Cornish Hens the Easy Way image

This recipe is so simple, and it adds a little zest to your Cornish Hens.

4 Cornish game hens
2 limes, halved
2 teaspoons olive oil
¼ teaspoon chili powder
¼ teaspoon ground cumin
kosher salt to taste
ground black pepper to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Rub each hen with a lime half. Drizzle the hens with olive oil, and season with chili powder, cumin, kosher salt, and pepper. Place hens on a rack in a shallow roasting pan.
  • Roast hens 15 minutes in the preheated oven. Reduce heat to 350 degrees F (175 degrees C), and continue roasting 30 minutes, or to an internal temperature of 180 degrees F (80 degrees C).

Number Of Ingredients 15

2 tablespoons olive oil
2 Cornish hens, 1 1/2 pounds each, cut into 8 pieces
Salt and freshly ground pepper to taste
1 cup chopped onions
2 leeks, cut into small cubes, about 1 1/2 cups
1 tablespoon finely chopped garlic
2 cups skinless ripe plum tomatoes, cut into 1/2-inch cubes
24 small green olives stuffed with pimentos
4 sprigs fresh thyme or 1 teaspoon dried
1/2 cup dry white wine like Chardonnay
1 cup fresh or canned chicken broth
1 bay leaf
1 teaspoon saffron threads or turmeric
Tabasco sauce to taste
4 tablespoons chopped basil

Steps:

  • Heat the oil in a heavy skillet large enough to hold the pieces of Cornish hen in one layer. Sprinkle the pieces with salt and pepper. When the oil becomes hot, add the pieces, skin side down. Cook over medium-high heat until lightly browned, about 5 minutes. Turn and cook 5 minutes more.
  • Add the onions, leeks and garlic, and cook, stirring, until wilted, about 2 minutes. Add the tomatoes, olives, thyme, wine, chicken broth, bay leaf, saffron, Tabasco, salt and pepper. Stir and scrape the bottom of the skillet to dissolve any brown particles on the bottom. Cover closely, and simmer 10 minutes.
  • Remove the thyme sprigs and bay leaf. If there is too much liquid, reduce the sauce a bit. Sprinkle with basil and serve.

1 teaspoon olive oil
2 Cornish game hens (20 to 24 ounces each), split lengthwise
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
MUSHROOM SAUCE:
1/2 pound fresh mushrooms, quartered
4 teaspoons olive oil, divided
1/4 teaspoon salt
1/4 teaspoon pepper, divided
1/3 cup finely chopped onion
1 garlic clove, minced
1 can (14-1/2 ounces) reduced-sodium chicken broth
1-1/2 teaspoons Dijon mustard
1-1/2 teaspoons balsamic vinegar
1 teaspoon brown sugar
1 teaspoon tomato paste
1 bay leaf
1 teaspoon each cornstarch and water
1/4 teaspoon minced fresh tarragon

Steps:

  • Rub oil over hens; sprinkle with salt, thyme and pepper. Place skin side up on rack in a shallow roasting pan. Bake, uncovered, at 400° for 35-40 minutes or until thermometer reads 180°. Broil hens for 3-4 minutes or until golden brown., Meanwhile, toss mushrooms with 2 teaspoons oil, salt and 1/8 teaspoon pepper. Spread in a single layer on a 15x10x1-in. baking pan coated with cooking spray. Bake at 400° for 25-30 minutes, turning once. Set aside., For sauce, in a saucepan, saute onion and garlic in remaining oil. Add the broth, mustard, vinegar, brown sugar, tomato paste, bay leaf and remaining pepper; bring to a boil. Cook, uncovered, over medium heat until mixture is reduced to 1 cup. Combine cornstarch and water until smooth; stir into sauce. Bring to a boil; cook and stir 1-2 minutes or until thickened. Stir in tarragon and mushrooms; heat through. Discard bay leaf. Serve sauce over hens.

2 -3 Cornish hens
1 1/2 teaspoons sage
1 teaspoon rosemary
1 teaspoon garlic powder
1 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
1 cup dry white wine
1 tablespoon flour

Steps:

  • Rinse Cornish game hens with cold water and pat dry with paper towels. Split hens in half by cutting down backbone and then through breastbone. Mix sage, rosemary, garlic powder, salt, and pepper; rub hens inside and out. Wash hands.
  • In 5-quart Dutch oven, melt butter. Over medium-high heat, brown hens on all sides. Add wine, cover and simmer until tender (approximately 45 minutes). Insert an instant-read thermometer into the thickest part of the chicken. Internal temperature should read 180 degrees F.
  • Remove hens to serving platter, cover and keep warm. Mix flour with 1/2 cup warm water and add to pan juices for Cornish sauce.
  • Serve with noodles mixed with sour cream and Parmesan cheese.
  • Refrigerate leftovers immediately.
