Steps:
- Remove the casing from the sausage and chop.
- Heat the oil in a deep skillet over medium-high heat, add the sausage and brown. Remove to a plate. Add the pork and brown. Then add the thyme, garlic, celery, onions, peppers and some salt and pepper. Cook, partially covered, 8 to 10 minutes. Add the andouille, tomato sauce, stock, hot sauce, sugar, vinegar and Worcestershire. Reduce the heat, stir and simmer to thicken. Cool and store for a make-ahead meal. Reheat over medium heat. Serve on warm rolls with the toppings of your choice.

- In a large bowl, mix the first six ingredients. Add nuts; toss to coat. Spread onto a 15x10x1-in. baking pan. , Bake at 300° for 35-40 minutes or until nuts are lightly toasted and appear dry, stirring occasionally. Serve warm or at room temperature. Store in an airtight container.

QUICK LOTUS SEED AND NUT SNACK
This quick Indian snack is made with makhana (lotus seeds), peanuts, and cashew nuts.

- Heat ghee in a skillet over medium heat and shallow-fry cashew nuts until fragrant and lightly toasted, 2 to 3 minutes. Remove from skillet and dry on paper towels. Add peanuts and fry in the same skillet until lightly toasted, 2 to 3 minutes. Add lotus seeds and fry over low heat until they are crisp and have absorbed all the ghee, about 3 minutes.
- Mix cashews, peanuts, and lotus seeds in a bowl and season with salt and pepper. Store in an airtight jar to stop them from getting soggy.

- Grease a 9-inch square pan. In a saucepan, melt the butter and add the brown sugar. Cook over low heat for 2 minutes, stirring constantly. Add the milk and continue cooking, stirring until the mixture boils. Remove from the heat and allow to cool.
- Gradually add the confectioners' sugar until the mixture is of fudge consistency. Add the nuts. Spread in the prepared pan and cool.
