- To prepare the shrimp, combine the garlic, olive oil, lemon juice, green onion, parsley, and cilantro in a large bowl. Add the shrimp and toss to coat. Place the shrimp in the fridge, and let them marinate for at least a 1/2 hour, but do not exceed 3 hours. Meanwhile, prepare the rice by sautéing the bacon until it begins to brown in a medium-size sauce pot. Add the onions and the red pepper to the pot and continue to sauté until they begin to soften, about 5 minutes. Stir in the rice and add 4 cups of water. Bring the pot to a simmer and cover. Simmer until the water is absorbed, about 15-20 minutes. To cook the shrimp, place the marinated shrimp onto skewers and preheat your grill to medium heat. When it's reached temperature, place the shrimp skewers onto the grill and cook for about 2 minutes on each side, or until cooked through. When the water for the rice has completely absorbed, fluff lightly, then stir in the peas, soy sauce, and cilantro. Serve with the shrimp.
LOBSTER ON THE BARBIE
This the only way we make our tails. We even freeze our buns off in the winter time, cooking these tails out on the patio grill.

Steps:
- For 16 oz tails: have store crack or split each tail in half.
- Cut bottom side of tail off (skin & hard pieces, not points).
- Cover and grill on medium for 7 minutes, shell side down.
- Baste with butter, lemon juice and garlic salt 5 or 6 times.
- Turn and grill with cover down another 7 or 8 minutes until done, don't baste.
- *For 8 or 9 oz tails: crack yourself by bending (hard side of tail down) so they will lay flat while grilling.
- Cut skin & cut hard pieces but don't cut off points.
- Follow above cooking directions.
- Serve with browned butter, potato and coleslaw.
LOBSTER BLTS
Steps:
- Preheat the oven to 400 degrees F. Place a baking rack on a sheet pan and lay the bacon on the rack in a single layer. Roast the bacon for 15 to 20 minutes, until browned. Transfer to a plate lined with paper towels and set aside.
- Meanwhile, for the dressing, whisk together the mayonnaise, ketchup, relish, 1/4 teaspoon salt, and 1/8 teaspoon pepper in a medium bowl and set aside. Slice the avocados crosswise 1/4 inch thick, place the slices in a bowl with the lemon juice, toss gently, and set aside.
- To assemble, place 4 slices of toast on a board and slather them generously with the dressing. On each sandwich, place first a lettuce leaf, then a layer of avocado, then a slice of tomato. Sprinkle generously with salt and pepper. Cut a slice of bacon in half and place both halves on the tomato. Top with a quarter of the lobster. Generously spread more sauce on the remaining 4 slices of toast and place them, sauce side down, on the sandwiches. Serve immediately.

- To grill: Fire up grill to med hot, grill shrimp while basting with white wine.
- To saute: fire up skillet to med hot, saute adding wine at very end, just enough to moisten.
