tablespoon fresh tarragon
Coarse salt and freshly ground pepper
4 tablespoons unsalted butter
6 slices Pullman bread (1/2 inch thick)

Steps:

  • Preheat oven to 375 degrees. Make the filling: Melt butter in a large pot over medium heat. Cook onion until translucent, about 7 minutes. Add fennel, and cook until softened, about 7 minutes. Stir in flour. Add stock and water. Bring to a simmer.
  • Remove from heat, and stir in lobster, peas, cream, and tarragon. Season with salt and pepper if needed. Let cool. Transfer mixture to a 9-by-12-inch (8-cup) gratin dish.
  • Make the topping: Melt butter, and brush over bread slices. Tear each slice in half, and arrange over top of filling to cover the surface, overlapping as you work. Bake until bread is golden brown and filling is bubbling, about 30 minutes.

  • For the crust, mix the flour, salt, and baking powder in a food processor fitted with a metal blade. Add the lard and butter and pulse 10 times, until the fat is the size of peas. With the motor running, add the ice water; process only enough to moisten the dough and have it just come together. Dump the dough out on a floured surface and knead quickly into a ball. Wrap the dough in plastic and allow it to rest for 30 minutes in the refrigerator.
  • Preheat the oven to 375 degrees F.
  • Divide the dough in half and roll out each half to fit a 9 or 9 1/2-inch round by 2-inch high ovenproof glass or ceramic baking dish. Place 1 crust in the dish, fill with the lobster mixture, and top with the second crust. Crimp the crusts together and brush with the egg wash. Make 4 or 5 slashes in the top crust and bake for 1 hour and 15 minutes, until the top is golden brown and the filling is bubbling hot.

4 live lobsters, about 1 pound each
2 cups assorted prepared vegetables such as baby carrots, fennel, cucumbers, pearl onions and baby turnips, cut in 2-inch pieces
6 tablespoons unsalted butter
1/2 teaspoon lemon juice
Salt (sea salt recommended)
48 grinds white pepper or 1/2 teaspoon
4 tablespoons heavy cream
4 3-inch rounds of pastry (see pate brisee recipe)

Steps:

  • Boil lobsters 2 minutes in large quantity of water, stirring. Remove to an ice water bath to stop cooking. Cool, drain and remove all meat from claws, tails and knuckles. Reserve tomalley and roe, if present. Cut meat into bite-size pieces.
  • Cover lobster shells with water and bring to boil. Simmer 20 minutes. Strain and reserve the stock in a saucepan, setting aside 1/2 cup. Discard shells.
  • Force tomalley through a strainer and chill. Poach roe in reserved stock until bright red. Dry on paper towels and force through a strainer.
  • Prepare vegetables, parboiling the root vegetables 7 minutes, and set aside.
  • Divide butter between two large saucepans and melt over low heat. Raise heat to medium and add half the vegetables to each pot with lemon juice; toss lightly.
  • Raise heat again and add lobster meat, salt and pepper. Saute 1 minute; add reserved 1/2 cup stock and the cream. Bring to slow boil and stir ingredients until liquid is reduced to consistency of heavy cream.
  • Reheat pastry rounds at 350 degrees 5 minutes.
  • Spoon lobster mixture onto plates. Dribble pureed tomalley over lobster mixture and sprinkle with sieved roe. Place warm pastry rounds on top and serve.

1 (5 ounce) lobster tail
2 tablespoons butter, divided
1 tablespoon sherry
1 (8 ounce) bottle clam juice
¼ cup diced celery
¼ cup diced carrot
¼ teaspoon ground paprika
1 teaspoon tomato paste
kosher salt and freshly ground black pepper to taste
1 pinch ground cayenne pepper, or to taste
1 tablespoon all-purpose flour
⅓ cup cubed Yukon Gold potatoes
1 sheet frozen puff pastry
1 large egg, beaten
1 teaspoon freshly squeezed lemon juice
¼ cup heavy cream
1 tablespoon minced fresh tarragon

Steps:

  • Cut lobster shell down the middle, crack it open, and pull out the meat. Cut the shell into 1-inch pieces and set aside.
  • Cut the meat into ½-inch pieces, checking carefully and removing any veins or missed pieces of shell. Transfer the meat to a plate and keep in the refrigerator until needed.
  • Melt 1 tablespoon butter in a saucepan over medium heat. Add lobster shells and cook, stirring often, until they turn brick red, 3 to 4 minutes. Stir in sherry and clam juice and reduce heat to low. Simmer gently to steep lobster shells, 15 to 20 minutes; making sure the liquid does not reduce.
  • Remove from the heat and pour broth through a strainer to remove shells.
  • Rinse out the saucepan and add remaining 1 tablespoon butter. Place over medium heat to melt. Add carrots, celery, paprika, tomato paste, salt, pepper, and cayenne. Cook and stir until tomato paste is toasted and paprika is fragrant, about 2 minutes. Stir in flour and cook for 1 to 2 minutes. Stir in lobster broth and bring to a simmer.
  • Add potatoes and reduce heat to medium-low. Cook at a gentle simmer until potatoes are tender and liquid has reduced just slightly, 10 to 15 minutes.
  • While the potatoes are cooking, place puff pastry on a piece of parchment paper. Cut out two 3 ½-inch circles and cut an "x" in the center of each one. Brush tops with beaten egg. Transfer to a baking sheet and place in the refrigerator until needed.
  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with foil.
  • Add lemon juice, cream, and tarragon to the potatoes; stir to combine and return to a simmer over medium heat. Simmer until reduced and thickened a bit more, about 5 minutes. Taste and adjust salt if necessary.
  • Stir in reserved lobster meat and turn off the heat. Remove from the stove and evenly divide the mixture between two 6-ounce ramekins, stopping about ¼ inch from the top.
  • With the egg wash facing up, place puff pastry circles onto the ramekins, making sure the vents are cut all the way through.
  • Bake in the upper center of the preheated oven until bubbly and browned, about 20 minutes. Let rest for at least 5 minutes before serving.
