This easy, healthy and keto friendly Low Carb Baked Cauliflower Casserole is a gluten free, delicious side dish that even the pickiest of eaters will love!

1 Lb Cauliflower, (cut into florets (about 4 1/2 cups))
2 Tbsp Butter
1 Tbsp + 1 tsp Almond flour
1 Tbsp + 1 tsp Coconut flour
1 1/2 Cups 2% Milk ((or Almond))
3/4 tsp Salt
1/4 tsp Onion powder
1/4 tsp Garlic powder
1/8 tsp Pepper
1 Cup Packed Cheddar cheese, (grated and divided (4 oz) (or dairy free))

Steps:

  • Turn your oven to 375 degrees and bring a large pot of salted water a boil. Add the cauliflower (once boiling) and cook until it just begins to become tender, about 5-7 minutes. Drain well and then spread out onto some paper towel. Use another layer of paper towel to gently press as much moisture out of the cauliflower as you possibly can.
  • While the cauliflower cooks, melt the butter in a medium pan over medium/high heat. Once melted, add in the almond flour and coconut flour and whisk, stirring constantly, until it just begins to brown, about 1 minute.
  • Whisk in the milk, salt, garlic and onion powder and pepper until smooth and bring to a boil. Once boiling reduce the heat to medium, stirring occasionally, until VERY thick, about 7-8 minutes.
  • Remove the milk mixture from the heat and whisk in 1/2 cup of the cheese until smooth.
  • Spread 1/3 of the sauce on the bottom of an 8x8 inch pan. Pack the cauliflower into the pan on top and then spoon the rest of the sauce over top. Sprinkle with the remaining cheese.
  • Bake until golden brown and bubbly, about 25-30 minutes. OPTIONAL: broil for 2-3 minutes until golden.
  • Let stand for 5 minutes and DEVOUR!

We love to serve up this cheesy cauliflower au gratin for holiday dinners, but it's simple and quick enough for any night of the week. It's so decadent with the cream, butter, and 2 types of cheese!

24 ounces fresh cauliflower florets
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon cracked pepper
½ teaspoon salt
½ cup heavy cream
4 tablespoons butter, cubed
2 cups shredded cheddar cheese
1 cup shredded Gruyere cheese
4 slices fried bacon, crumbled
1 tablespoon minced parsley

Steps:

  • Preheat oven to 400 degrees.
  • Toss the cauliflower, oil, garlic powder, and salt and pepper together to coat.
  • Arrange the cauliflower on a rimmed sheet pan and bake for 20 minutes or until lightly browned and slightly tender.
  • Grease a 9x9 baking dish with nonstick spray.
  • Add half of the cauliflower to the baking dish and pour half the cream over the top. Arrange half the cubes of butter over the cauliflower. Sprinkle with half of the cheese and bacon.
  • Repeat the layers.
  • Bake, uncovered, for 20-30 minutes or until the top is golden and the cauliflower is tender.
  • Sprinkle with parsley and let set for 5 minutes before serving.

1 head cauliflower
1 small onion, diced
1 garlic clove, minced
2 tablespoons butter, divided
1 teaspoon salt
2 teaspoons fresh cracked pepper
1 teaspoon dried marjoram
1/2 cup diced ham
1 cup shredded swiss cheese
1 cup shredded cheddar cheese
1 egg, beaten
1/4 cup half-and-half
1/4 cup cream
1/2 cup sour cream

Steps:

  • Break cauliflower into florets and lightly steam in water and salt for about 10 minutes. Drain and in the same pan saute onion and garlic in one tablespoon of the butter until translucent. Use the rest of the butter to grease a glass or ceramic baking dish.
  • Mix onion and cauliflower together with salt, pepper and marjoram and add to greased baking dish. Mix beaten egg, half and half, cream and sour cream together until well blended. Top with ham and cheese and then pour the egg and sour cream mixture over the entire dish.
  • Bake at 350 degrees for about 30 minutes or until browning on top.
