HONEY SPICED GRANOLA BARS



Honey Spiced Granola Bars image

A recipe I twiddled and tweaked to come up with. It has a distinct taste of honey, and the spices are allowed to shine through. Sometimes, I add some cocoa powder for that subtle taste. Hope you like this, its one of the first recipes I managed to really tweak up nicely.

1 cup quick-cooking oats
½ cup raisins
¼ cup wheat germ
¼ cup whole-wheat flour
¼ cup all-purpose flour
2 tablespoons unsweetened cocoa powder
1 ½ tablespoons brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground allspice
½ teaspoon salt
½ cup applesauce
⅓ cup honey
1 egg
1 ½ teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 8x8-inch baking pan with parchment paper.
  • Mix oats, raisins, wheat germ, whole-wheat flour, all-purpose flour, cocoa powder, brown sugar, cinnamon, ginger, allspice, and salt in a large bowl. Make a well in the middle.
  • Whisk applesauce, honey, egg, and vanilla extract together in a separate bowl until combined; pour into well of dry ingredients. Stir with two spoons until fully incorporated. Pour and press batter into prepared baking pan.
  • Bake in the preheated oven until firm, about 20 minutes. Remove from pan and cool for about 10 minutes before slicing into 12 pieces.

Try this savoury granola as a topping for soups or sprinkled over salads. The spiced chickpeas, oats, seeds and nuts add a tasty crunch, transforming simple dishes

350g jumbo oats
100g mixed seeds
80g peanuts
250g canned chickpeas
1 ½ tsp chilli flakes
2 tsp turmeric
2 tsp ground cumin
2 tsp crushed coriander seeds
2 heaped tsp flaked sea salt
80ml rapeseed oil

Steps:

  • Heat oven to 180C/160C fan/gas 4. Toss together the oats, mixed seeds, peanuts, chickpeas (after draining them and patting them dry) in an oven tray along with the chilli flakes, turmeric, ground cumin, crushed coriander seeds and flaked sea salt. Stir through the rapeseed oil. Bake for 25-30 mins or until lightly golden and crunchy, stirring halfway. Leave to cool completely before storing (see below). Sprinkle over salads and soups.

4 cups old-fashioned rolled oats
1 cup unsweetened desiccated coconut*
1 cup sliced almonds
1 cup pecans
1 1/2 teaspoons cinnamon
1/2 teaspoon freshly grated nutmeg
1 stick (1/2 cup) unsalted butter
1/2 cup honey
2 cups mixed dried fruits such as cranberries, cherries, currants, golden raisins, apricots, prunes, and/or dates
available at natural foods shops

Steps:

  • Preheat oven to 350°F.
  • In a large bowl stir together oats. coconut, nuts, and spices. In a small saucepan melt butter with honey over low heat, stirring occasionally. Pour butter mixture over oat mixture and toss to combine well.
  • Spread granola evenly in 2 shallow baking pans and bake in upper and lower thirds of oven, stirring frequently and switching position of pans halfway through baking, until golden brown, about 30 minutes. In large bowl combine granola with dried fruits and cool, stirring occasionally. (Granola keeps in an airtight container, chilled, 1 month.)

¾ cup brown sugar
¼ cup water
3 cups rolled oats
½ teaspoon salt
1 cup chopped walnuts
2 teaspoons ground cinnamon
1 tablespoon honey
2 teaspoons vanilla extract

Steps:

  • Preheat an oven to 275 degrees F (135 degrees C). Cover a 10x15 inch pan with wax paper.
  • Mix brown sugar and water in a microwave safe bowl. Cook in microwave to dissolve the sugar, about 1 minute. Combine oats, salt, walnuts, and cinnamon in a large bowl. Stir in sugar mixture, honey, and vanilla extract. Mix well. Pour mixture onto the prepared pan, spreading evenly. Create clusters by squeezing small handfuls of the oat mixture together.
  • Bake in the preheated oven for 20 minutes. Remove from oven and gently stir granola using a spoon. Return to the oven and bake for an additional 25 minutes. The granola will be slightly browned and will continue to harden as they cool.
