This easy, cheesy cauliflower tots recipe needs just 4 ingredients! Low carb and keto cauliflower tater tots with sugar-free ketchup make the perfect healthy comfort food.

1 1/2 lb Cauliflower ((riced, measured after ricing, about 1 head))
1/4 cup Avocado oil ((or any oil; divided))
1 large Egg
1 1/2 cup Mozzarella cheese
2 cloves Garlic ((minced, optional))
3/4 tsp Sea salt

Steps:

  • Stir fry cauliflower rice in 2 tbsp (30 mL) oil in a large saute pan or wok over medium-high heat, until soft and lightly browned, with no moisture left in the pan.
  • Meanwhile, whisk the egg in a large bowl. Mix in the mozzarella, garlic, and sea salt.
  • When the cauliflower rice is done, stir it into the bowl right away while it's hot. It will melt the cheese in the bowl and make the mixture sticky.
  • Use a small cookie scoop to pick up balls of the "dough". Form small tater tot sized patties and flatten slightly. (Make sure they are not too thick so that they'll cook through.)
  • Wipe the pan lightly with a paper towel to get rid of any cauliflower rice pieces.
  • Heat the remaining 2 tbsp (30 mL) avocado oil in the pan over medium heat. Add the tater tots in a single layer, trying not to have them touch, and fry for about 2 minutes, until golden on the bottom. Flip and repeat until golden on the other side. Transfer to paper towels to drain.
  • Repeat with all tater tots. (You may need to add more oil between batches.)

1 medium head of cauliflower
2 Tbsp heavy cream
2 Tbsp butter
1/3 cup shredded sharp cheddar
4 egg whites
salt & pepper to taste
oil for frying

Steps:

  • Clean and trim the cauliflower, adding the florets to a microwave safe bowl. Add the cream and butter to the bowl. Microwave for 5 minutes.
  • Add the cauliflower and cheese to a magic bullet or food processor and blend until still chunky - kind of like a cooked oatmeal consistency. Season with salt and pepper.
  • Chill for at least half an hour.
  • Whip the egg whites to a stiff peak. Fold 1/3 of the egg whites into the cauliflower mixture to lighten it up. Then fold the cauliflower mixture into the rest of the egg whites and gently mix until combined.
  • For best results, chill for another half hour or they won't hold their shape as well.
  • Fit a pastry bag with a round or star tube with about a 3/4 inch opening. Spray the inside of the bag with nonstick spray. Gently squeeze out 1 inch sections onto a greased cookie sheet, cutting with a butter knife as you go.
  • When finished, bake in a 375 degree oven for 10-12 minutes (or longer if you're skipping the frying) until puffed and slightly browned.
  • Remove from the oven and serve - or heat 1/4 inch of oil in a saute pan and when it's very hot add the tots. It doesn't need long, a minute per side to turn them golden brown and crispy.
  • Serve immediately.

4 cups steamed cauliflower
1 cup grated parmesan
1/3 cup coconut flour
1 cup shredded mozzarella
2 eggs
1 tsp garlic powder
1/2 tsp garlic salt

Steps:

  • Preheat oven to 425 degrees F.
  • Place steamed cauliflower in a food processor and pulse until it resembles crumbs.
  • Pour it into a bowl and stir in the remaining ingredients until combined.
  • Line a baking sheet with parchment paper.
  • Using a cookie scoopor about a tablespoon of the mixture, form cylinder shapes.
  • I was able to make 32 tots.
  • Bake for 15 minutes then flip them over for cook another 5 minutes.
  • Cool slightly then enjoy!

2 lbs ground beef (or turkey)
1 onion, diced
4 garlic cloves, minced
2 cans condencsed cream of muschroom soup
4 c riced cauliflower
4 c cheddar cheese, shredded
2 tbsp chives
salt & pepper

Steps:

  • Saute the onions in a large skillet. Add the garlic and the beef and brown.
  • Add salt and pepper to the beef and stir in the cream of mushroom.
  • Place in the bottom of a greased 9x13 pan.
  • Cook the riced cauliflower.
  • Mix the cauliflower with 2 cups of shredded cheddar and 2 tbsp chives.
  • Spread on top of the beef. Top with the remaining cheddar cheese
  • Bake at 350F for 40 minutes or until cheese is browned.

2 cups finely chopped cauliflower
1 tablespoon finely minced onion
1/2 cup grated Parmesan cheese (I used Kraft)
1 egg
1/2 cup shredded pepper jack cheese
Salt and pepper to taste
1/4 cup mayonnaise
1/2 to 1 teaspoon chopped chipotle in adobo blended to a paste

Steps:

  • Chop the raw cauliflower in a food processor until it looks like crumbs.
  • Line a colander with paper towel and add the cauliflower.
  • Lay another paper towel over the top and gently press to remove as much liquid as possible.
  • Mix i the onion, Parmesan, and pepper jack cheeses.
  • Taste and add salt and pepper as needed.
  • Mix in the egg.
  • Let stand for at least 15 minutes. 30 is better.
  • Preheat the oil in the fryer to 360F
  • Form the dough into cylinders.
  • Blunt the ends for the perfect tater to shape
  • Add to the preheated oil and fry until golden.
  • Drain on paper towel.
  • Add salt and serve.
  • Mix the chipotle and mayonnaise.
  • Let stand for a few minutes to blend.

  • Bring an inch of water to a boil in a medium saucepan. Place the cauliflower in a steamer basket set over the boiling water. Cover and steam the florets for 5 minutes, until they’re easily pierced with a fork.
  • Working in batches, place the steamed florets in the food processor and process for 10 seconds until they are completely chopped into a meal. Transfer each batch of meal to a clean, thin dish towel or piece of cheesecloth. Continue to process the remaining florets. Once all the cauliflower meal is cool enough to handle, gather the corners of the towel and, working over the sink, squeeze out as much liquid as you can. Transfer the squeezed meal to a large bowl.
  • Add the egg, grated onion, parmesan and cheddar cheeses, almond flour, and salt and pepper to taste to the bowl with the cauliflower. Use a rubber spatula to mix everything together. Allow the mixture to rest for 5 minutes so it can come together.

  • Pre-heat oven to 400 degrees F. Use a box grater or food processor with a grating attachment, and grate all the cauliflower florets. Place the grated cauliflower in a kitchen towel and squeeze as much moisture out as possible. Flex those biceps, the more water you squeeze out, the more golden your tots will be. Place the cauliflower in a large bowl and add all of the remaining ingredients(except the non-stick spray), ½ teaspoon salt, and few cracks of pepper. Mix well then thoroughly spray the mini muffin tin with the non-stick spray, do this over the sink as to not make as mess everywhere. Place the cauliflower tater tots on top and push them about half way down into the beef and cheese. Bake in the oven for 30 minutes, add the remaining ½ cup of cheese, and bake for 7-10 minutes more. Allow to cool for 20 minutes so the casserole does not fall apart, top with toppings and enjoy!
