1/2 Cup of Dried Cranberries
1 Tablespoons of Scallions
2 Tablespoons of Feta Cheese

Steps:

  • In a large mixing bowl, combine the Cream Cheese, the Dried Cranberries, the Scallions, and the Feta Cheese
  • Fold ingredients together until nicely incorporated
  • Spread a thin layer of the mixture onto a Flour Tortilla
  • Roll up the tortilla
  • Cut the tortilla into 6-10 even pinwheel circles
  • Repeat until the tortillas are gone
  • ENJOY

1 sheet frozen puff pastry, thawed
2 tablespoons Dijon mustard
2 tablespoons honey
1 cup finely chopped fresh spinach
1/2 cup finely chopped Brie cheese
1/2 cup finely chopped walnuts
1/4 cup dried cranberries, finely chopped

Steps:

  • Unfold pastry. Combine mustard and honey; spread over pastry. Layer with spinach, cheese, walnuts and cranberries. Roll up jelly-roll style; cut into 12 slices. Place cut side down on an ungreased baking sheet., Bake at 400° until golden brown, 15-20 minutes. Freeze option: Freeze cooled appetizers in a freezer container. To use, reheat appetizers on a parchment-lined baking sheet in a preheated 400° oven until crisp and heated through.

  • In a small bowl, combine the cream cheese, feta cheese and onions. Stir in cranberries. Spread about 1/2 cup mixture over each tortilla and roll up tightly. Wrap with plastic wrap and refrigerate for at least 1 hour. Cut each roll-up into 10 slices.

4 (10 inch) flour tortillas
12 ounces thinly sliced roast turkey
4 ounces thinly sliced Swiss cheese, chopped

Steps:

  • Combine cream cheese and cranberry sauce in a bowl. Spread 1/4 of the mixture across the surface of each tortilla, spreading all the way to the edges. Top each evenly with 1/4 of the sliced turkey, chopped Swiss cheese, and sliced apples.
  • Roll tortillas up tightly and wrap in plastic wrap. Refrigerate rolled tortillas for at least 1 hour. Slice each chilled tortilla roll into 8 pieces before serving.

1 cup butter, softened
1 package (8 ounces) cream cheese, softened
1/4 cup sugar
2-1/2 cups all-purpose flour
FILLING:
1/2 cup fresh or frozen cranberries
1/4 cup sugar
1 tablespoon water
1/4 cup orange marmalade
1/4 teaspoon ground ginger
24 whole fresh cranberries
Confectioners' sugar

Steps:

  • In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Gradually beat in flour and mix well. Cover and refrigerate for 1 hour. , In a large saucepan, bring 1/2 cup cranberries, sugar and water to a boil over medium heat. Reduce heat; simmer, uncovered, for 5-6 minutes or until berries pop. Remove from the heat; stir in marmalade and ginger. Set aside., Divide dough in half. On a floured surface, roll each portion into a 16 x12-in. rectangle. Let stand for 20 minutes. With a sharp knife or pastry wheel, cut dough into 4-in. squares. Place 3 in. apart on lightly greased baking sheets., Spoon 1/2 teaspoon of filling into the center of each square. Cut through dough from each corner of square to within 1/2 in. of center. Fold alternating points to each center to form a pinwheel; pinch gently at center to seal. Gently press a whole cranberry in center of each one., Bake at 350° for 12-15 minutes or until lightly browned around edges. Remove to wire racks to cool. Dust with confectioners' sugar.

These are super easy to make for a dinner party or as a dinner appetizer. I always make them for the Christmas holiday season and use spinach tortilla rollups.

4 soft flour tortillas (for Christmas I use the green spinach ones)
2 (8 ounce) packages cream cheese, softened
1 cup dried cranberries (I use Craisins)
2 bunches diced green onions
1 teaspoon garlic salt

Steps:

  • Mix cream cheese and garlic salt together until well blended. Spread evenly on tops of tortillas.
  • In small bowl, stir together cranberries and onions. Sprinkle evenly over cream cheese spread. Lightly press cranberry/onion mix into cream cheese.
  • Roll up tortilla. Trim off ends. And cut each tortilla into 10 even pieces using a serated knife, like you would slice bread.

1 (8 ounce) package crescent roll dough
4 ounces cream cheese, softened
4 tablespoons jellied cranberry sauce

Steps:

  • First heat oven to 375°F Unroll the dough and divide it into 2 rectangles (most store-bought doughs are perforated down the middle). Press together any other perforations to seal them. Using a butter knife, spread the cream cheese evenly over the 2 rectangles, leaving a 1/4- to 1/2-inch border on all sides, then spread the cranberry sauce over the cream cheese. Start at the short side, roll each piece of doug into a log, then cut each log into six 1-inch-wide slices.
  • Place the slices on a ungreased cookie sheet and bake for 12 to 15 minutes or until golden brown. Let the pinwheels sit for 5 minutes (to allow the filling to set) before removing them to wire racks. Serve warm.

Dough:
1 1/2 cups flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter, softened
3/4 cup sugar
1 large egg
1 teaspoon grated orange peel
1 teaspoon vanilla extract
------------------------------
Filling:
1/2 cup frozen low-bush cranberries
1/2 cup walnuts
1 tablespoon grated orange peel
3 tablespoons brown sugar
2 1/2 teaspoons canned milk

Steps:

  • Dough: Mix together the flour, baking powder, and salt; set aside. Cream butter and sugar. Add egg, orange peel and vanilla extract to butter mixture. Add flour mixture gradually and mix well. Place dough on plastic wrap and flatten out slightly into a square. Wrap and refrigerate 4-6 hours. Remove dough and roll on a piece of floured wax paper into a 10-inch square. Place on a flat pan and place back in refrigerator and chill. Filling: In mini-blender, or meat grinder, process cranberries and walnuts. Remove and place in a small dish; add grated orange peel. Set aside. Mix brown sugar and canned milk. Spread sugar mixture on Dough, leaving a 1/2-inch space on 2 of the edges. Spread the berry mixture evenly over the sugar mixture. Roll tightly, starting with the plain edge, in a jellyroll fashion. Place the rolled log on plastic wrap; cover and place in the freezer overnight or until you are ready to bake. Remove cookie roll and allow to stand at room temperature for 5 minutes. With serrated knife, cut 1/4-inch slices and place on greased cookie sheet. Bake in oven at 375° for 12-14 minutes. Remove from oven and let cookies set a few minutes before removing.
